Last sunday i have got a chance to visit my maid’s village one more time. Interesting thing was watching them cooking GOOGIES on stove and how comfortable they were while cooking like this.
Be with me in this journey and recipe of GOOGI/PAKWAN 🙂

Shakirdarah, is the name of my Maid’s village. Villagers , here are mostly farmers you can see vast fields in these pictures.

Most of houses here are very simple and not well constructed.

Villager women is  industrious and hard-working. They can do any thing now you can see in this age they are cooking on charcoal ,its not an easy job to cook on these stoves.
Women can easily paint houses and do LEPAI ( making floor of house with mud and dung) you can see in this picture they did this before my arrival. Because i was a special guest for them so they painted kitchen and did Lepai to give a clean look to their house.

INGREDIENTS:

Wheat flour1 cup
Semolina1/4 cup
Sugar (grind it)1/2 cup
Cardamom 2-3 ,crushed
Coconut (crushed)2 tbsp
Saunf1 tsp
Egg1 beaten
Milkfor kneading

METHOD:

  • Knead all ingredients with water and roll the dough, my maid flattened it with hand.
  • Cut circles with a glass or cutter and fry.
  • Ready to serve.

PIZZA MThis is a quick and jhat pat recipe of pizza, if your kids are asking for pizza and you have no time to make dough from yeast then try this recipe, I am sure you will love it. A perfect lunch box and evening snack for all age groups.

INGREDIENTS:

Flour8 oz
Baking powder2 tsp
Salt1/4 tsp
Butter2 and 1/2 oz
Milkfor kneading dough.
Chicken bone less in cubes1/2 kg
Cream3 tbsp
Milk1/4 cup
Butter/ ghee2 tbsp
Cheddar cheese1/4 cup grated
Saltto taste
All spice powder1/2 tsp
Black pepper1 tsp
Lemon juice1 tsp
Cumin powder1/4 tsp
Red chilli flakes1/2 tsp (optional)
Papaya paste1 tsp (optional)
Pizza sauceas needed (for spreading on pizza base)
Cheesesprinkle on top
Vegetables( capsicum, onion and tomato) cubedas needed

METHOD:

  • Mix all ingredients in flour and knead with milk. Set aside and prepare topping.
  • You can store this prepared dough in refrigerator for 3 days.
  • Marinate chicken in spices mentioned above and leave it for 3-4 hour .
  • Bake it at 180c till done or cook in a pan by adding 1 tbsp oil in pan.
  • You can store in freezer  also after cooking tikkas.

ASSEMBLING OF PIZZA:
Now roll the dough and cut circles of your choice .
Place in baking tray and spread pizza sauce or chilli garlic sauce then cooked malai tikka.
Now add vegetables (tomato and capsicum in small cubes.)
Sprinkle shredded cheese , olives and oregano.
Bake at 180c till cheese melt and bread well cooked.
Serve hot with ketchup.
Enjoy easy peasy Pizza in few minutes.

SPAGHETTI TIKKA PIZZA

pizza ,mMake a pizza with spaghetti Crust. This is a great replacement of yeast bread base.You kiDs will also love this SPIZZA 🙂 If you are on diet then you should include this low carb Pizza in your diet.

INGREDIENTS:

Boiled spaghetti 1/2 packet
Egg1
Milk1/2 cup
Cheese (any of your choice)3/4 cup
Tomato paste 3 tbsp
Capsicum1 large
Onion1 cut in small cubes
Tomato1, in small cubes.
Oil1-2 tbsp
Oreganoto sprinkle.
Chicken Tikka check the quantity in the method.

METHOD:

  • Marinate chicken cubes (boneless) in chicken tikka spices. For recipe of chicken tikka marinade you can check this out: CHICKEN TIKKA PIZZA.
  • Fry in 1 tbsp oil, add tomato paste in it or you can add pizza sauce also in the chicken.
  • Add vegetables and stir. You can add Red chilli flakes (1/2 tsp).
  • Grate cheese and set aside.
  • Beat egg and mix milk in it, beat again and set aside,
  • Now in bowl add spaghetti and pour egg mixture in it. Toss with fork and then spread in a baking pan.
  • Spread evenly and spread pizza sauce or spaghetti sauce on spaghetti base (if you want to otherwise just spread chicken on spaghetti base).
  • Spread chicken and vegetable mixture.
  • Sprinkle cheese and oregano.
  • Bake at 180c for 20 minutes.
  • Serve hot.

Red chilli flakes1/2 tsp
Red chilli powder1/2 tsp
Turmeric powder1/2 tsp
Saltto taste
Allspice powder1/2 tsp
Ajwain1/4 tsp
Onion chopped1 tbsp
Green chilli chopped1 tsp
Coriander leaves chopped1 tsp

Bread slices3

METHOD:

    • Mix all ingredients in a bowl and make a paste with water.

 

  • Cut bread in stripes and remove hard corners.

 

 

  • Dip in mixture and fry on medium flame.

 

 

  • Serve with ketchup or any other sauce.

SAOJI CHICKEN WRAPS

 

Ingredients
Chicken Cubes Boneless 1/2 kg
Oil 4tbsp
Cumin seeds 1 Tbsp
Mustard seeds 1/2 tsp
Onions 2 nos
Cardamom 2 nos
Cinnamon 2 nos
Black Cumin seeds(Shahi Zeera) 1/2 tsp
Ginger Garlic Paste 1tsp
Turmeric powder 1/2 tsp
Red Chilli Powder 1 tsp
Khus Khus(Poppy Seeds)
Coriander Leaves

Method

  • Heat 4tbsp full oil in a pan,when the oil get hot lower the flames and add cumin seeds,mustard seeds,ginger-garlic paste and chicken cubes.mix it well and cover the lid and let it cook.
  • Mean while take another pan and add 1tbsp oil and slice onions,cinnamon, cardamom, khuskhus (poppy seeds) ,shahi zeera, ginger garlic paste and saute for 4 mins on low flames.
  • Grind this into smooth paste,while grinding spice in blender add one bunch of coriander leaves.(also remember to check your another pan of chicken in between).
  • Add turmeric and red chilli powder in pan of chicken.mix it well for a minute.
  • Now add the grinded paste in chicken and mix it well for 5 mins until you see oil.

Dough For Wraps

Ingredients
Maida(flour) as required
Water for kneading
Curd 1/2 cup
Salt
Onion seeds (kalonji)

Method for making wraps

 

  • Take Flour in a deep bowl and add salt,onion seeds,curd mix.
  • It will water and make soft roti dough.
  • Make small round balls and with the help of rolling pin make round shape flat chappati size thin wraps.
  • Take a pan or tawa and heat it when the pan get heated cook same as roti/chappati apply oil.
  • When the chappati is ready add chicken mixture on the edge of chappati then roll it into round just like wrap.
  • Serve hot saoji chicken wraps to your family and friends they will love it :)…

HONEY NUT BARS

nut bar mFew days ago one of my friend asked me to share any honey and nut bar recipe. I am sharing one very easy and healthy recipe which i usually follow. You can use any cereal instead of rice krispies.

INGREDIENTS:

Butter4 tbsp
Honey1/4 cup
Brown sugar1/4 cup
Mixed nuts3/4 cups
Crushed cereals/ rice krispies .3 cups

METHOD:

  • In a pan add butter, honey and sugar. Stir till melt.
  • Remove from stove and mix all nuts (cashew, almonds, pistachio and coconut) and cereals.
  • Coat well and spread on greased tray. Press with wooden spoon and leave for few minutes.

  • Cut squares and keep in fridge for few minutes till set.

CRISPY PEANUT BUTTER BARS

peanut bars mWhat about trying these easy and healthy bars. I love the crunchy base and to attract your kids use chocolate flakes.
This peanut art was made by me last year 🙂

INGREDIENTS:

Corn flakes4 cups
Butter4 tbsp
Honey1/4 cup
Peanut butter3/4 cup
Brown sugar1/2 cup
Peanuts ,chopped1/2 cup
Vanilla essence1/4 tsp
Cooking or milk chocolateas needed

METHOD:

  • Line a square shape pan with a butter paper. Grease it.
  • In a pan add butter, brown sugar, honey, peanut butter  and  salt. Mix them till melt.
  • Now add crushed cornflakes , vanilla and peanuts. Mix well and transfer in pan .
  • Spread and press from wooden spoon. Let it set for 1/2 hour. Now start next step.
  • Melt chocolate in microwave and spread evenly on cornflake.
  • Sprinkle crushed peanuts on top and let it set completely.
  • Cut bars and serve.

NUTTY DATE BITES/ SLICE

d n s mI have picked this recipe from my mother’s cook book and surely this is very healthy and delicious. You can make small bite size rounds or make small slices.

INGREDIENTS:

Dates8 oz
Honey2 tbsp
Lemon juice1 tbsp
Walnuts2 oz
Flour4 oz
Butter8 oz
Oats6 oz

METHOD:

  • Remove seeds from dates.
  • In a pan add dates, juice and honey with 2 tbsp water.
  • Cook for few minutes till soft. Let it cool.
  • In a large bowl mix flour, oats and butter. Knead it. You can add icing sugar if you want to.

  • Now in a 7 inches pan spread flour mixture and then  spread date mixture.

NUKTI

nuti mI do not know from where my mother learned this recipe but one thing is sure these are super delicious winter snack for all age groups. These are Pakistani style Churros..lolz

INGREDIENTS:

Flour1 cup
Water1/2 cup
Sugar2 tbsp
Oil2 tbsp
Shakar/ Jaggery3/4 cup

METHOD:

  • In a pan heat water, oil and sugar, make a syrup and then let it cool down for few minutes.
  • Add this syrup in your flour and knead it to form a dough.
  • Make thin sticks and fry in oil.
  • Drain on paper towel .
  • In a pan melt jaggery or Shakar with 1 – 2 tbsp water.
  • Now just toss sticks in this mixture and dust grind sugar or icing sugar.
  • Serve with tea.

STUFFED PANCAKES

PC MMy mother was an innovative and creative home cook. I have very fond memories of the different things she would concoct to feed us.I used to love those as a child.There are so many interesting and delicious meals which I’ve enjoyed, and still make today, simply because they are delicious 🙂
This stuffed pancake recipe is taught by cooking expert Kokab Khuaja. I was a kid when my mother first time tried it and the taste i still can feel. I will write variations here. All are finger licking delicious.
Pancakes are perfect base for so many different fillings. Try with variations. From sweet to savory….you will find them delicious 🙂

STUFFED PANCAKE -1

INGREDIENTS:

Eggs 4
Flour1 and 1/2 cup
Salt1/4 tsp
Chinese salt1/2 tsp
Water1 and 1/2 cup

METHOD:

  • Beat eggs and add water.Use whisk and again beat.

  • Add flour and mix. Add water till dropping consistency obtained. Now add salt and Chinese salt.
  • Leave this for few minutes and then heat up the pan.
  • Spray oil in pan or grease it with brush.
  • One ladle’s worth of batter is usually enough for perfect pan cake. Move the pan in circular motion your batter will take a perfect shape and cover all corners of pan.

  • After five minutes you will see corners will start turning up.

  • Do not overcook otherwise it will break during filling process.

  • Cover with cling wrap and refrigerate it. When you want to make take them out and fill. But for one week you can refrigerate.

INGREDIENTS:

Egg1
Flour1 cup
Water1/2 cup
Milk1/2 cup
Salt1/4 tsp
Chinese salt1/2 tsp

METHOD:

  • Mix all ingredients and with whisk beat them.
  • Now batter is ready to cook.
  • Make pancakes as i have mentioned above. These are crispy pancakes.

FILLING:

INGREDIENTS:

Mince (Chicken/ beef/ Fish)1 cup
Saltto taste
Ginger garlic paste1/2 tsp
Crushed black pepper1/2 tsp
Soya sauce2 tbsp
Cabbage 2 cup thinly sliced
Carrots2 thinly cut
Peas1/4 cup

METHOD:

  • In a pot add mince, salt and ginger garlic paste. Add 1 cup water and cook till water dries. Add crushed black pepper and soya sauce. Mix well.
  • Add thinly chopped vegetables and cook on high heat.
  • Set a side .
  • Now place filling on one side of pancake and roll it, use flour paste to seal edges. I normally use toothpicks to close the edges.
  • Fry in oil or you cake bake them also.
  • I usually fry them in less oil but you can deep fry them.
  • Pancake 1 you can freeze after filling .
  • But pancake 2 will crack so use them within 2-3 days time.
  • You can take chicken boneless and cook as mentioned above then shred it and add veggies. As i have used..:)

But first meet my ORANGE SNAIL, then we will move forward….:)

Flour3 cups
Eggs2 medium size
Sugar4 oz
Oil4tbsp
Orange juice4 tbsp
Baking powder2 tsp
Orange skin grated1 tbsp

METHOD:

  • In a large bowl add eggs and beat them with whisk, add oil an again mix.
  • Now Add orange juice, sugar, orange skin (grated) mix them.
  • Combine flour and baking powder and mix in egg mixture.
  • Knead it an cover with cling wrap an keep it in fridge.
  • Roll the dough and cut in doughnut shape and fry.
  • Dip each in honey syrup and serve immediately.
  • If not using honey syrup then make orange glaze and dip in it.

ORANGE GLAZE

  • Take 1 cup icing sugar ,add 2 drops of orange food color and 1 tbsp Orange juice.
  • Mix well and use.

HONEY SYRUP

  • In a pan add sugar 1 cup, water 1/2 cup and 1 tbsp lemon juice. Cook till sugar dissolve.
  • Mix in honey 1/2 cup , when become warm dip doughnuts in it and serve hot immediately.
  • Enjoy ORANGE DOUGHNUTS …:)

ROTISSERIE POT PIE

IMG_0273mainThis pot pie is very easy and flavorful, If you are planning something for your weekend then keep this on top of your list. Rotisserie chicken will give you different flavor then any other pot pie.

INGREDIENTS:

Chicken bone less3 cups
Capsicum 1 diced
Carrot1 small diced
Peas1/ 2 cup
Onion1 small
Saltto taste
Black pepper1 tsp
Green chillies chopped1 tbsp
Paprika1 tsp
Flour3 tbsp
Chicken broth1 cup
Puff pastry packet
Egg ,beaten1

METHOD:

  • Marinate chicken with Rotisserie special spice, check the recipe of ROTISSERIE CHICKEN .
  • Boil peas and carrots.
  • In a pan add oil 2 tbsp and saute onion.Remove onion and add marinated chicken and cook till tender in the same oil.
  • In  separate pan add 1 tbsp oil and add flour and saute, pour stock and stir add capsicum , carrot and peas and spices .
  • Add saute onion and chicken ( you can shred chicken).

  • Roll puff pastry and spread on the base of greased pot then spread chicken  mixture and cover with another rolled puff pastry. You can make flower garnish and even can make borders if you like.

PITTA FAJITA PIZZA

PPMANThese mini , quick pizzas are easy to made in few minutes.Like Bread pizzas and Bun pizzas these small sized Pitta pizzas are time saver and flavorsome.I have used Fajita topping but you can use any topping of your choice.

INGREDIENTS FOR CHICKEN:

Chicken bone less cubes2 breast pieces
Red chilli flakes1 tbsp
Lemon juice1 tsp
Orange juice3 tbsp
Pineapple juice3 tbsp
Saltto taste or 1 tsp
Oregano1 tsp
Oil1 tbsp

METHOD:

  • Marinate chicken for 1-2 hours and then fry in 1 tbsp oil.

INGREDIENTS FOR SAUCE:

Tomatoes2 medium, remove seeds and chop.
Tomato paste4 tbsp
Onion2 tbsp, chopped
Garlic paste1 tsp
Chilli flakes1 tsp
Saltto taste
Oregano 1/2 tsp
Cumin seeds1/2 tsp, roasted and crushed
Green chillies4 ,chopped

METHOD:

  • Heat oil and saute onion, add garlic stir and add tomatoes. Cook for 5 minutes then add all other spices and tomato paste.
  • Add 2 tbsp water and  cover with lid , let it cook till tomatoes well tender and mashy.
  • Chop chillies and add in sauce.Stir and remove from stove.
  • You can adjust spices according to your taste , i normally use less spices because of my kids.

ASSEMBLING:

  • Spread sauce or ketchup ( bc i have used in my pizza) on Pitta breads.
  • Spread chicken on pitta.
  • Sprinkle cheese and all vegetables (Onion, tomatoes, capsicum in julienne cut) and bake them at 180c for 20 minutes.

banana muffins mainBanana muffins are irresistibly delicious.Light and fluffy muffins can be your first choice in cake craving. Homemade caramel sauce will enhance the taste of soft muffins.

INGREDIENTS FOR MUFFINS:

Bananas2 large
Butter1/2 cup
Flour2 cups
Egg1
Brown Sugar1 cup
Baking powder1 tsp
Baking soda1/2 tsp
Salt1/4 tsp
Vanilla essence1 tsp
Milk1/2 cup

METHOD:

BANANA MUFFINS 1
  • Peel bananas and cut in slices, mash them with fork. Now put them in microwave safe bowl and add butter also. (you can do this process on stove also but do not cook just melt and mix bananas and butter)
  • Microwave for 10 seconds and mix butter and mashed bananas with fork or masher. Make a smooth mixture.
  • Add eggs in banana mixture and beat ,now add sugar  and beat . do not over beat.
  • Now add vanilla essence, salt ,flour , baking powder, soda and milk. Mix and pour in muffin cups .
  • Bake them at 180c for 25 minutes.
  • Let them cool completely and then pour caramel OR  try ” DOLCE DE LECHE”

Brown Sugar1/2 cup
Butter1/4 cup
Cream2 tsp
Powdered sugar1 cup

METHOD:

  • In a pan mix butter and brown sugar , cook till melt.Remove from stove.
  • Mix icing sugar and cream with whisk .
  • Pour on your muffins .

BASIC AND CHOCO MERINGUES

meringues mainI am in love with these cookies…:) They are super easy to make and super delicious in taste.You can make variations from basic recipe. Inspire your guests with these beauty bites. I will show few variations ,hope you will like them.

INGREDIENTS:

Egg whites4
Castor sugar1/2 cup
Icing sugar1/2 cup
Saltpinch
Coco powderas needed.

METHOD:

  • Separate egg whites but keep in your mind that your bowl should be clean and not wet. No hint of yolk should be in whites.

  • Beat egg whites on medium speed add sugar and beat till foamy.

  • Add salt and vanilla essence.
  • Place butter paper on tray and fill this foamy mixture in piping bag.

  • Now make a circle.

  • If you are making choco meringues then add cocoa powder and beat well. You can add any color of your choice.
  • Bake for 45 minutes at 180c or till become crispy.

  • Let them cool down completely and then store in air tight jar.
  • Melt chocolate and dip Meringues , you can use sprinkles to attract kids.

  • Make sandwich by applying butter cream on one side of Meringue ,place second one with it to make a sandwich.
