INGREDIENTS:

Apples2-3
Chicken, boiled and shred1/2 cup
Cabbage1/4 cup
Carrot, grated1
Capsicum, chopped1 small
Dried craneberries1 tbsp
Cream cheese2 tbsp
Mayonaise1/2 cup
White pepper1/4 tsp
Black pepper1/2 tsp
Saltto taste
Oliveas needed
Red chili flakes as needed

METHOD:

  • Cut all vegetables and mix all other ingredients in it.
  • Keep it in refrigerator.
  •  Just before serving cut apple slices and place  spoonful salad on slice and serve.
  • You can dip apples in lemon water to avoid browning of slices. Instead of mayonnaise use yogurt if you like.

14 August themed ‘Rich Fruit salad’ It can be served as both salad and dessert. For serving it as dessert simply add 2 more table spoons of caster sugar!

Ingredients:

Cream 1 cup

Mayonnaise 1 cup

Green Grapes 1 cup

Pineapples cut in small cubes 1 cup

Pears/apples cut in small cubes 1 cup

Banana 1 medium

Pistachio ¼ cup Salt a pinch

Castor sugar 4 tsp

Black pepper ½ tsp

Banana Jelly 1 packet

Gelatin 1 tsp dissolved in ¼ cup of water

Method:

• Prepare jelly with one cup of water. Pour in a mold of any shape. Let it cool.

• Mix rest of all ingredients.

• Now dissolve gelatin in ¼ cup of water and mix well. Put in microwave oven for 20 sec or boil it in a small saucepan. As soon as you see small bubbles turn off the flame and let it cool slightly.

• Add the gelatin mixture in the salad and mix well

• Taking one table spoon of the fruit salad at a time add over the jelly layer in the pan and let it set for 2-3 hours.

• For serving place the mold over boiling water in a pan for 10 sec. invert the mold and serve cold.

PAN ROASTED CORNS

INGREDIENTS:

Corns (tin) or use fresh and boiled corns500 gms
Black pepper1 tsp
Saltto taste
Red chili powder1 tsp
Oregano1/2 tsp
Butter2 tbsp

METHOD:

  • In a pan add butter and corns. Fry them till light brown.
  • Add all spices and stir.
  • You can squeeze one lemon juice also. I have added sliced onion and tomatoes which is optional.

CUCUMBER FETA ROLLS

cuc mIts not a difficult job to start developing healthy eating habits. Include 2 cups of veggies and 2 cups of fruit for a day. Include vegetable, fruits, whole grain, beans, peas, lentils in your daily diet and limit highly processed foods.

INGREDIENTS:

cucumber 1
Feta cheese or cottage3 oz
Capsicum and carrot, thinly cut2 tbsp
Olives, chopped2-3
Fresh parsley1 tsp
Lemon juice1 tsp
Black peppera fat pinch

METHOD:

  • Slice cucumber length wise with a vegetable  peeler.
  • In a bowl mix yogurt (2 tbsp) and cheese together with a fork. Mix all other ingredients. ( I have added cabbage too)
  • Place a spoonful of mixture on one side of cucumber and roll it.
  • Secure with toothpick .

Black eyed beans1/2 cup

  • Boil beans.

A recipe of best seasonal salad i am sharing with you today . I like the sweet and sour taste of oranges along with freshly ground black pepper and tangy flavor of lemon..wow…amazing….:)

INGREDIENTS:

Sugar1/2 tsp
Freshly ground black pepper1/2 tsp
Garlic clove (minced)1 small
Iceberg lettuce3-4 leaves
Lettuce leaves4-5
Tomato (cubed)1

Orange(sliced)1 big

METHOD:

  • Mix all vegetables in a large bowl.In a small bowl mix ingredients of dressing and and mix well ,toss it with vegetables and orange.
  • Serve immediately.

ORANGE FLUFF JELLY SALAD
This salad is a very refreshing and tasty choice for your coming party. Combination of fruits and jelly will attract everyone.

INGREDIENTS:

Vanilla instant pudding mix1 packet
Cream 1 packet/1 cup
Fruits(pineapple,apple,bananas,oranges,strawberries)as needed
Orange jelly1 packet

METHOD:

  • Make pudding according to the direction given on box, pour in a bowl and keep in refrigerator till hard.
  • Now beat pudding with a whisk until soft and smooth in texture.You can add sugar on this stage according to your taste .I have not mentioned in my ingredient’s list but if you want to add then feel free to add icing sugar in it.Even you can add prepared jelly(in liquid form) in pudding and mix well.
  • Mix whipped cream and all fruits ,fold .
  • Decorate with orange jelly and keep this in refrigerator for 1 hour  before serving.
  • Enjoy this simple but delicious salad .Even this can be your dessert as well.

INGREDIENTS:

No measurement required, quantities are up to your choice.

Boiled Peas as desired
Boiled Carrot (cubes) as desired
Boiled Potatoes (cubes) as desired
Capsicum as desired
Cabbage as desired
Pineapple (cubes) as desired
Cream as desired
Mayonnaise 1 tbsp
Salt as desired
White Pepper as desired
Black Pepper as desired

METHOD:

  • Add all ingredients in a large bowl and mix well.
  • Keep in a cool place, serve chilled.

PIZZA HUT – SPECIAL SALAD

Its very close to the real one and very easy to make, in Pakistan you can see this salad in every wedding menu… So you can say its very common in wedding ceremonies too.

Ingredients:

Cabbage (shredded) 1/4 cup
Carrot (diced) 1/2 cup
Cucumber (diced) 1-2
Capsicum (diced) 1
Apple (diced) 1
Mayonnaise 1 cup
Grinded Sugar 2 tbsp

METHOD:

Mix all ingredients well and chill it. Now ready to serve.

COKTAIL CREAM SALAD


A good choice with BBQ. I personally like to make it with grill and BBQ food. The smell of apple and taste of pineapple is divine…

Macaroni (boiled) – small size 1cup
Fruit Cocktail Tin 1
Cream 1 pack
Mayonnaise 2 tbsp
Sugar 2 tbsp

METHOD:

  • Mix all ingredients in a large bowl.
  • Keep in refrigerator for a while and serve chilled.

RED BEANS AND MIX VEGETABLES SALAD

This recipe is a copycat of Tehzeeb bakery’s red bean salad. If you are living in Islamabad then you must be familiar with the name of this bakery. Tehzeeb’s salad bar is really awesome.

INGREDIENTS:

Red Beans 1 cup
Cucumber 1/2 cup
Mushrooms (sliced) 1/2 cup
Onion (small cubed) 1/4 cup
Capsicum (small cubed) 1/2 cup
Sweet Corns 1/2 cup
Broccoli (finely chopped) 1/4 cup

FOR DRESSING:

olive oil 1/4 cup
black pepper as desired
salt as desired
white pepper as desired

METHOD:

  • Mix all dressing ingredients well.
  • Mix all vegetables in a large bowl and pour dressing on top, toss it well and serve.

CHICKEN AND POTATO SALAD

This is my most favorite salad recipe. I like to serve this with grilled food. I made this salad recipe for the first time when i was a girl under training 🙂

INGREDIENTS:

Potatoes (boiled cubes) 2 medium
Chicken (boiled cubes) 1 cup
Egg (boiled cubes) 2 cubes
Cabbage (finely shred) 1/2 cup
Mayonnaise (heaped) 2 tbsp
Cream 1/2 pack
Salt 1/2 tsp
Sugar 1/2 tsp
Black Pepper 1 tsp

METHOD:

  • Add cream, mayo, salt, pepper and sugar in a bowl and mix well.
  • Then start adding all other ingredients and mix all well.
  • Keep in fridge and serve chilled.

KFC – POTATO SALAD

Without salads, pizza treat is in complete ,this salad is close to original  and this is in my special  menu list . But one ingredient i.e celery is very difficult to find in our country ..Instead of celery i normally use coriander .

Ingredients :

2 cups                   boiled n diced potatoes

1 cup                     mayonnaise

4 teaspoons            sugar

2 teaspoons            minced onion

2 teaspoons            prepared mustard

1 teaspoon             vinegar

1 teaspoon               minced celery

1/2 teaspoon shredded carrot

1/4 teaspoon dried parsley

1/4 teaspoon     black pepper

Salt  to taste

 

METHOD:

Peel the potatoes and cut into small sized pieces. Cook the potatoes in a pot of salted boiling water for 5 to 10 minutes until tender. Cool.

Combine all other ingredients in a bowl and mix well.

Add the sauce to the potatoes and mix well. Refrigerate for at least 2 hours. Best is if you allow to refrigerate overnight.
