INGREDIENTS:
Unsalted butter | 2 oz or 50 g |
Cocoa | 2 tsp for dusting |
Dark chocolate, chopped | 2 oz or 50 g |
Egg | 1 plus 1 egg yolk |
Cater sugar | 2 -1/2 oz or 60 g |
Coffee (prepared) | 2 tbsp |
Flour | 2 oz or 50 g |
METHOD:
- Preheat oven at 150c. Grease ramekins with bitter and then dust with cocoa. Shake out any excess.
- Place the chocolate and butter in a small heatproof bowl and set over hot water until melted. Stir until smooth.
- Cool for 10 minutes.
- Whisk together the egg yolk and egg and sugar with an electric beater until pale and thick.
- Add chocolate mixture and stir to combine.
- Add coffee and fold in flour.
- Divide between ramekins and bake for 12 -15 minutes at 180c.
- Turn out on plate and serve hot or serve in Ramekins.
