PAKISTAN DAY SPECIAL – OREO DOUGNUTS

The nation is celebrating  Pakistan Day on 23rd March with traditional fervour and zeal to rejoice the emergence of Pakistan that marked the emancipation of an independent Muslim state.Allama Iqbal’s dream was redeemed as the Quaid responded to his vision with resolve, commitment, sincerity and devotion. He virtually fought single handedly to carve out Pakistan.
It is an auspicious occasion for the Pakistani nation that calls for evaluation of our failings and achievements to seek guidance for the future. Pakistan has endured many ups and downs in the course of its history over the past six decades.I am hoping for a bright future for my kids and this poem is dedicated to my new generation…

Mighty Oak

Stand tall oh mighty oak, for all the world to see,
your strength and undying beauty forever amazes me.
Though storm clouds hover above you,
your branches span the sky,
in search of the radiant sunlight you
count on to survive.
When the winds are high and restless and
you lose a limb or two,
it only makes you stronger, we
could learn so much from you.
Though generations have come and gone
and brought about such change,
quietly you’ve watched them all yet still
remained the same.
I only pray God give to me the strength he’s
given you,
to face each day with hope, whether
skies are black or blue,
Life on earth is truly a gift
every moment we must treasure,
it’s the simple things we take for granted
that become our ultimate pleasures.
Today’s recipe is my special treat on this special day….:)

INGREDIENTS:

Doughnut doughas needed
Oreo biscuitsas needed
Icing sugaras needed/1 cup
Food colorfew drops
Water 1-2 tbsp

METHOD:

  • Knead the dough, leave it for 2-3 hours at warm place,  before baking or frying add crushed Oreo biscuits in it.Again knead them.
  • In icing sugar add 2 drops of green food color and 1 -2 tbsp water ,mix well and dip doughnuts in the icing.
  • sprinkle crushed Oreo biscuits on top.
  • You can dip doughnuts in chocolate and then sprinkle Oreo.Choice is yours.
  • Enjoy delicious Oreo glazed doughnuts.

CHP GLAZED POPCORN
Confused by the name..? Actually my husband do not like long recipe’s name so I abbreviated Chocolate, Honey and Peanut butter glazed popcorn into CHP…..lolz. Long name but very easy recipe it is, your kids will love this.

INGREDIENTS:

Chocolate (broken into pieces)as needed/ 1 cup
Peanut butteras needed /2 tbsp
Honey1 tsp
Popcorn1 bowl /1 packet (make them in microwave)

METHOD:

  • In a microwave safe bowl place broken chocolate and peanut butter ,keep in micro wave for 1 minute ,but after 30 secs mix with spoon and again keep in micro for 30 secs.
  • Mix well and add honey again mix.
  • Toss popcorn in this chocolaty mixture, do it fast to coat all popcorn.
  • Set aside and let them cool.
  • Enjoy chocolaty glazed popcorn….:)

VEIGGIE NUGGETS
This recipe is specially for my son’s friends. If you ask any kid about their favorite snack, they will probabely tell you… Nuggets. Veggie nuggets are extremely healthy for you and your kids. Interesting thing is that you can add any vegetable of your choice.

INGREDIENTS:

Potato (boiled)2 large
Carrot1 large
Peas1/4 cup
Broccoli1/4 cup
Saltto taste
Black pepper1/2 tsp
Garlic powder1/4 tsp
Onion powder1/4 tsp
Plain flouras needed
Bread crumbsas needed
Eggs1-2
Oilfor greasing and spraying.

METHOD:

  • Boil all vegetables, with masher mash them completely and add all spices. Mix well.
  • Spread the mixture on a tray of 1/2 inch thickness and keep this in freeze for 1-2 hours. Then take it out and cut shapes from cookie cutter, place them on butter paper. Again keep them in freezer.
  • Grease your baking tray and preheat oven.
  • First coat them with flour then with egg and in the end with bread crumbs. Place on baking tray and spray oil on nuggets.
  • Bake them first few minutes from one side then turn the side and bake till golden color appear.
  • Serve with sauce.

SPICY AND CRISPY BAKED CHICKPEAS
Low fat and highly healthy snack or can be a lunch box item as well. Spicy and crunchy chickpeas are very easy to make, you can make them in just 10 minutes. Boil chickpeas and freeze them when needed just microwave them, add spices and  your crispy and spicy snack is ready…:)

INGREDIENTS:

Chickpeasas needed
Saltto taste
Red chili powderas needed
Crushed red chilliesto taste
Chat masalato taste
Oiljust to grease tray.

METHOD:

  • Boil chickpeas and drain water now with paper towel pat dry them .
  • On baking tray spray oil and spread chickpeas, sprinkle salt, red chili powder, crushed red chili and chat masala.
  • Toss them so that all spices coat on chickpeas evenly.
  • Bake at 180c till chickpeas become brown n crispy.

MINI PIZZA PIE
A very nice and easy recipe, especially for kids. You can give this in lunch boxes and can be an evening snack as well.

INGREDIENTS FOR DOUGH:

Plain Flour 2 cups
Yeast 2 tsp
Sugar 1 tsp
Salt 1 tsp
Milk Powder 2 tbsp
Butter 2 tbsp
Egg 1

METHOD:

  • Mix all ingredients and knead with Luke warm water.
  • Set aside for 2 hours.

INGREDIENTS FOR FILLING

Chicken (boiled) 1 cup
Butter 1 tbsp
Onion 1 small
Capsicum 1 small
Tomato 1 small
Peas (boiled) ¼ cup
Cheese as needed
Flour 1 tbsp
Black Pepper ½ tsp
Salt to taste
Oregano 1 tsp
Milk ¼ cup
Coriander Leaves few
Green Chili (chopped) 1 small
Onion Seeds ¼ tsp
Sesame Seeds ¼ tsp
Egg for brushing

METHOD:

  • In a pan add butter and chopped onion, sauté it for few minutes.
  • Then add flour and stir for few seconds then add chicken and fry for few seconds.
  • Now add salt  and black pepper. After mixing them add milk and stir constantly to avoid lump formation.
  • In the end add coriander and chili and set aside.

ASSEMBLING OF PIES

  • Make small balls of dough and roll them.
  • Now place them in muffin tray cases.
  • Fill spoonful mixture in cups, sprinkle cheese and oregano.
  • With star shape cutter cut stars of the same dough and place on pies.
  • Brush egg wash and sprinkle onion seeds and sesame seeds. Bake them at 180c for 20 minutes.

SNOW MAN CHICKEN TIKKA PIZZA
This is my first pizza of pizza party. Hope you all will like it :). I made this with chicken tikka topping you can use any other of your choice. Surely kids will love this snowman idea…

PIZZAH DOUGH IN A FOOD PROCESSOR

If you do not have stand mixer then no problem use your food processor and make perfect dough. And if you do not have processor then again no problem, use your hands to knead a super perfect dough lolz

Plain flour 2 cups
Salt 1 tsp
Sugar 1 tsp
Milk Powder 2 tbsp
Olive Oil/Butter 2 tbsp
Yeast 2 tsp
Luke Warm Water as needed

METHOD:

  • In a food processor fit in dough making cutter, add all ingredients and turn on processor for few minutes.
  • Do this process by adding up little amount of water.
  • Keep on doing this till dough start to become elastic and soft.
  • Place in a bowl and set aside for 2 hours.

CHICKEN  TIKKA  PIZZA INGREDIENTS:

Chicken 1/2 kg
Tikka Masala Powder (optional) 1 tsp
Powder Red Chillies 1 -1/2  tsp
Garam Masala 1/2 tsp
Crushed Zeera 1/2 tsp
Lemon Juice 2 tbsp
Ginger Garlic Paste 1/2 tsp
Yogurt 2 tbsp
Yellow Food Color 1/4 tsp

METHOD:

  • Marinate chicken with all ingredients  for 1-2 hour.
  • Bake it at 180c. You can cook in a pan and give smoke, choice is yours.

ASSEMBLING OF PIZZA:

  • Roll the dough and make two circles, one small for head and large one for tummy.
  • Place on pizza pan and Spread pizza sauce on dough then sprinkle cheese on it and then chicken, onion (small pieces), capsicum and again sprinkle some cheese.
  • Bake it for 20 minutes.
  • You can use olives or anything else you like for buttons and eyes. Muffler  I made with dough. With a simple twist you can attract your kids and even your other family members…. :). Enjoy your snowman pizza and do not forget to comment.

RAW  LICORICE  TREATS
This energy booster recipe is not only beneficial for all age groups but also for those who are weight conscious, give this to your young ones in their lunch boxes I am sure they will like it. I like the taste of peanuts coating blended with dates and figs. Enjoy this full of energy treat in winter.

INGREDIENTS:

Raisins 1/4 cup
Dates
(pitted, soaked one hour and drained)
1cup
Anise Seeds (ground) 1 tsp
Peanuts (ground) 1/2 cup
Dried Figs
(quartered and soaked in warm water and drained)
1/2 cup

METHOD:

  • Place all ingredients except peanuts into food processor with and process until a paste is formed.
  • Roll this paste into balls and then roll balls over ground peanut pieces.
  • Cover and refrigerate until served.

Apple & Cholocate butterfly
I saw this butterfly idea on Pinterest and next day I made this cute butterfly for my son. He was so excited to see this as he likes raisins and apple a lot. Isn’t it an easy way to attract your kids towards healthy food..? A big YES from my side. Try it and let your kid enjoy this cute thing.

INGREDIENTS:

Apple 1
Raisins as needed
Snickers Chocolate
(or any other fruit or ingredient you like)
1 bar
Icing Sugar for dusting

METHOD:

  • Make slices of apple and arrange them as shown in the pictures with chocolate in the middle.
  • In the end dust icing sugar and serve immediately otherwise apples will  change its color.

BUNTEES POPCORN BALLS
Pop corns are kids favorite snack but what about caramel pop corns with M&M buntees… Sounds good especially for young ones. It’s an easy recipe you can store these for a month as well and on top of all only three ingredients are involved in it.

INGREDIENTS:

Pop Corns as needed
Brown Sugar / Shakar 1 cup
Butter 2 tbsp
M&M Buntees (or any other brand) as needed

METHOD:

  • Add sugar and butter in a pan  and stir till it melts.
  • Then add both, pop corns and buntees and mix welland fast.
  • Make small balls (you have to do this fast otherwise the corns will not stick ).
  • Serve it 🙂

FRENCH FRIES PIZZA

If you are thinking of making easy and time saving pizza  for you or your kids then you should try this one.. Can be your evening snack or kids lunch box item, you can add mushrooms, chicken or any other thing you want along with fries, otherwise simple fries pizza is also tasty. One more thing no measurement required in this recipe…amazing….isn’t it..???

INGREDIENTS:

Fries as needed
Pizza Sauce to taste
Cheddar and Mozzarella Cheese as needed
Mushrooms, Chicken BBQ Chunks or Sausages optional

METHOD:

  • Make French fries and put them on paper towel for the oil to be absorbed.
  • Now in heat proof dish layer up fries, you can sprinkle salt a bit then in a pan heat pizza sauce. If you want to add salt then you can add in sauce as well (up to your taste ).
  • If you want to add any other filling then add after fries then pour sauce on fries.
  • Sprinkle cheese on top and then sprinkle oregano on cheese (optional). I normally do this because I like the aroma of oregano a lot.
  • Bake till cheese melt and is a little bubbly.
  • Serve hot and enjoy this easy peasy pizza…

If you are nuttela lover like me… 🙂 then here comes again a very nice recipe , you can give this to your kids for school lunch boxes and can be a perfect Hi tea item.

INGREDIENTS:
FOR DOUGH:

flour  3 cups
egg  1
yeast  1 tbsp
salt pinch
milk powder    2 tbsp
icing sugar   3 tbsp
butter   3 tbsp

METHOD:
In a bowl mix all ingredients and knead all with warm water ,dough should be soft .Now set aside and keep it for 3-4 hours.

REMAINING INGREDIENTS:
nutella spread   as needed
cream cheese   softened
icing sugar   as needed
vanilla essence

METHOD OF MAKING ROLLS:
Divide dough in equal portions then roll each ball and make a flat circle ,should be thin .
Now spread generous amount of nutella chocolate spread on top ,roll it up and cut 2 inch pieces ..
Now grease the muffin tray and place three pieces in each muffin mold .
Bake it at 180c for 20 mins ..

CREAM CHEESE ICING:
In a bowl mix cream cheese,sugar and vanilla essence …beat them and make a soft and smooth paste ..top rolls with icing and enjoy with evening tea ,can be  your children lunch item as well…

I like all those things in which i can add bbq sauce ,the smell and taste of bbq sauce is very appealing ,the recipe i am sharing with you is  very nice and easy to go sort of recipe …My elder son like this very much ,for kids you can use mini burgers or croissants.

INGREDIENTS:
chicken breast    2
onion  1 small  chopped
garlic cloves   2  chopped
paprika powder  2 tsp
black pepper    1 tsp
salt
bar b q sauce   to taste.(i’ ve used American Garden bbq sauce)
mayonnaise
butter
buns or croissants

METHOD:
First marinate chicken with salt. pepper ,paprika,garlic (minced),  and 4 tbsp bbq sauce…..set aside for 2 hrs,now grease your pan and saute onion add meat , cover it, let it cook till chicken tender …take out chicken and shred with hand or fork ,now again put it back in sauce mix well and add more bbq sauce according to your taste ,just cook for 5-6 mins till sauce thickens..  remove from flame .
Now butter your buns and toast them then place chicken and add spoon ful mayonnaise on top and serve…..enjoy it with tea or even can take in lunch and its a weight watcher also.Even you can make this mixture and keep in fridge for 2-3 days.

All time favorite of my kids and mine also…lol. This is my evening tea time snack and my son’s lunch box item , very easy to make but please do not freeze them because potato become  soggy if you store them for longer period of time. I always prepare potato based things fresh. Make in the evening for kid’s lunch box and fry them in the morning.

 INGREDIENTS:

hard boiled eggs    3

boiled potatoes    4 medium size

black pepper crushed    1 tsp

corn flour   1 tsp

soya sauce  1 tsp

salt

egg  1 for coating

bread crumbs   as needed

METHOD:

Mash potatoes and mix all ingredients.

Cover each egg with potato mixture and dip in egg then coat crumbs, set a side . Make all and then deep fry them…..very good for your kids lunch box…:)

A very healthy and easy recipe ,only four ingredients involved in it….light snack it is especially for kids, i made this with different styles ,which i will add in my list time to time .This is my first muddy buddy recipe, in which i have used nutella .

INGREDIENTS:

chex cereal   2 cups

nutella   as needed

peanut butter  2 tbsp

icing sugar   just for coating

METHOD:

In a large bowl add chex ,In a separate bowl mix butter and nutella , place in micro wave for 20 secs and mix with spoon you need smooth texture …now pour on chex n toss them ..after coating, spread them in a tray to set. Now dust icing sugar on them and coat them again with sugar…. its ready to serve…can give your kids in lunch box or as an evening snack.

I saw this recipe ,I made and I succeeded …..The joy and brightness in my son’s eyes showed me his likeness ..my one year old son also grabbed one in his small hands and had it with great interest.

INGREDIENTS:

noodles/spaghetti  as needed   (boil it)

cooking chocolate /milk chocolate    as needed   melt it

peanut butter  1 tbsp

muffin tray

paper cups

m&m eggs  as needed

METHOD:

In a bowl add chocolate and butter melt it and dip noodles in it ,coat it properly and place in paper cups ,now put these cups in muffin tray to give firm shape of nest…..keep in fridge to set then carefully remove paper and serve with eggs…..kids will definitely enjoy these choco nests…..:)

I tasted these in my friend’s house ,i liked them a lot. They were bakery made but i examine them and at home I’ve  tried myself , these were very close to original one. You can use these in your iftar menu also.

INGREDIENTS:

chicken 1/2 cup

potato   4 medium size boiled

crushed red chili   1 tsp

salt

garam masala powder   1/2 tsp

sabut dhania    crushed   1/4 tsp

zeera   1/4 tsp

ajino moto   1/2 tsp

roll patti

METHOD:

Add all ingredients in a large bowl and mix well ,chicken should be shredded and potato mashed,now make rolls , deep fry them….

I will not recommend u to freeze them for longer period,use within a week because of potato filling.
