BOHRA MALPUA/ MALFUA

Malfua or Malpua are basically a version of pancakes but in Bohri style. I have experienced a lot of Bohri recipes back in Karachi, where people from Bohra community is living In huge number. I am fortunate enough that one of a very experienced and dedicated lady Zeenat Iqbal Hakemji shared her recipe with me, she is a seasoned cook and a housewife. INGREDIENTS:

Semolina/ suji1/2 cup
Plain Flour or Wheat flour (atta) 1 cup
Sugarto taste
Egg1
Water/ milkto soak ingredients
Cream and nutsfor garnish

METHOD:

  • Soak semolina, flour and sugar. Keep them overnight. You can just soak them for 15 minutes if you want to make quick Malfua.
  • In the morning add egg and beat well.
  • You can adjust consistency of batter by adding water or milk.
  • Consistency should be thick.
  • Spread a ladle full of batter on preheated and greased pan.
  • Let it cook for few minutes and than turn the side.
  • Serve hot with cream or honey and nuts.

PIZZA PARATHA

pizza paratha.mPizza paratha is a desi style snack, meal or brunch. In Pakistan it is very famous. My son’s always ask me to make pizza parathas for school lunch.

INGREDIENTS:

Flour2 cups
Salt1/2 tsp
Chicken boneless1 cup
Chicken tikka masala2 tbsp
Capsicum1 chopped
Onion 1 small chopped
Olives6-7 chopped
Mushrooms3, chopped
Pizza sauce2 tbsp
Mozzarella cheese1/2 cup , shred it.
Oilfor frying

METHOD:

  • Add salt in flour and knead with water, make soft dough.
  • Marinate chicken in Tikka masala (take any brand)  for 1/2 hour and cook in 1 tbsp oil till tender.
  • In a bowl add onion, capsicum, olives, mushrooms, shredded chicken, pizza sauce and mozzarella cheese. Mix well.
  • divide dough. Make balls. Take two balls and roll them.
  • On one flat bread spread  chicken mixture.
  • Cover with second flat bread.
  • Roll it carefully and fry using less amount of oil.
  • Fry from both sides and serve with ketchup.

PANCAKE MPancakes are easy to make. You can serve them with any topping or fruit or even with nuts. I adopted this recipe from Martha Stewert’s website. In Pakistan these pancakes are called  Chella in villages. They use shakar instead of sugar. I will share Chillas recipe with you too. Desi pancakes are as good as Western Pancakes 🙂

INGREDIENTS:

  • Flour                       1 cup leveled
  • Egg                          1
  • Baking powder     2 tsp
  • Milk                        1 cup
  • Salt                          1/2 tsp
  • Butter                     2 tbsp
  • Vanilla essence     1 tsp
  • Oil                            for greasing pan
  • Topping of your choice

 

METHOD:

  • In a bowl add flour and baking powder. Stir with whisk.
  • Now warm milk in microwave or on stove and dissolve sugar in it.
  • Melt butter and add in flour.
  • Add egg, vanilla, salt, and milk half quantity in flour, stir with whisk. Add more milk if required.
  • Beat until dropping constancy obtained.
  • Heat pan spray oil. Spread ladle full mixture on pan and let it cook from one side then turn its side and cook till nice golden color appear.

  • Prepare all pan cakes and serve with any topping like Maple syrup, Honey, Caramel, Chocolate topping or butter.

BANANA OATS PANCAKES

PANCAKES MFew ingredients Gluten free recipe for my readers today, dieters and health conscious people must try this out. This recipe i have adopted from a website: Simply Delicious.

INGREDIENTS: 

  • Bananas                           2
  • Eggs                                  2
  • Rolled oats                      1/2  cup
  • Baking powder               1/2 tsp
  • Maple syrup or honey   as needed
  • Nuts                                  as needed

METHOD:

  • In a blender add all ingredients, except nuts and maple syrup, blend well.
  • Heat up pan and brush oil. You can cook without oil in non stick pan too. I have sprayed oil on pan.
  • Spread spoon full of mixture on pan and fry till light brown from both sides.
  • Serve hot.
  • Before serving drizzle Maple syrup and nuts on top.

  • Garnish with strawberries or any other fruit.

 

  • Enjoy fluffy and soft pancakes.

KHAGINA MThis recipe is very different, easy and quick to make. You can freeze cooked tikka chunks and use when you want to make this khagina.

INGREDIENTS:

  • Eggs         3
  • Chicken   1 cup (marinate it with Chicken tikka masala)
  • Potatoes   1 medium size
  • Tomato     1 medium size, chopped
  • Onion        1 small ,chopped
  • Oil              1/4 cup
  • Salt             to taste
  • Red chili powder  1 tsp
  • Red chili flakes     1/2 tsp
  • Turmeric powder  1/2 tsp
  • Green chilies         2-3, chopped
  • Coriander leaves   2 tbsp., chopped

METHOD:

  • Check this recipe for chicken tikka. Add all ingredients in chicken and marinate for 1 hour.

CHICKEN TIKKA

  • Now in a pan add onion and saute it for few minutes till color change.
  • Add tomato (chopped) and thinly sliced potatoes, stir and add spices cook till tender. Now add chicken.
  • Cook on low flame till tender.
  • Add eggs and mix. Cook till oil separates.
  • Add coriander leaves and green chilies.
  • Ready to serve.

FRENCH ALMOND FRITTERS

almond fritters mThis recipe is very healthy and delicious. You can use pistachio along with almonds too. Crunchy and crispy Almonds and sweet bread you will defiantly like.

INGREDIENTS:

Bread slices4
Eggs2
Milk1/4 cup
Sugar3 tbsp
Vanilla essencefew drops
Almond flakesas needed

METHOD:

  • Beat eggs, milk and sugar. Add vanilla essence too.
  • Dip toast and sprinkle almond flakes on one side of toast and slide this side carefully in greased pan.
  • Fry on low flame till light brown.
  • Turn the side and fry again.
  • Cut in two and serve hot.

banana muffins mainBanana muffins are irresistibly delicious.Light and fluffy muffins can be your first choice in cake craving. Homemade caramel sauce will enhance the taste of soft muffins.

INGREDIENTS FOR MUFFINS:

Bananas2 large
Butter1/2 cup
Flour2 cups
Egg1
Brown Sugar1 cup
Baking powder1 tsp
Baking soda1/2 tsp
Salt1/4 tsp
Vanilla essence1 tsp
Milk1/2 cup

METHOD:

BANANA MUFFINS 1
  • Peel bananas and cut in slices, mash them with fork. Now put them in microwave safe bowl and add butter also. (you can do this process on stove also but do not cook just melt and mix bananas and butter)
  • Microwave for 10 seconds and mix butter and mashed bananas with fork or masher. Make a smooth mixture.
  • Add eggs in banana mixture and beat ,now add sugar  and beat . do not over beat.
  • Now add vanilla essence, salt ,flour , baking powder, soda and milk. Mix and pour in muffin cups .
  • Bake them at 180c for 25 minutes.
  • Let them cool completely and then pour caramel OR  try ” DOLCE DE LECHE”

Brown Sugar1/2 cup
Butter1/4 cup
Cream2 tsp
Powdered sugar1 cup

METHOD:

  • In a pan mix butter and brown sugar , cook till melt.Remove from stove.
  • Mix icing sugar and cream with whisk .
  • Pour on your muffins .

NUTELLA PALMIERS

nutella hearts mainThis recipe is a versatile recipe.Thou i have used Nutella as a filling but you can use any other filling.. for example jam , chicken and mayo ,mince etc.
If you have frozen puff pastry  available at your home then you can just make these in few minutes.Result of Palmiers from puff pastry is best but if you do not have it then make dough and bake these..:)

INGREDIENTS:

Puff pastry / Doughas needed
Nutella/ Chocolate spreadas needed

METHOD:

  • Roll puff pastry or dough, For recipe of dough open this link: DOUGH.
  • Spread Nutella, you can spread nuts also and roll dough from both sides.
  • Cut in pieces and bake at 180c for 20-25 minutes.

French toast is known in France as “pain perdu”, which translates to “lost bread,” because it makes delicious use of leftover bread. Once you’ve mastered the basic French toast recipe, a range of possibilities opens up. A lot of variations you can do . French Toast is one of those things I never ever used a recipe for….lol
This recipe is also one of my experimental recipe for kids. Make your sweet bread a tempting treat for your young ones. Even you can also enjoy anytime….:)

INGREDIENTS:

Egg1 nos
Milk2 tbsp
Sugar2 tbsp
Mixed nuts roughly choppedas needed
Nutella or any chocolate spreadas needed
Bread slices4 nos
Oilfor frying

METHOD:

  • Beat egg and sugar ,add milk and beat again.Set a side.
  • Cut any shape from cutter or you can cut after frying also.
  • Spread nutella or any chocolate spread on one slice and spread nuts on it.
  • Cover with other slice and dip carefully in batter and fry.
  • I cut smiling face after frying.
  • Enjoy different shapes and styles…:)

POORI WITH ALOO BHAJI AND CHANA GRVEY
Pooris are considered  as a very delicious and famous breakfast in Pakistan. Those living in Karachi must be familiar with the name of Dilpasand and Nasir sweets, one of very popular poori makers in Karachi. I can’t forget the taste of those poories ever but here is the recipe of home made poories and gravy.

POORI INGREDIENTS:

Plain flour 1 cup
Wheat flour 1 cup
Salt 1 tsp
Water for kneading
Oil for frying

METHOD:

  • Mix flours and salt, knead with water but keep in your mind this should not be hard or soft like we are make for chappatis.
  • Now start making pooris. Make small balls of dough and roll them all to make small pooris. Size may vary (up to your choice) I usually make pooris of small size.
  • Dust them with flour and pile up in a plate.
  • Now heat up oil. The temperature is very important factor in poori making. Drop a small piece of poori in oil if sizzles and comes up to the surface immediately, it means temperature is perfect and if piece of poori becomes dark brown then you should reduce the heat a little.
  • Slide one poori in oil let it fry for few seconds then turn and with slicer press it from all sides, poori will puff up. Fry from both sides and place on paper towel. Now fry them all quickly.

ALOO BHAJI INGREDIENTS:

Potatos 3 medium size
Crushed Red Chili ½ tsp
Haldi Powder ½ tsp
Red Chili Powder ¼ tsp
Cumin Deeds ½ tsp
Coriander Seeds ½ tsp
Onion Seeds / Kalonji ¼ tsp
Salt to taste
Fresh Coriander few leaves
Green Chili 1 medium

METHOD:

  • Cut potatoes in slices and add all ingredients except onion seeds and coriander leaves.
  • Add little amount of water ( 1 cup).
  • Cook on low flame till potatoes are tender and soft.
  • Add onion seeds and stir well.
  • In the end add coriander leaves and green chili.
  • Bhaji should be thick without too much gravy.

CHANA GRAVY INGREDIENTS:

Chickpeas(boiled) 1 cup
Onion (thinly sliced) 1 small
Ginger Garlic Paste ½ tsp
Salt to taste
Red Chili Powder 1 tsp
Crushed Red Chili ¼ tsp
Coriander Powder ¼ tsp
Haldi Powder ¼ tsp
Garam Masala Powder ½ tsp
Green Chili as desired
Coriander Leaves few leaves
Oil ¼ cup

METHOD:

  • In a pan add oil and onions. Fry till golden brown.
  • At this point add ginger garlic paste, fry and add all spices.
  • Stir fry for few minutes then add chickpeas and little amount of water.
  • Cook on low flame till well cooked.
  • In the end add coriander leaves and chili.

(you can add raw chickpeas in fried masala and then add water, let them cook till chickpea are soft. You can make chana gravy at night if you are planning to serve in breakfast)

SUJI KA HALWA INGREDIENTS:

Suji 1 cup
Sugar ¾ cup
Desi Ghee / Normal ghee 3 tbsp heap
Illaichi 3
Water 1 ½ cup
Yellow food color – optional
(dissolve in 2 tbsp water)

METHOD:

  • In a deep pan pour ghee  (I have used desi ghee because of the aroma and flavor of desi ghee is very tempting to me).
  • Now add illaichi, let it crackle for a second then add suji.
  • On low flame fry it till light golden color appears.
  • Now add sugar in the pan and immediately add water and stir vigorously to avoid lumps formation. If you want to add food color then add at this stage and mix well.
  • As soon as ghee separates add nuts and serve hot.

CRUNCHY FRENCH TOAST


If you want to have something different other than basic french toasts then you should try this recipe and give french toast recipe a twist. This is very healthy breakfast for kids and if your kids are  chocolate lover like mine then coat chocolate cornflakes and fry.

INGREDIENTS:

Bread Slices 2
Eggs 1
Milk 1/4 cup
Sugar as desired
Kellogg’s Almond Cornflakes (crush them with hand) 1/2 cup
Cinnamon Powder pinch

METHOD:

  • Add egg, milk, sugar and cinnamon powder in a bowl and beat till sugar dissolves.
  • Now coat bread with egg mixture and then coat one side with corn flacks and fry them in oil but flakes side needs to be fried first
  • Fry on medium to low flame to get that crunchy effect… serve hot.
