CURRY PASTIES

P [PASTRY MAINSounds interesting…??? I am assuring you, you will like these tasty and a bit spicy potato curry patties/ pasties. I will give you alternate of Puff pastry in the end you can make pasties without puff pastry too…:)

PPASTRY DDD

INGREDIENTS:

Puff pastry1 packet
Potatoes and carrots diced8 oz
Onion chopped1 small
Garlic clove minced2
Curry powder1/2 tsp
Turmeric powder1/2 tsp
Cumin powder1/2 tsp
Mustard whole grain 1/2 tsp
Veggie/ chicken stock4 tbsp
Oil2 tbsp

METHOD:

  • Heat oil and add onion and garlic chopped. Saute for few seconds.
  • Now add all vegetables , salt and spices ,stir and add stock in it. Cover with lid and cook till tender. and liquid has been absorbed .
  • You can mash potatoes and carrot if you want.

  • Roll puff pastry and cut squares then place filling on one side ans brush milk/ water on corners and seal with fork.

  • Brush egg wash on pasties .

  • Bake at 180c for 20 25 minutes or till light brown color.

DOUGH FOR PASTIES

  • Mix 1-3/4 cup flour, 1/3 cup margarine, salt a pinch , knead with water and leave it for 30 minutes.

FILLED CRESCENTS

IMG_5547A long ago Cooking expert  Rahat taught this recipe , I am making this easy and tasty pastry for my family and they always like these small crescents.Hope you will try these and tell me about your experience.

INGREDIENTS:

Flour2 cups
Baking powder1 tsp
Egg1
Butter/ ghee2 tbsp
Milkas needed for kneading
Chicken boiled and shredded1 cup
Onion chopped1
Butter2 tbsp
Flour1 tbsp
Saltas needed
Black pepper1 tsp
Milk2 tbsp

METHOD:

  • Mix flour, butter/ ghee, salt, egg, baking powder and knead with milk.

  • Make a soft dough and st aside for 1/2 hour.

  • In a pan add oil and onion saute for 5 minutes.
  • f c 4Add flour and stir for 5 more minutes.

  • Add chicken , salt and black pepper , mix well .

  • Add 2 tbsp milk in it stir constantly to avoid lumps.

  • Let it cool completely.
  • Roll the dough very thin and cut circles. Place chicken mixture on one circle and brush water on corners of circle.
  • Place other circle on it and press with fork to seal all sides completely.

  • Fry these in oil till nice brown color appear.
  • Serve hot with ketchup or any sauce…:)
  • And yes you can bake these also, just place on greased tray and brush egg on each crescent and bake at 180c till well brown and crisp.

NANDOS PERI BITES

peri bites mainThis is a copycat of Nandos recipe. Nando is a famous restaurant in Karachi and Islamabad. I love grilled chicken and mind blowing Peri bites. The recipe i am sharing is very much close to original Peri bites. Spice up your taste buds with these  hot spicy Bites…:)

INGREDIENTS:

Green chillies6-8 large
Chicken boneless1/2 cup
Peri sauce mild2 tsp
Mayonnaise 1 tbsp
Milk2 tbsp
Cheese (any)2 tbsp
Oil1 tsp
Egg white1
Flour2 tsp
Saltpinch
Pepper1/4 tsp
Milk1/2 cup ( for coating)
Bread crumbsas needed

METHOD:

  • In a pan add milk and cheese and stir constantly with whisk till smooth and thick. Set aside.
  • Cut small stripes of chicken and fry in oil and add peri sauce in it.Cook till tender.
  • Mix mayo in cheese and fill cheese mixture in a pipping bag.
  • Wash chillies and pat dry them. Make a cut longitudinally and pipe cheese in it, place a chicken stripe carefully.
  • Keep these chillies in freezer for an hour and so.
  • Now beat egg white and pour on chillies, or coat all chillies with egg white and then in another bowl mix flour, salt and pepper.
  • Coat all chillies with flour mixture and then dip in milk.
  • Coat breadcrumbs on chillies evenly.Again dip in milk and then again coat with crumbs.
  • Keep in freezer for 1/2 hour.
  • Deep fry till nice color appear.
  • Serve with any Nando sauce (mild or hot) or mayo .
  • I first time made these and found them tempting and spicy…:) Next time i will coat them more perfectly.

CHICKEN IN PITA BREAD

PITA CKN MAINIncredibly easy and delicious recipe for all age groups. A wonderful and healthy snack to fill you up. Can be a lunch box item.
I am sure you will like it.

INGREDIENTS:

Chicken boneless in small cubes1 cup
Pita bread2
Capsicum1
Onion1
Oil2 tbsp
Crushed red chillies1/2 tsp
Lemon juice1/2 tsp
Salt to taste
Cumin seeds1/4 tsp
Coriander leaves and mint leaves few chopped.

METHOD:

  • In a pan heat oil and saute onion.

  • Now add chicken and saute till color change.

  • Add capsicum, lemon juice, coriander leaves, mint leaves, salt , cumin seeds and crushed red chillies.

  • Cook till well mixed.
  • On a flat pan toast pita and cut in 4 pieces.
  • Fill in chicken mixture and serve with garlic sauce.

I’m truly honored to be featured with a guest post on such an amazing food blog like Ainy Cooks. A little bit about myself – I’m Shazia – a secondary school Food Technology teacher – mum to a 22 week old – who loves to cook, click and write about whatever happens in my kitchen.
My little space is called ‘Cutchi Kitchen’ where my family and I share recipes that are traditional to our community as well as recipes that influence our kitchens today. Living in the UK I have been introduced to a lot of recipes belonging to English cuisine and the one classic British recipe I bring for you today is ‘Shepherd’s Pie

 

Shepherds Pie

Preparation Time: 20 minutes

Cooking Time:45 minutes + 30 minutes baking time

Serves 6

Ingredients:
Minced Lamb – 500 g
Onion – 2 (finely chopped)
Crushed Garlic – 2 teaspoon
Oil – 2 teaspoon
Carrots – 1 (finely chopped)
Peas – 100 g
Tinned Tomatoes – 400 g or Passatta – 400 ml
Stock Cube – 1
Water – 250 ml
Mixed Herbs – 1 teaspoon
Salt and Pepper to taste
For the topping:
Potatoes – 1.5 kg (peeled and quartered)
Milk – 100 ml
Butter – 2 tablespoon
Salt and Pepper to taste

Method:
1. Heat oil and sauté the chopped onions, chopped carrots and crushed garlic. Saute till onions are transparent.
2. Add the minced lamb and brown the meat stirring intermittently. Add the tinned tomatoes or pasatta. Continue to sauté till oil begins to release from sides.
3.Mix the stock cube with 250 ml boiling water Add the peas and pour the stock into the pan.
4. Add salt, pepper and mixed herbs. Let it simmer for 30 minutes.
5. In another sauce pan – boil the potatoes till soft. Drain them and mash while warm. Add milk and butter. Mix well to form a smooth mash. Season with salt and pepper.
6. Preheat oven at 190 degrees. Transfer the mince meat mix into an oven proof dish and top with the creamy mashed potato mixture. Use a fork and create a pattern on the topping. Bake for 30 minutes till the top is golden.

Children normally like shapes and color in their food…as a mother I prefer to give my son a wide variety of colors, he also takes interest in eating and planning his lunch.
In this lunch box i wrapped apple with cling sheet n tie it with ribbon , instead of giving ready made items you should give your kids healthy home made things.

INGREDIENTS:

Bread slices 4
Hard boiled eggs2
Mayonnaise2 tbsp
Black pepper1/2 tsp
Saltto taste
Ketchup as needed
Coriander leavesfew

METHOD:

  • With star shape cutter, cut two stars on the bread slice.
  • In a bowl mix mashed boiled eggs and all ingredients except coriander and ketchup.
  • On bread slice spread a thin layer of ketchup and on bread with star shape spread mayo filling.
  • Place bread on the other bread slice and arrange coriander leaves like i have done.
  • Wrap in cling sheet.

CHICKEN NUGGETS

nuggrtTry these copycat Mc Donald’s Nuggets recipe at home, recipe tastes just like the real.Give my recipe a try..:)

INGREDIENTS FOR BREADING:

Chicken fillets1/2 kg
Flour1 cup
Cornflour2 tbsp
Saltto taste
Black pepper1/4 tsp
White pepper1/4 tsp
Mustard powder1/8 tsp
Ginger powder1/2 tsp
Paprika powder1/8 tsp
Red chilli powder1/8 tsp
Dry milk powder1 1/2 tbsp
Garlic powder1/8 tsp
Turmeric powder1/8 tsp
All spice powder (optional)1/8 tsp

INGREDIENTS FOR BATTER:

Flour2 tbsp
Eggs2 beaten
Cold water1/2 cup
Saltto taste
Soya sauce1/4 tsp
Sesame oil1/4 tsp
Cornstarch2 tbsp
Sugar1/4 tsp

METHOD:

  • Cut breast pieces into thin slices and pound them with mallet, now cut in desired shape or size.
  • Place all pieces in saltish water ( 4 cup water + 2 tsp salt) for 3-4 hours. Blot dry all pieces.
  • Mix all batter ingredients in a bowl till smooth.
  • Mix breading ingredients in another bowl.
  • Place both batter and breading ingredients on a working place.
  • Dip each piece in batter then coat it with breading ingredients.Repeat the step one more time.
  • Place on a rack or plate, freeze it till hard and then deep fry.
  • You can freeze for future in a zip lock bag.

PIZZA TARTS

IMG_6450mainA versatile recipe for me in a sense that you can make these tarts from both pizza dough or puff pastry even make it from a pie dough.Filling i have used of chicken but you can use mince filling too.

INGREDIENTS:

Flour5 cups
Butter chilled ,cut in small cubes10 oz
Salt1 tsp
Vinegar 2 tsp
Water chilled for kneading2/3 cup
Mince2 cup
Mixed herbs1 tbsp
Saltto taste
Black pepper1 tbsp
Oil2 tbsp
Pizza sauceas needed
Mozzarella cheeseas needed
Capsicum, onion mushroom as needed

METHOD:

 

DOUGH FOR TARTS

  • You can use pizza dough, for recipe click this: PIZZA DOUGH.
  • If you want to make dough from pie crust method then follow me ..:)
  • In a large bowl add flour , salt and chilled butter , mix with hands. Crumbs will form.
  • Mix vinegar in water and knead dough with this water.
  • Roll it and make 2-3 big flat circles and wrap plastic. Keep in refrigerator for 3-4 hours.
  • Now cut squares or circles according to the size of pan.
  • Place each cut out in greased pan and spread pizza sauce over it.
  • Fill in filling and sprinkle cheese.
  • Bake till nice golden.
  • Same process you will follow with pizza dough or puff pastry.
  • Result of both doughs are awesome..:)

METHOD OF FILLING

  • If you are using chicken then in a pan pour oil and saute 1 small chopped onion , add chicken 1 cup , red chilli flakes 1/2 tsp, salt, black pepper 1/2 tbsp. Mix well and cover with the lid till well cooked.In the end add chopped veggies ,if you want to add and mix well.
  • If you want to use beef/chicken  mince then in oil add mince and fry till color change.Now add salt , mixed herbs and black pepper .
  • Cook till water dries and oil separates.
  • Filling is ready.

CHEESY POTATO BITES

IMG_3073mainThese bite size appetizers you can make quickly for any kids party or lunch box. You can add boiled chicken or beef mince to increase nutritional value for kids.

INGREDIENTS:

Potato boiled2 large
Cheddar cheese shredded1/2 cup
Chicken / beef mince boiled (optional)1/2 cup
Saltto tatse
Black pepper1/2 tsp
Soya sauce1 tbsp
Flour1 tbsp
Egg1
Bread crumbsfor coating ,as needed

METHOD:

  • Mash potatoes, add all ingredients and mix well.
  • Make shapes of your choice and coat egg and then breadcrumbs.
  • Fry in shallow oil.Serve with ketchup or dip.

MINCE STUFFED PEARS

IMG_9978mainHERE is a simple and easy party recipe.stuffed breads of different types are all time and age favorite. My today’s recipe is specially for kids.They will definitely attract toward this pear shape snack.

INGREDIENTS:

Chicken / beef mince1/2 kg or less
Bread slices5-6
Ginger garlic paste1 tsp
Onion chopped1 small
Green chilli chopped1 large
Salt
Red chilli powder 1 tsp or to taste
Turmeric powder1/4 tsp
Coriander powder1/4 tsp
All spice powder1/4 tsp
Cumin powder1/4 tsp
Egg beaten1
Bread crumbsas needed

METHOD:

  • In a pan add oil and onion, saute it then add ginger garlic paste and fry for few seconds, add all spices and mix well.
  • Cover with lid and cook till oil separates.
  • You can add all spice powder 1/4 tsp ,if you think your kids will like it …:) let it cool down first then start the second step.
  • In a food processor add bread slices, salt 1/4 tsp, soya sauce 1 tbsp and black pepper 1/2 tsp. Make a dough , if required add few spoons of water.
  • Place bread crumbs and egg on work place.
  • Make a thin patti and place mince on it now give it a shape of pear.
  • Dip in egg then roll in crumbs, press with hands to coat completely.
  • Fry in oil.
  • Insert clove on top with a mint leave, just to give a proper pear look.
  • Serve with sauce.

GOSH-E-FEEL & KAHWA

IMG_1493Gosh e feel also known as elephant ears or Hathi ke kan is a sweet Afghan pastry.This is very easy and simple, Afghan lady told me that they normally serve this on special occasions, Eids or parties. She told me, she can make large size Gosh e feel hundred in numbers at a time for large gatherings.

She used her own Pasta machine for demonstration…. afterwards she, on my request brought it from Afghanistan for me. She and her daughter demonstrated the process for me.

INGREDIENTS:

Flour2 1/2 cups
Eggs2 small
Baking powder2 pinch
Saltpinch
Cardamom powder1/2 tsp
Oil1/2 tsp (add in flour)
Milk1/2 cup (for kneading)
Sugar (grind it into fine powder)as needed
Oil for frying

METHOD:

  • In a large bowl mix flour , baking powder, cardamom, oil, salt and eggs.
  • Knead with milk, knead it very well approximately for 15 minutes.Cover with cling wrap and leave for 1/2 hour .
  • Dust flour on work place and knead one more time before use.Divide dough into equal halves.
  • Use pasta machine for rolling ,if you have. Otherwise you can roll it with pin wheel as thin as you can.
  • You can make two shapes which are famous, one is a bow shape and other one is oval shape like an elephant ear.
  • Now fry till light golden and sprinkle sugar on hot ears.You can sprinkle pistachio powder as well.

CARDAMOM TEA /KEHWA

INGREDIENTS:

Water2 cups
Black or green tea leavesas needed
Cardamom2 pods
Sugarto taste.

METHOD:

  • Boil water.
  • Add black / green tea leaves and cardamom.
  • Cover with lid and turn off the flame. Leave it for few minutes.
  • Strain, add sugar in cups and pour kehwa.
  • Serve….:)

FRESCO DAHI BONDI

maiThis special recipe was a gift recipe from my family friend Nuzhat Danish, Dahi bondi is all time favorite. Serve with papri and chat masala and enjoy with your family. Fresco is a famous bakery in Karachi and their Bondi is very popular . So here it is copycat of Fresco Bondi…..

INGREDIENTS:

Mong lentil1 cup (soak it for 4-5 hours)
Flour2 tbsp
Saltto taste
Red chilli powder1 tbsp
Baking soda1/4 tsp
Yogurt1/2 kg (Nestle will give you a perfect result)
Sugar2 tbsp or to taste
Black salt1 tsp

METHOD:

  • Grind , drained lentil , salt, red chilli powder ,soda with 2 tbsp water.Make a smooth paste ,add flour.
  • Set a side for few minutes and fry in oil.
  • Soak in water for few minutes and then squeeze water with hands.
  • In yogurt add black salt and salt .Add bondis in it and leave for few more minutes.
  • Serve with papri n chat masala.

FILLED PANI PURI

mainOne of my most favorite chat…:) In Pakistan you will see a lot of GOLAPPAS stalls along the road side. Its very easy snack and i prefer to make it at home.

INGREDIENTS:

Golgappas/ Pani puriesas needed
Boiled chickpeasas needed
Boiled potatoesas needed
Bondi raitaas needed
Sweet and sour tamarind sauceas needed
Chat masalaas needed
Onion ,choppedas needed
Coriander leavesfew
Sevas needed

METHOD:

  • Prepare bondi raita and sweet and sour chutney and set aside.
  • Cut onion, potatoes, green coriander and set aside.
  • Now break pories from center and place on a serving platter.
  • Fill with chickpeas and potato then pour bondi raita and chutney.Can sprinkle chat masala also.
  • Garnish with sev and serve immediately.

BUN KEBABS

IMG_4400Bun Kebabs are the traditional and addictive specialty of Pakistan, and especially, Karachi. You find a lot of Bun Kebab vendors scattered all across Karachi, the most famous ones being on Pakistan Chowk, Burns Road, Bahadurabad and Gizri.
Over the years, the bun-kebab has remained a staple, even as the city around it has succumbed to the forces of globalisation. Mr. Burger, which was established on Tariq Road in the 1980s, was considered as respectable an eatery as a restaurant in a five-star hotel. KFC and McDonald’s also entered Pakistan in the late 1990s, as part of a wave of foreign investment in the country. But Karachi’s bun-kebab vendors proudly claim that their business wasn’t affected much by the advent of these international franchises.

Apparently, a slice of thick cheddar cheese on a grilled patty can’t compete with the taste of a fried egg on a mysterious kebab patty. Vendors across the city insist that both of these can not be compared to the other as they offer completely different tastes. One comes with crisp green lettuce, tomatoes, cheese and French fries on the side, while the other comes with a mush of cabbage and onions along with spicy ketchup or watery chatni. “Angrezi taste hai woh,” volunteers one bun-kebab vendor, dismissing any comparison between his speciality and the western import, the burger.

“I’ve always been a roadside attraction. You don’t necessarily need to have bills of cash in your designer jeans to get a piece of me. You don’t need to belong to a particular socio-economic class either and if someone says you do – they are lying. Just watch, they’ll be at the stall when their stomachs growl. I don’t offer a fancy air-conditioned seating arrangement, nor do I want you to have an unforgettable experience when you visit. I’m going to offer you exactly what you came for: a quick bite in an extremely polluted, over-crowded and noisy environment. And it’ll be well-worth the Rs. 20 you pay in return.”
That’s what a bun-kebab would say to you if it could talk.

Having Bun Kebabs is an entire experience in itself. It involves not just eating, but also watching the vendor make it front of you: frying the patty, toasting the buns, adding the delicious mint chutney, the sliced onions and then closing it – your mouth waters…isn’t it.

INGREDIENTS FOR PATTI:

Meat beef / chicken/ mutton1/2 kg
Gram lentil 1/2 cup (washed and soaked)
Red whole chillies7-8
Saltto taste
Onion 1 medium
Ginger garlic paste1 tbsp
All spice powder1 tbsp
Eggs2
Onion ringsfew
Salad leavesfew

METHOD:

  • In a pot add all ingredients and cook till meat and lentil tender.
  • Grind this mixture and add egg in it.
  • Make patties and fry.

ASSEMBLING:

  • Divide bun in 2 halves and toast open sides in 1 tbsp oil.
  • Spread green chutney on buns , place onion rings ,salad leaves and then a kebab.
  • For egg bun kebab, make an scramble egg and place on kebab and place another half.
  • Serve hot with mayo Cabbage. (just mix cabbage in mayonnaise)

IMG_1200Another Rock & Roll recipe for you friends. LASAGNA ROLLS , make it…freeze it …when needed take it out and Bake it…:D
This is also my versatile recipe in which you can use any type of filling ,topped up with cheese and here it is Rock & Roll disk for all age groups…and for dieters too..

INGREDIENTS:

Lasagna noodles10 sheets
Chicken boiled and shredded 2 cups
Oil1-2 tbsp
Garlic clove1 large ,minced
Pasta sauce2 tbsp + for spreading on lasagna sheets
Saltto taste
Red chilli flakes1 tbsp (adjust according to your taste buds)
Veggiesif needed
Cheese ( i have used cheddar) as needed
Mixed herbs/ oreganofor sprinkle on top.

METHOD:

  • Boil lasagna noodles. Coat oil to keep them separate.
  • In a pan pour 1 tbsp oil. Add garlic mince and chicken shredded, saute it for few minutes and add salt and crushed red chillies.
  • Add pizza/ pasta sauce and mix well. You can add chopped veggies and mushrooms also.
  • Now spread sauce on lasagna noodles and place chicken on one end, roll it tightly and place seem side down  in a greased baking dish.You can freeze on this stage for 2-3 weeks if using veggies other wise for 1 month easily.When needed take them out and directly arrange in dish and bake.
  • Arrange as many as you want.
  • Sprinkle cheese and mixed herbs or oregano.
  • Bake it for 10-15 minutes till cheese melt.
  • Serve hot.
