Today I have a wonderful post for you I am trilled and excited to have two gorgeous ladies sharing delicious and tempting recipe with us. These two ladies are Mother and Daughter and my very close and dear relative. Shehla Zubair and Saman Zubair (19 year old pretty girl).
Thou Shehla baji is expert in Traditional Pakistani cooking but she started baking few years ago and her lovely daughter who is a future doctor is her partner in Baking adventures. You will appreciate her baking skills , in no time she learned and now she is an expert in baking too. Here is her few creations.

I am grateful to S&S for sharing few awesome recipes with us. Today i am sharing an awesome cake recipe with you.Your home will smell wonderful from the aroma of this delicious cake baking in the oven. So try and enjoy with your family.

HAZELNUT CAKE

INGREDIENTS:

Butter125g
Sugar100g
Eggs2
Flour3/4 cup
Saltpinch
Baking powder3/4 tsp
Vanilla essencefew drops
Nutella4-5 tbsp

METHOD:

  • Mix flour, salt  and baking powder and set aside.
  • Beat butter and sugar till creamy.
  • Add egg one by one , add essence also and beat well.
  • Now add flour mixture in it and fold with spoon.
  • Grease pan and pour half batter in it then spread Nuttela on batter and spread with fork and give a marble effect.
  • Pour remaining batter and bake at 180c till done.
  • Serve with tea. 🙂

INGREDIENTS:

Flour3 cups
Cocoa powder1 cup
Baking soda1 tbsp level
Baking powder1 and 1/2 tsp
Saltpinch
Oil3/4 cup
Butter milk1 cup
Warm water1 cup
Vanilla essence1 tsp
Eggs3
Sugar ,grind it3 cups

METHOD:

  • Preheat oven at 150c. Grease cake pan.
  • In a large bowl sift flour, baking powder, baking soda, cocoa and pinch of salt.Add sugar.
  • In this dry mixture add, butter milk, eggs, warm water, vanilla essence one by one. Beat till smooth.
  • Pour in baking pan and bake at 180c till done. Let it cool completely.
  • Roll fondant and spread butter cream on cake then cover cake with fondant. Cut excess fondant.
  • I have used cutters to make HAPPY BIRTHDAY ALI.
  • Make theme of your choice and serve 🙂

MICRO CHOCO FUDGE CAKE

mico cake mAgain a microwave version recipe of cake. This one is also a big blast type of recipe. You can make this cake in small ramekins or in a pan.

INGREDIENTS:

Flour1 and 1/2 cup
Castor Sugar1 cup
Cocoa powder1/4 cup
Eggs2
Milk3/4 cup
Butter125 g
Walnuts1/2 cup crushed
Baking powder1 and 1/2 tsp level
Cream1 cup
Milk chocolate1/2 cup chopped

METHOD:

  • Grease microwave safe pan or ramekins.
  • Combine flour, cocoa, sugar and walnuts and then add eggs and milk. Mix well with hand whisk and then add butter.
  • Mix well and pour in baking dish.
  • Microwave it for 5 minutes then for 1 minutes. Now check by inserting toothpick.
  • Now make a sauce bu melting chocolate in microwave ,mix cream and microwave for 10 seconds .Mix well with fork and spread before serving.

GAJRELLA CHEESE CAKE

g mDifferent name isn’t it???? Yes a very different and tasty cake you can say highly traditional cheese cake..lolz. Thou season of carrots are about to end but i will recommend you to try once in this season.

INGREDIENTS:

Carrots1 kg
Milk1/2 kg
Sugarto taste
Cardamom3-4
Nutsas needed
Butter/ ghee1/2 cup
Cream cheese1 cup
Cream1 cup
Icing sugaras needed
Vanilla essencefew drops.

METHOD:

  • Grate carrots and transfer in a pan. Add sugar and milk and cook till dry.
  • Add butter or ghee and cook till butter separates.
  • You can add nuts and cardamom also.
  • Now in a spring pan spread this evenly with flat spoon and set aside.
  • Beat cream cheese with sugar and vanilla essence.
  • Beat cream and mix in cream cheese.
  • Spread on gajrella/carrots and let it set.

cc mPakistan Day we celebrate to remember the Lahore Resolution on March 23 each year. The word “Pakistan” was never used but the Lahore Resolution is considered a major milestone in the Muslim struggle for an independent state in undivided India.
To celebrate Pakistan day with my readers i have brought a never
fail recipe of Custard cup cakes/ dome cake. I have made small dome cakes but you can make cupcakes or a normal cake from the same recipe.

INGREDIENTS:

Flour150gms
Butter150gms
Caster sugar150gms
Eggs3
Custard powder of any flavor3 tbsp
Baking powder1 tsp
Vanilla or any custard if you want custard toppingas needed

METHOD:

  • Pre heat oven at 150 c and grease your baking pan.
  • In a bowl cream together butter and sugar.
  • Add egg one by one and beat well.
  • Now add custard powder, flour and baking powder (sieved) in egg mixture.
  • Pour in cake or muffin pan and bake at 180c till done.
  • Let them cool completely and spread butter cream on top and roll fondant to make flag and spread on each cupcake.
  • You can serve as it is or top them with any topping of your choice.
  • I have served my dome cake with a ROSE. In my next post i will explain you the method of making rose.
  • Make custard of any flavor and top these cupcakes or cakes with it ,if you want to serve with this topping.But spread custard on cupcakes just before serving otherwise they will become soggy.

ALMOND CAKE

ac mThis recipe is super dooper easy and no fail. Perfect for all occasions. Soft and delicious almond cake you can serve as it is or with cream topping.

INGREDIENTS:

Plain Flour16 tbsp
Sugar16 tbsp
Butter200 gms
Eggs4
Baking powder2 tsp
Almond , crushed100 gms
Khoya4 tbsp
Milk1/4 cup
Honey1 tbsp

METHOD:

  • Preheat oven for 10 minutes at 100c.
  • Beat butter and sugar till creamy
  • Add eggs and beat well.
  • Add honey, khoya, almond (roughly chopped) and milk , mix well.
  • Mix baking powder and flour. Add in egg mixture.
  • Pour in mold and bake for 30-40 minute at 180c.

TEA CAKE / PELA CAKE

cake mTea cake, Yellow cake, Plain cake or pela muraba cake is another famous tea time treat in Pakistan. In villages i saw people serving this cake as a compulsory item with tea. I can not forget the aroma and taste of Doodh Patti chai and cake served at my maid’s house which they cooked on coals.This recipe is very easy and simple adopted from a friend, Rabia Faizan’s page.

TEA CAKE

INGREDIENTS:

Oil1 cup
Castor sugar1 and 1/4 cup
Eggs4
Flour2 cups
Baking powder1 tbsp
Milk1 cup
Vanilla essencefew drops
Yellow food colorfew drops
MIxed murabas1/4 cup

METHOD:

    • Pre heat oven at 150c and grease cake pan.
    • In a large bowl add oil and sugar , beat well till creamy.
    • Now add eggs one by one and beat well.
    • Chop murabas and mix in flour, now mix flour and baking powder in egg mixture.
    • Add milk and vanilla essence. Mix and pour few drops of yellow food color.
    • Pour in pan and bake in oven for 25-30 minutes at 180c.

CARROT CAKE

Moist and flavorful carrot cake is one of the most famous cakes in the world. This is very balanced recipe, i have made cake with half quantities but the result was super dooper awesome.

INGREDIENTS:

Carrots 1/2 cup
Eggs4
Sugar1 1/4 cups (grind it)
Oil1 cup
Flour2 cups
Baking powder1 and 1/2 tsp
Baking soda1 tsp level
Saltpinch
Vanilla essencefew drops
Walnuts1/2 cup

METHOD:

  • Preheat oven at 150c. And grease pan.

  • In a large bowl , beat eggs and add sugar too. Beat till fluffy.

  • Mix flour, baking powder, baking soda and salt in a separate bowl then mix in egg mixture.
  • Now add walnuts and carrots. Mix with spatula.

  • Cool completely n spread cream cheese frosting.
  • I have decorated with fondant carrots.

Cream cheese8 oz
Butter1/4 cup
Icing sugar2 cups
Lemon zest1 tsp
Vanilla essencefew drops

METHOD:

  • Beat Cream cheese and butter.
  • Add icing sugar an beat till fluffy.
  • Add vanilla essence and lemon zest.
  •  Spread on cake.

THREE NUTS BROWNIE

br mThis recipe is adapted from a friend’s blog. Rafeeda is an old friend of mine and I have done my very first guest post for her.She is very cooperative and helpful lady.Hope you will like this recipe. Interesting thing is, this is microwave version thou i have baked in oven but if you are in hurry then make this brownie in 5 minutes only 😀

Cocoa powder2 tbsp

METHOD:

  • Melt Butter and chocolate on double boiler. Set aside till cool slightly.
  • In a bowl add eggs and sugar beat them and add all dry ingredients.
  • Mix chocolate mixture and transfer in a greased microwave dish.
  • Sprinkle nuts on top and bake for five minutes in microwave.
  • If baking in oven then pour in  greased tin and bake for 25 minutes at 180c.

  • I have sprinkled chocolate chips instead of nuts before baking.

INGREDIENTS:

Chocolate chip cookies7 oz
Roasted almonds or hazelnuts (roughly chopped)3 and 1/2 oz
Unsalted butter100 g or 3 and 1/2 oz
Dark chocolate2 oz
For filling , Cream600 ml
Dark chocolate7 oz
White chocolate 2 oz

METHOD:

  • Grease  a 8 inch loose base pan.
  • In a food processor add cookies and finely crush them, transfer in a bowl.
  • Mix crushed and roasted almonds or hazelnuts in cookies powder and set a side.
  • Melt butter and chocolate in a pan and then add cookies mixture in it.
  • Pour in the tin and press with spoon to cover the base completely.
  • Chill until firm.
  • Whip cream till peaks form.
  • Melt chocolate on double boiler let it cool for few minutes an add in cream.
  • Spoon the chocolate cream into the tin , smoothing the surface with spatula or flat spoon.
  • Melt white chocolate in a pan on hot water not boiling and then pour over tort an make swirls of white chocolate with fork. (I have skip this step)
  • Chill this cake overnight for best results.

HOW TO MAKE CHOCOLATE BOUNDARY  🙂

  • Now melt chocolate.
  • Spread chocolate on a sheet of greased paper/ butter paper to make a rectangle a little deeper than the cake and long enough to wrap around the outside.
  • Leave until almost set but still pliable.
  • Carefully wrap the chocolate band around the cake and chill till firm.
  • Peel the paper carefully. No panics at all 🙂

  • Decorate with any thing ( fill in strawberries, cherries, chocolate curls ) and serve.

FIG AND CARAMEL CAKE

When first time i used figs in cake i was not sure about its taste but for my surprise my sons loved it..:)

INGREDIENTS:

Dried figs15
Butter100g
Sugar100g
Eggs2
Flour125 g
Baking powder1tsp
Lemon juice 1 tsp
Caramel sauce2tbsp

METHOD:

  • Chop figs in small pieces and boil in 2 tbsp water for just 5-10 minutes. Let it cool down .
  • In a bowl add butter and sugar , beat till creamy and fluffy.
  • Now add eggs one by one and beat again. Add lemon juice and Caramel.
  • Add flour and baking powder.
  • Now mix figs and its water in mixture nd transfer in baking pan.
  • Bake for 25 minutes at 180c.
  •  You can either use ready made caramel or make it at home. Just melt sugar 2tbsp in a dry pan on very low flame when it starts melting then add water 3 tbsp and mix for few minutes and let it cool down. Use in your cake.
  • Drizzle caramel sauce on cake before serving.

ORANGE CAKE TRUFFLES

CAKE BALLS MThese orange flavored truffles or balls are a perfect treat for kids.They look a bit funny but they are so delicious that you can’t help but love them.

INGREDIENTS:

Vanilla cake 1 cup
Orange juice1 tbsp
Orange zest1/4 tsp
Dessicated coconut1 tbsp
Cooking chocolateas needed

METHOD:

  • Bake a vanilla simple cake or if you have any leftover brownie cake or cupcakes etc then you can use it.
  • Add orange zest and juice. Mix well.
  • Add dessicated  coconut and nix again.
  • Make small balls of equal size and keep in refrigerator for 1/2 hour.
  • Melt chocolate and dip each ball in it and place on butter paper.

  • In a large bowl add eggs and sugar, beat till fluffy.
  • Add oil and beat for 10 minutes.Now add all dry ingredients. Add milk also.
  • Beat again and pour in greased pan.
  • Bake for 25-30 minutes at 180c.
  • In 1 tsp butter fry all mixed nuts roughly chopped and set aside.

  • Spread roasted nuts and let it cool down completely and cut in squares.

DOUBLE CHOCOLATE BROWNIE

INGREDIENTS:

Brown sugar1/2 cup packed
Flour3/4 cup
Cocoa1/4 cup
Baking soda1/2 tsp
Saltpinch
Eggs2
Vanilla essencefew drops
Milk chocolate1/2 cup

METHOD:

  • In a small pan add butter and melt on stove ,on very low flame. Add sugar too and with wooden spoon or spatula mix both till well blend.(if you don’t have brown sugar then replace it with white sugar but reduce the quantity of white sugar )
  • Transfer it in a bowl.

  • Measure flour, cocoa, baking soda and salt .

  • Stir flour mix in butter and sugar mixture.

  • In a separate bowl beat eggs and vanilla, Add in brownie mixture.

  • Mix again with whisk.

  • Add milk chocolate in this mixture.(you can replace milk chocolate by cooking chocolate chunks)

  • Pour in a greased tin and bake for 25 minutes at 180c.

INGREDIENTS:

Icing sugar1 cup
Butter1 tsp
Cocoa powder3 tbsp
Chopped cooking or milk chocolate4 tbsp
Milk1-2 tbsp

METHOD:

  • In a pan add all ingredients and cook on a low flame till well mix.
  • Pour on brownie cake.
  • Now cut squares of your own choice.
  • Enjoy with your family and kids…:)

BLACK FOREST MUG CAKE

black forest cake mainWhat about a quick and delicious black forest cake in 4 minute only.Interesting isn’t it..??? Microwave treat to satisfy your sweet tooth…:)

INGREDIENTS:

Flour1/4 cup
Cocoa powder2 tbsp
Sugar1/4 cup
Oil3 tbsp
Sour cream3 tbsp
Egg1
Baking powder1/2 tsp
Cherry juice1/4 cup
Cherries1/4 cup
Creamas needed

METHOD:

  • In a large mug warm cherries (you can use fresh or canned cherries) and juice for 10 seconds. Set aside.
  • In another mug beat egg and oil with fork and then add all other ingredients one by one and beat with fork.
  • In the end add cherries and juice mixture and divide mixture in two mugs if small like mine..:) microwave it for 2 minutes and check.
  • Again microwave it for 1 minute. Insert tooth pick and check. If not firm then microwave for 1 more minute.
  • Garnish with cream and cherries and serve..:)
  • If you do not have sour cream then in 3 tbsp normal cream add 2 drops of lemon juice and mix well.

This is Meena Kumar, the hand behind the blog elephants and the coconut trees. I am from the Southernmost state of India currently living in the US with my family.

I am a foodie by choice and I am always on the look out for new recipes and cuisines to try. Cakes are my weakness but somehow I am more fond of the old fashioned, rustic looking ones than the sugar blanketed kind and summer here is a time when fruits are at over flowing so what better way to combine the two.

This cake is not too sweet ,it is soft and pillowy comes with the slight tartness of fruits.It can be served with fruit flavored chai.

FRESH FRUIT CAKE
Ingredients:

All purpose flour- 11/2 cups

Eggs -2

Butter- 1/2 stick ( 4tbsp)

Sugar -3/4 th cup

Vanilla extract- 1 tsp

Baking powder- 1 tsp

Milk – few tbsps

Fruits used :

Strawberry- 3 quartered

Blueberry – 5-10

Apple-1/4 of 1

Cherries – pitted 7-8

Method

Beat the eggs until it foams.

Cream the butter and sugar until the sugar is melted and well combined.

Sift the flour and baking powder together.

Combine the butter and egg gently and fold in the flour add one tbsp milk at a time the batter should be of falling consistency (add only as required)add the vanilla extract too.

Put a parchment paper in the loaf pan and grease it well now pour the batter into it and drop the fruit into it equally distributed.

Bake at 350 ° F for 20-25 minutes (until the a skewer comes out clean ) and the cake top is nice and golden brown.

Cool on a wire rack and slice with a very sharp knife or the fruits will fall off . Serve along with tea or coffee.

Note:

Since fresh fruit is used it is best to be consumed on the same day or Keep in the fridge and use within two days.
It u add too much fruit it will take longer to cook. Chances are the top of the cake may sink and inside may become soggy.
