mainOne of my most favorite chat…:) In Pakistan you will see a lot of GOLAPPAS stalls along the road side. Its very easy snack and i prefer to make it at home.


Golgappas/ Pani puriesas needed
Boiled chickpeasas needed
Boiled potatoesas needed
Bondi raitaas needed
Sweet and sour tamarind sauceas needed
Chat masalaas needed
Onion ,choppedas needed
Coriander leavesfew
Sevas needed


  • Prepare bondi raita and sweet and sour chutney and set aside.
  • Cut onion, potatoes, green coriander and set aside.
  • Now break pories from center and place on a serving platter.
  • Fill with chickpeas and potato then pour bondi raita and chutney.Can sprinkle chat masala also.
  • Garnish with sev and serve immediately.

IMG_5364mainSamosa chat is another tempting variation of Chats.This is a tangy and spicy famous street food of Punjab region.When i tried this first time i was very much surprised to see a large samosa topped with chana gravy and dahi bondi.But believe me this complete meal was finger licking delicious…:)
Here it is a copy cat recipe of my city’s famous Samosa Chat.


Chickpeas (boiled)1 cup or as needed
Oil2 tbsp
Onion for gravy1 small
Cumin seeds, fennel seeds1/2 tsp each
Crushed red chillies1 tsp
Saltto taste
Gram flour2 tbsp
Water1 glass
Samosasas needed
Dahi bondias needed
Sliced onion and cabbageas needed
Chat masalaas needed
Sweet and sour tamarind sauceas needed



  • Fry onion in 2 tbp oil and add gram flour fry for few seconds and then add cumin seeds, fennel seeds,crushed red chillies, salt and chickpeas ,mix them well.
  • Add water and keep on stirring for few seconds till gravy become thick.
  • Now arrange samosa in a large platter or prepare single servings.
  • Place samosa then chickpea gravy and bondi raita (you can use plain yogurt also). Sprinkle chat masala and sweet and sour tamarind sauce.
  • Garnish with onion rings and cabbage slices.

This recipe is adopted from Chef Sanjeev Kapoor recipes. When i first time saw this recipe i found it interesting and unique. Bhel Pori is one of the favorite snack in our country and this recipe is very different in taste.Try is must..:)


Maggi/ knorr/ shoup Noodles1 packet
Chickpeas1/2 cup
Boiled Potatoes1/2 cup
Tomatoes chopped1 nos
Onion chopped1 small
Coriander finely chopped2 tbsp
Green sauceas needed
Date sauceas needed
Tamarind sauceas needed
Chat Masalaas needed
Saltadjust according to taste



  • Break Noodles into small pieces.
  • Roast them in a dry pan till light golden color appear.
  • Mix all ingredients.(Chopped onion, tomato, potato, chickpeas, coriander leaves)
  • Mix  tastemaker in tamarind sauce and date sauce.
  • Pour over chat and serve immediately.
  • Serve with all sauces and chat masala powder.
  • Interesting….isn’t it..:)

This is my second recipe of “mash ki dal ke bare”,this recipe is a bit different from the previous one but very tasty and finger licking. My Elder Sister In Law, Madiha Nauman is expert in making these dahi bhalla.I personally like these bhallas with sweet and spicy tamarind sauce and chat masala.Thanks to her for giving me such a nice recipe.

White lentil1 cup
Saltto taste
Red chilli powder1 tsp
Cumin seeds1/2 tsp
Ginger paste1/2 tsp
Baking soda1/2 tsp
Yogurt1/2 kg
Salt for yogurtto taste
Red pepper for yogurt1 tsp
Chat masalafor serving
Tamarind sauceas needed
Oil as needed.


  • Soak whit lentil/mash ki dal overnight in water.
  • Next day grind it with baking soda,salt,red chili powder,cumin seeds, ginger.
  • Make a smooth paste and set aside for 1/2 hour and then fry them.Wet your hands and fingers while making bhallas.The dough will not stick on your hand.Slide them in oil and fry till golden brown.
  • Soak them in water for 15 minutes and then squeeze them to remove water.
  • Make yogurt sauce by adding salt and red chilli powder.
  • Dip all bhallas in yogurt and serve with sweet,sour and spicy sauce and chat masala….wow….mouthwatering …isn’t it…?

This summer when i went to Karachi (Burns Road)  I tried these yummy and very tasty MALAI BARAS. They are serving these baras with sweet yogurt  I am giving you surety that combination of masala with sweet taste of yogurt sauce will give you a very unique flavor. Try is must…:)


Mong lentil1 cup
Baking soda1 tsp
Saltto taste
Red chilli powder1 tsp
Yogurt1/2 kg
Cream1/4 cup
Sugarto taste
Chat Masalaas needed

  • Soak lentil in plenty of water for few hours (3-4 hrs) drain water completely and in processor grind it very fine,if necessary then use 2-3 tbsp water also.
  • Transfer in a bowl and add salt ,red chilli powder and soda.mix well and set aside for few minutes.
  • Prepare yogurt sauce by adding sugar and cream in the yogurt,whisk it well .If you do not like sweet taste of yogurt then skip this with salt but in original recipe they have used sugar.
  • Fry Baras in a form of small balls and transfer fried balls in water,again soak them in water for 1/2 hour.
  • Squeeze them with hands to remove water and drop them in yogurt sauce.
  • Serve with Chat masala and papri.



My mother was an expert in making these Dahi baras, I never tried these in front of her but after marriage when I tried these first time my joy was unexplainable because they were so perfect. After my mother whenever I make baras, they remind me of her delicious baras and sweet and sour sauce.


White lentils/ mash ki dal/urad dal1 cup
Baking soda1 tsp
Saltto taste
Red chili powder1/2 tsp
Cumin seeds/zeera1/4 tsp
Onion 1 small
Yogurt1/2 kg


  • Soak lentil in  water with  baking soda for 4-5 hours (in summers 3 hours are enough).
  • Now wash it and drain water completely .
  • In a food processor add lentil,onion,cumin,salt,red chilli powder and grind it till smooth.Do not add water at all on this stage otherwise baras will break during frying.
  • Keep it aside for 10 minutes ,now wet your hands and make Baras in a form of flattened circles/tikkia.Slide it medium hot oil and fry till golden brown.
  • Put these fried Baras in water .Meanwhile prepare yogurt sauce.
  • Whisk yogurt and add salt and red chilli powder in it,according to your taste.
  • Squeeze water from Baras and slide them in yogurt sauce .Keep them aside for 10 more minutes in this way they will soak yogurt sauce also.
  • Serve with Imli  sauce and chat masala , enjoy these tasty and delicious DHAI BARAS…

Gol Gappe is always been a favorite snack for me. In Pakistan you can get two types of golgappas.

1. Dahi bondi and chana filled

2. Simple golgappe filled with chickpeas served with  sour water.

I have learned this recipe from a cook and I am sure you will try and like this easy recipe.


Semolina1 cup
Plain flour4 tbsp
Baking sodapinch
Waterfor kneading


  • Add all ingredients in a bowl and with water knead the dough ,set aside for 20 minutes but cover it with wet cloth .
  • Knead it again when want to make puris and  dust dry flour on counter and roll it in a very thin circle ,as thin as you can make will give you a perfect end product.
  • Cut small puris with cookie cutter or bottle cover  and make all poris at a time ,cover them with a wet cloth again if your poris will become dry then they will not puff properly.
  • In a wok heat the oil and in hot oil slide one pori at a time with a slotted spoon press it and let it golden from one side then change the side.
  • May be first time you will not get 100% puffed poris…:)
  • Drain oil on paper towel and let them completely cool then store in a air tight container.


Water1 lit
Tamarind /imli pulp 4tbsp
Chat masala powder1/2 tsp
Black salt1/2 tsp
Dry ginger powder/sonth1/2 tsp
Red chili flakes1/4 tsp
Red chili powder1/4 tsp
Roasted and crushed cumin 1/2 tsp
Saltto taste


  • Mix all ingredients in water and serve with golgappas…


Chick peas(boiled)1 cup
Potato (boiled)1 large,cut in thin cubes
Onion thinly sliced1 small
Whole spice powder1/2 tsp
saltto taste
Red chili flakes1/2 tsp
green corianderfew leaves


  • Mix all ingredients and serve with gol gappas/pani and puri.

Oranges are my and my son, Ali’s favorite fruit .When i made this basket he liked it a lot and asked me to make baskets of all oranges…lol. Guava simple chat  is my all time favorite.Its very simple and easy to make.


Guava 1/2 kg
Sugar to taste
Salt to taste
Black Pepper 1/4 tsp
Orange Juice 2 oranges


  • Remove seeds from guava and then slice them.
  • Now add all ingredients. Mix well and set aside for few minutes, this way all ingredients will absorb into guava and this blended flavor of orange and guava you all will like… I m sure…J

 I personally like this chat because of its nutritional value. It has high protein content in it and you should give this to your young ones. This dish is included in my hi tea menu every now and then.


Black Chana 1/2 kg
Tomato 2 medium
Onion 1 large
Zeera 1 tsp
Crushed Chilli 1 tsp
Salt as desired
Imli Pulp 1/2 cup
Hara Dhania as desired
Podina as desired
Boiled Potato 2 medium
Hari Mirch as desired
Oil 2 tbsp


  • In a pan add oil and sliced onions.
  • Saute till the color change.
  • Now add zeera and let it crackle.
  • Then add chopped tomato and fry it.
  • Add chana, chilli, salt and mix well and cover for five mins.
  • Now add imli pulp and potato cubes, hara dhania, hari mirch, podina, tomato cubes and mix all.
  • Serve with papri…..

One of my relatives served this chat to us once. I liked the idea of mixing all beans as they are full of energy. Those who want to reduce weight , can try this in their lunch.


All Types of Lobia (white, kidney, dark red) 1/2 kg
Boiled Potatoes (cut in cubes) 2 medium
Onion (sliced) 1 large
Imli Ki Methi Chatney as desired
Salt as desired
Crushed Red Chilli 1 tbsp
Chat Masala 1 tsp
Hara Dhania as desired
Podina as desired
Hari Mirch as desired


  • Boil the lobia and leave little amount of water in it.
  • In a large bowl add all ingredients and mix well
  • Serve with papri……

This is a very healthy and nutritional dish those who are health conscious, can add this in their diet ….


I always prefer home made food. Papri is a very easy side dish with chaat , without papri flavour of chat and dahi phulki is incomplete. Either you want to make papri chat or want to serve with chat ,homemade papri is best…try it yourself.


meida  1/2 cup

soji  1/4 cup

oil  2 tbsp

salt  pinch

ajwain  pinch

water  for kneading


In a bowl add all ingredients and knead with luke warm water make a firm dough and set a side for 20 mins…then make two balls of dough and roll it ,make very thin roti cut in any shape i.e circle ,square or diamond and fry in oil till golden brown.Spread on paper towel and let it cool down ,it will become crispy when become cool …enjoy this crispy papri with chana chat or you can  make papri chat as well…:)


My mother’s special chat , I saw her making this chat in Quran khuanis and eids, although she was making chats with different methods but this was her famous one , she was using roasted crushed cumin seeds.


white chana boiled    2 cups
imli pulp   1/2 cup (to ur taste)
crushed red chill   1 tsp
crushed zeera    1 tsp
chat masala  1 tsp
sugar   1 bsp
boiled potatoes  1 large (boiled n diced)
onion slices 1
hara dhania
hari mirch
tomato  1 chopped

In a bowl mix all ingredients ,mix half hara masala also. Mix well,i will recommend u to make it 1 hrs prior potato n chanas will absorb masala ,before serving garnish with remaining hara masala and tomatos…..



This is a normal fruit chat nothing different except tangy touch….I usually use orange Tang for tangy flavor but pineapple Tang can also gives a very different taste to fruit chat…If you want to use real orange juice then go for it because nothing is better then original.

fruits   as needed(i ve taken 3 cups mix fruit)
white chickpeas    as needed(1/2 cup)
lemon juice   2 tsp
sugar  to taste
black salt(kala namak)   1/2 tsp
chat masala  1/2 tsp
tang in orange flavor   3/4 cup prepared

In a large bowl add all ingredients and mix well, in the end add juice ,mix again …i will recommend u to make it 2 hrs prior and keep it in the  fridge in this way the juice will penetrate in fruits and will give you a very good taste…do try this chat…and comment…:)
