CHICKEN PANEER KARHAI

paneer-karhai-mKarhai is one of a very famous and important dishes in Pakistan, You will observe a lot of variations in Karhai but these days Paneer karhai is in demand. I am sharing my tried and tested recipe today.

INGREDIENTS:

Chicken boneless or with bones1/2 kg
Onion2 medium, chopped
Tomatoes2 large, chopped
Green chilies5-6, cut in sticks
Cottage cheese1/2 cup cubed
Ginger garlic paste1 tbsp
Saltto taste
All spice powder/ garam masala1 tsp
Turmeric powder1 tsp
Red chili powder1 tsp
Yogurt1 cup
Oil1/2 cup
Coriander leaves1/4 cup.
Cream2 tbsp

METHOD:

  • Heat oil in a clay pot or normal pot, Add chopped and fry till light golden in color.
  • Now add  ginger garlic paste and chicken. Fry till color change.
  • Now add tomatoes, green chilies, salt, all spice powder, turmeric powder and red chili powder. Mix well.
  • Add yogurt and mix, cover with the lid and cook till water dries.
  • Fry till oil separates.
  • Cut cottage cheese and fry in oil, Make crumbs of cheese and spread on chicken, spread cream top.
  • Sprinkle coriander leaves and cover with the lid, let it simmer for 10 minutes on very slow flame.
  • Remove from stove and serve with Naan.

burfi-mI am sharing very easy and delicious recipe of Barfi with you. Barfi or barfee is one of the famous traditional sweet of Pakistan. Special occasions are incomplete without Barfi. You will find a lot variations in Barfi but this is basic recipe of Barfi. Add nuts or color to give variations. You can serve as a dessert or even use in Kheer or Halwas.

INGREDIENTS:

Fresh Milk1 cup
Ghee/ unsalted butter1 cup
Milk powder (Nido)2 cups
Icing sugar1 cup
Khoya1/2 cup
Kewra essencefew drops
Pistachio and almonds as needed

METHOD:

  • In a pot add liquid milk and ghee. Let it melt and add Khoya ( if you do not want to add khoya than skip it). Stir well.
  • Now add milk powder and sugar. Mix well.
  • Stir constantly. Add kewra water.
  • Mixture will become thick in consistency and leave sides of the pot.
  • Grease a tray and pour mixture on it.
  • Spread and sprinkle nuts on top.
  • Let it cool on room temperature and than place in refrigerator.

nargasi-kebab-mThis recipe is taught by a friend and Its an inspiration from Nargisi koftas. Difference is mince mixture which I have used in kebabs. Serve these kebabs with Green Chatney or yogurt mint sauce.

INGREDIENTS:

Beef / mutton boneless1/2 kg , cut in cubes
Gram lentil/ chana dal1 cup
All spice powder/ garam masala1 tbsp
Saltto taste
Whole red chilies6-7
Ginger garlic paste1 tbsp
Onion1 medium, sliced
Egg1, for adding in mince
Hard boiled eggs4-5
Coriander leaves1/4 cup
Mint leaves2-3 tbsp
Green chilies chopped2-3

METHOD:

  • In a pot add all ingredients and cook till meat and lentil tender.
  • Let the water dries and cool completely.
  • Now chop it and add eggs, coriander and mint leaves and green chopped chilies.
  • Mix well and set aside.
  • Boil eggs and remove skin.
  • Cover the egg with mince and Fry in shallow oil.

INGREDIENTS FOR CHICKEN STRIPS:

Chicken strips1/2 kg, cut in thin strips
Oil1/4 cup
Soya sauce3 tbsp
Mustard paste/ paste1 tsp
Black pepper1 tsp
Salt1 tsp or to tatse
Red chili flakes1/2 tsp
Garlic chopped1 tbsp
Lemon Juice1 tbsp
Coriander chopped2 tbsp
Egg2-3
Corn flour1/4 cup
Flour1/2 cup
Bread crumbs2 cups
Sesame seeds1/4 cup
Oilfor frying

METHOD:

  • Make strips from fillet.
  • In a bowl add oil, soy sauce, mustard powder or paste, black pepper, salt, red chili flakes, garlic, lemon juice and fresh coriander chopped. Mix all ingredients.
  • Add chicken strips in this mixture and coat well.
  • Marinate it for 40-45 minutes.
  • In this mixture add flour, corn flour and egg.
  • Mix well to avoid lumps formation.
  • In a bowl mix sesame seeds and bread crumbs (use PANKO brand or any good quality brand for beautiful look)
  • Heat oil take a strip roll in crumbs, press one side and coat crumbs , turn the side and coat again.
  • Deep fry strips. Let it cook for few minutes do not use spoon for turning them. When one side cooked, turn the side and cook till light golden color appear.
  • Serve with Ranch dip.

INGREDIENTS FOR RANCH DIP:

Mayonnaise 1 cup
Cream 1/2 cup
Vinegar1 tbsp
Oregano1/2 tsp
Saltto taste
Black pepper1/4 tsp
Milk2 tbsp

METHOD:

  • Mix all ingredients and serve with chicken.

chicken-shorba-mChicken Shoraba is a main course here in Pakistan. This method is told by a family friend who has learned it from a Cook. That cook made this Salan/ shorba on a special occasion.

INGREDIENTS:

Chicken1 kg
Onion3 large
Tomatoes3 large
Ginger garlic paste2 tbsp
Cumin seeds1 tsp
Black pepper1/2 tsp
Saltto taste
Red chili powder1 tsp
Coriander powder1 tsp
All spice/ garam masala powder2 tsp
Oil 1 cup
Ginger julienne cut1 tbsp

METHOD:

  • Fry onion in oil till soft,add ginger garlic paste and stir for few seconds.
  • Add all spices but add 1 tsp garam masala powder. Half we will add in the end.
  • Now add a little amount of water (1/4 ) cup and stir.
  • Add chopped tomatoes, fry till oil separates.
  • Remove pot from stove and let it cool.
  • Grind this gravy.
  • Again pour gravy in pot and add chicken as well.
  • Start cooking on high flame. Fry chicken till oil separates.
  • Add water (up to your choice) and cook till chicken tender.
  • Sprinkle garam masala powder and ginger sticks.
  • Let it simmer on low flame for 10 minutes.
  • Serve with Naans.

INGREDIENTS FOR BROWNIE CAKE:

Flour 1 cup
Castor sugar/ granulated sugar1/2 cup
Eggs2
Baking powder1/2 tsp
Cocoa powder1/4 cup
Vanilla essence1/2 tsp
Nutella 2 tbsp , extra for filling
Milk1/2 cup
Oil1/2 cup

METHOD:

  • Sift all dry ingredients and set aside.
  • In a bowl add eggs and sugar. Beat well and add vanilla and milk. Beat well.
  • Add dry ingredients in egg mixture and mix.
  • Add oil , beat. Mix nutella.
  • Preheat sandwich maker for  1-2 minutes. Now pour 2-3  tbsp mixture in each greased half.
  • Fill all four and close the lid.
  • Check after 3-4 minutes with toothpick. If not done, give 1-2 more minutes.
  • Let them cool down and cut from center. Fill Nutella inside and serve.
  • Wrap with cling sheet and give this to your kids in lunch box.

INGREDIENTS FOR CUSTARD CAKE:

Flour1/2 cup
Custard powder of any flavor2 tbsp
Baking Powder1 tsp
Butter1/4 cup
Egg1
Castor sugar1/4 cup
Vanilla essence1/4 tsp
Milk2 tbsp

METHOD:

  • Sift all dry ingredients. Set aside.
  • In a bowl beat butter and sugar till creamy. Now add egg and beat well.
  • Add vanilla essence and mix, Now start adding dry ingredients.
  • Add half quantity and mix, add milk and beat. Now add remaining half and beat.
  • Grease all halves of sandwich maker.
  • Preheat for 2-3 minutes and pour batter till each half fill.
  • Close the lid and bake for 3-4 minutes.

gond-mA common problem these days is pain in bones specially legs, My Aunt Farkhuda once told me this home remedy for my mother in law. I not only made this for my mother in law but also told this tip to a number of people who had bones pain and believe me they gave me very good response, so I am passing this tip to you people.
First let me explain about two gonds which we need for this medicine.

GOND KATIRA

Names in different languages:

  • English – Tragacanth gum
  • Hindi – Gond katira
  • German -Kutira Gummi
  • French – Gomme Adragante
  • Arabic – Katheera, Haloosiyaa
  • Bengali- Katila

Tragacanth gum or Gond katira comes from a shrub which is mostly found in Mid East, Iraq, and Iran and even in western Asia.Iran produces an enormous quantity of Gond Katira.

It is a tree gum just like any of myrrh but is less common in products than other gums, such as guar gum or gum Arabic. The advantages are pure and so worth noting. The only requirement is to keep patience while taking Ayurveda treatment as you will see remarkable changes with the passage of time.

GOND BABOOL/BABUL

Babul trees contain crude protein; up to 20% can be found in the leaves and up to 12% is found in the edible pods. The gum that the babul bark yields has multiple medicinal properties. The babul plant consists of compounds such as an active androstene steroid, D-pinitol, gallic acid, and rutin. Babul gum also contains Arabic acid in addition to calcium, magnesium, and potassium. The bark and leaves of babul tree contain tannin and galic acid, which gives it a bitter taste.

HOW TO USE GONDS:

  • Take equal quantity of both gonds.
  • Fry Gond katira in 1 tbsp desi ghee or butter.

  • It will pop up. Take it out and place on paper towel.

  • Now take Gond Babool and fry in 1 tbsp ghee.

  • It will also pop. You need to stir continuously.

  • Let them cool and grind both.

  • Make fine powder.
  • Store in air tight jar.
  • Before sleeping dissolve in one cup of warm milk or water and drink it.
  • Use this in cold weather. I will not recommend to use in summer season.

pizza-corneto-mCornetto is a favorite word for kids 🙂 Another favorite of kids is pizza so why not make a combination of both kid’s favorite.

INGREDIENTS:

Pizza doughas needed
Pizza sauceas needed
Cheeseas needed
Egg 1, beaten
Sesame seedsfor sprinkling on cones
Chicken boneless1 cup
Saltto taste
Garlic paste1 tsp
Onion chopped1 medium
Black pepper powder1 tbsp
Olive oil or vegetable oil1 tbsp

METHOD:

  • Roll pizza dough and cut long thin strips. (Pizza Dough Recipe)
  • Take card board sheet and cut square shape. As many as you need. Make a cone and use stapler to join it.
  • Wrap aluminum foil on each cone.

  • Wrap dough strip around each cone.

  • Try to overlap during warping.
  • Brush egg wash on cones and sprinkle sesame seeds and kalonji seeds on top.
  • Bake at 180c in pre heated oven , for 10 minutes.
  • Let them cool completely and remove from cones.

  • Prepare filling now, In olive oil saute onion and garlic till soft. Add chicken and salt stir and add black pepper, Cook on high flame for 5-6 minutes. Remove from flame.
  • You can add mushrooms, capsicum or onion in filling, will not recommend tomatoes for filling.

  • Spread pizza sauce inside cones (optional step). (Recipe of Pizza Sauce)
  • Fill in Chicken filling and sprinkle cheese on top.
  • Bake again till cheese melt and nice brown color appear.
  • Serve hot.

chocolate-fudge-mJust in 3 ingredients make a delicious fudge. In the same recipe do variation and make different fudges. You can add walnuts, almonds, peanuts or any other dry fruit.

INGREDIENTS:

Chocolate chips or cooking chocolate semi sweet3 cups
Condensed milk1 can
Margarine or any butter1/4 cup
Nuts1/2 cup

METHOD:

  • In a large microwave safe bowl mix all ingredients and microwave till chocolate melt.
  • Stir to mix.
  • Add nuts.
  • Pour in greased pan and let it set.
  • Cut in desired shape and store in air tight jar.
  • Enjoy with a cup of coffee 🙂

carrot-zarda-mI have tried this recipe first time in this winter season and believe me the end result was super dooper delicious. Recipe is a bit different from basic zarda recipe but taste is too good.

INGREDIENTS:

Rice1/2 kg, boiled
Carrot grated3 medium
Sugar1/2 kg
Milk1/2 cup
Koya1/2 cup
Pistachios as needed
Coconut gratedas needed
Oil/ ghee1/2 cup

METHOD:

  • Spread carrot in a frying pan and stir till water of its own get dried.
  • Divide carrot, rice and sugar in two portions.
  • In a pot add oil/ ghee now layer one portion of rice and carrots with 2 tbsp milk.
  • Repeat the process. Add 2 tbsp milk on top.
  • Put it on griddle on low flame for 10-15 minutes.
  • Remove from heat and add all nuts and khoya.

CHICKEN TIKKA CHEESE MUFFINS WITH MASH POTATO FROSTING

Yield: 12 muffins

Ingredients:

  • 2 cups flour
  • 1/2 cup boiled shredded chicken (any leftover chicken you can use)
  • 1 tea spoon white cumin
  • 1 table spoon lemon juice
  • 2/3 table spoons yogurt
  • 1/2 tea spoon salt
  • 1/2 tea spoon black pepper
  • ( salt n pepper will add to your taste buds)
  • 1/2 cup grated cheese  (I like to mix cheddar with mozzarella)
  • 1/2 cup mixture of chopped capsicum and Onion
    (you can mix chopped mushrooms or grated carrots too)
  • 1 tbsp fresh chopped coriander
  • 1 chopped green chilli or chili flakes
  • 1/2 cup melted butter (125 gm)
  • 1 egg lightly beaten
  • 1 cup milk
  • 3 tea spoons leveled baking powder

Instructions:

  • Preheat the oven to 180C.
  • Grease the cups of your muffin or cupcake pan.
  • Take a bowl , mix shredded chicken with tikka masala , yogurt ,salt n pepper , lemon juice. Set a side.
  • In a large bowl, sift/sieve the flour, then add all the dry ingredients (chicken mix , cheese, capsicum, onion, coriander, chilli, salt and pepper etc). Mix them together so they are evenly distributed in the flour.
  • In a spearate jug, add the three liquid ingredients (milk, butter and egg). Lightly whisk with a fork to combine. Now pour the liquid ingredients into the dry ingredients and stir until combined. Do NOT over-mix as this will make the muffins chewy.
  • Spoon the batter into the muffin cups and bake for 15 minutes or until skewer stuck in the center comes out clean.
  • Remove the pan and allow them to cool slightly.when cool pipe mashy frosting on muffins ,drizzle little bar b q sauce over them n serve ☺

MASH POTATO FROSTING

Ingredients:

  • 2 boiled potato
  • 1/2 cup milk
  • 1/2 tea spoon salt
  • 1/4 tea spoon black pepper
  • 1/4 tea spoon garlic paste
  • 2 table spoon mayonnaise

Mash potatoes, then mix all ingredients very well .make smooth frosting .then fill in piping bag with open star tip .
Frost your muffins .drizzle bar.b.q sauce over and serve 😊

tawa-pizza-mI have posted Whole Wheat pizza in pan, a long time ago. Today i am posting a pizza recipe which you can make on Tawa or pan. Follow step by step procedure. A quick recipe with delicious taste.

STOVE TOP WHOLE WHEAT PIZZA

INGREDIENTS:

Pizza doughas needed
Pizza Sauceas needed
Pizza cheeseas needed
Chicken tikka chunksas needed
Vegetables, capsicum, onion, tomatoesas needed
Oilfor greasing

METHOD:

  • Marinate chicken in chicken tikka masala for an hour. Cook and set aside. You can check the recipe of chicken filling here if you do not want ready made masala: CHICKEN FILLING FOR PIZZA.

  • I have used Ready made Pizza sauce but if you want to use Home made Pizza sauce than chick the recipe here: Home made Pizza Sauce.
  • Take a Pan and grease it , roll pizza dough of pan size.

  • Place rolled dough on pan and cook for 5 minutes, you will see small bubbles on the surface.

  • Remove from stove when firm.

  • Place it back in pan keeping cooked side up.

  • Spread chicken and vegetables.

  • Cover the lid of pan with Aluminum foil. Your Pizza will not become soggy with this Aluminum cover.

  • Cook for 10 minutes on very low flame.

  • Cheese will melt. Remove from pan and serve.

  • If you want to make on Tawa than you just need to follow the same steps.
  • Keep the pizza pan on Tawa and cover with the lid, or  place pizza crust directly on Tawa and cook on very low flame.

INGREDIENTS FOR PIZZA DOUGH:

Plain flour500 g
Icing sugar50 g
Salt7 g
Yeast10 g
Oil50 g
Eggs2
Wateras needed, for kneading

METHOD:

    • Add all dry ingredients in a bowl and mix well, now add oil, eggs and water. Knead well.
    • You can use butter as well instead of oil.
    • Place on a flat surface and knead it with your palm.
    • Divide dough in 3 portions and leave it for 15-20 minutes.
    • Now dust the surface and roll the dough. Press all sides with your finger tips and place on baking tray and place on a warm place for proofing.
    • Half bake it for 6-7 minutes at 180c.
    • Now ready for further process.
    • For parties you can half bake pizza crust and keep in zip lock bags. Freeze it, when needed just thaw and use.

INGREDIENTS FOR PIZZA SAUCE:

Tomatoes500 g
Butter30 g
Salt7 g
Black pepper1/4 tsp
Sugar25 g
Lemon juice20 g
Oregano1/4 tsp

METHOD:

  • Grind tomatoes and add all ingredients in it.
  • Cook till become thick.
  • Set aside.

Garlic paste20 g

METHOD:

  • Mix all spices and cut chicken in cubes and add in spices.
  • Cook till tender.

  • Spread pizza sauce on half baked pizza.
  • Spread chicken, capsicum, tomatoes, olives, onion and cheese.
  • Sprinkle oregano and bake at 180c for 10 minutes approx.

chocolate-biscuits-mBakery biscuits are very famous and my readers requested me to share my tried recipe. I am sharing video and recipe of chef Arshad Ghafor. As usual well explained and inshAallah will come up with an awesome result.

INGREDIENTS:

Butter250 g
Icing sugar100 g
Flour350 g
Condensed milk50 g
Milk powder50 g
Eggs2
Vanilla essence1 tsp
Cocoa powder2 tbsp
Melted chocolate1/2 cup

METHOD:

  • Preheat oven at 150C.
  • Add all ingredients in a bowl and beat on low speed first, let all ingredients mix and than increase the speed.
  • It will take 2 minutes. Now keep dough in refrigerator f0r 10-15 min.
  • Now fill in pipping bag and drop on baking tray.
  • Dip a small spoon in flour and press cookie down from center. In the center fill in any jam for jam biscuits.
  • Bake them at 180c for 10-15 minutes.
  • If you want to make chocolate biscuits, you just need to add cocoa powder 80 g and reduce flour 80 g.
  • Melt chocolate and place a small drop on baked biscuit. I have used Nutella.
  • You can prepare Icing for chocolate biscuits as well. Icing sugar 100g, cocoa powder, 30 g and water 30 ml, mix all well and use as chocolate biscuit icing.

Cow cream cheese, triangle shape200 g

Chocolate Ganacheas needed

METHOD:

  • Preheat Oven at 150 C
  • Mix all dry ingredients and set aside.
  • In a bowl add eggs, sugar and oil. Beat well till fluffy now add yogurt and mix.
  • Now add essence and flour mixture. Fold with spatula.
  • Pour in pan and bake at 180c till done.
  • Let it cool completely and divide in three parts.
  • Soak with sugar syrup and prepare cream filling.
  • In a bowl add cow cream cheese, icing sugar and butter, beat on slow speed till creamy.
  • Add nutella chocolate and mix with spatula.
  • Now spread this mixture on each half and in the end spread Ganache on top of the cake.
  • Garnish with Chocolate curls and serve.

  • Melt chocolate, do not add any thing in chocolate.
  • Use double boiler to melt chocolate.
  • Follow instruction as shown in video.
