MINCE STUFFED CUTLETS

INGREDIENTS:

  • Boiled and mashed Potatoes    4 large
  • Salt                                                  to tatse
  • Red chili powder                          1 tsp
  • All spice powder                           1/2 tsp
  • Green chilies and coriander chopped  2 tbsp. each
  • Chicken or beef mince                 1 cup
  • Oil                                                     2 tbsp.
  • Onion                                               1 small chopped
  • Ginger garlic paste                        1 tsp
  • Salt                                                   to taste
  • Red chili powder                           1/2 tsp
  • Crushed red chilies                       1/2 tsp
  • Coriander and green chili chopped   2 tbsp.
  • Egg                                                    1, beaten
  • Bread Crumbs                                 as needed

METHOD:

  • Mash potatoes and add salt, red chili powder, all spice powder, green chilies chopped and coriander leaves. Mash well and set aside.
  • In a pan add oil and onion, sauté for few minutes and add ginger garlic paste, stir and add mince.
  • Add all spices and stir.
  • Now add 2 tbsp water and cover the lid till water dries.
  • Add coriander and green chilies. Mix and let it cool down.
  • Make Patti of potato and spread mince on it cover with another potato Patti.
  • Seal ends of Patti with your hands.
  • Dip in egg and roll in crumbs.
  • Shallow fry till light golden.
  • Serve with ketchup.

MUG HANGING PUFF

mug hanger mI have tried these first time. Basically hanging puffs are inspired by Mug hanging cookies. You can bake cookies instead of puffs. Bake in different shapes to inspire your kids. I am sure they will love drinking their chocolate milk or hot cocoa with these mug hangers.

INGREDIENTS:

Puff pastryas needed
Icing sugar toppingas needed

METHOD:

  • Thaw puff pastry and dust your working place.
  • Roll puff pastry. Cut different shapes, cut a thin rectangle on one side of puff shape and place on baking tray.
  • Bake till done.
  • Let them cool down and spread icing sugar topping.

  • Make icing sugar topping by adding 1/2 cup icing sugar, 1 tsp water and food color. Mix well and spread on puffs.

FRENCH ALMOND FRITTERS

almond fritters mThis recipe is very healthy and delicious. You can use pistachio along with almonds too. Crunchy and crispy Almonds and sweet bread you will defiantly like.

INGREDIENTS:

Bread slices4
Eggs2
Milk1/4 cup
Sugar3 tbsp
Vanilla essencefew drops
Almond flakesas needed

METHOD:

  • Beat eggs, milk and sugar. Add vanilla essence too.
  • Dip toast and sprinkle almond flakes on one side of toast and slide this side carefully in greased pan.
  • Fry on low flame till light brown.
  • Turn the side and fry again.
  • Cut in two and serve hot.

ROASTED BABY POTATOES

BABY POTATOES MMy mother was making roasted potatoes with this simple recipe. Serve these with chicken roast or any other roast. Try is must.

INGREDIENTS:

Baby potatoes1/2 kg
Saltas needed
Black pepperas needed
Oil2 tbsp

METHOD:

  • Wash potatoes and boil them in water till soft.
  • You can remove the skin or fry with skin.
  • In 2 tbsp. oil add baby potatoes and sprinkle salt. Fry on medium flame till nice brown color appear.
  • Sprinkle black pepper and serve hot.

INGREDIENTS:

Pizza doughas needed
Pizza sauceas needed
Chicken tikka fillingas needed
Cheeseas needed
Capsicum , onion in cubesas needed
Mushrooms and olivesas needed

METHOD:

  • Grease cups or if you don’t have silicon cups then back side of muffin tray .

  • Bake them till cook.

  • Remove carefully and set aside.
  • Prepare Chicken tikka filling. In filling I have added chopped olives, mushrooms and cabbage also. For recipe you can open the link: CHICKEN TIKKA PIZZA.

  • Spread pizza sauce or chili garlic sauce and then filling. Top with cheese.

  • I have used cheese slices but shredded cheese will give a beautiful look 🙂 so use shredded cheese.
  • Bake it at 180c till cheese melt.
  • Serve hot.

FOCKI BUNS

focacia buns mThis recipe you can make on any occasion. Very easy and delicious. Filling you can use in any other recipe of buns or bread, this filling is different from my other fillings recipe.

INGREDIENTS:

Pizza doughas needed
Chicken boiled and shredded1 cup
Cabbage shredded1/2 cup
Carrot shredded1/2 cup
Capsicum 1/2 cup
Garlic cloves3 chopped
Soya sauce2 tbsp
Vinegar2 tbsp
Slatto taste
Black pepper1 tsp
Chinese salt1/2 tsp
Oil1/4 cup

METHOD:

  • Leave the dough for 2 hours and then prepare filling.
  • In oil add garlic and sauté add all ingredients and cook on high flame.
  • Let it cool down and then divide dough in equal parts.
  • Roll one part and place filling then seal the edges.
  • With kitchen knife start cutting from one side. Do not cut deeply. Prepare all.
  • Brush egg on top and bake at 180c till done.

crispy sandwich mThis recipe I saw in a food group and attracted by cheesy top. After trying these crispy sandwiches I found them delicious and kids friendly. You can serve them in Iftar, evening teas or give these in kid’s lunch boxes.

INGREDIENTS:

Chicken1 breast

Ginger garlic paste1/2 tsp
Boiled Egg1
Ketchup3 tbsp
Mayonnaise1 tbsp

METHOD:

  • Boil chicken with 1/2 cup water , ginger garlic paste and salt.
  • Let boiled chcken breast cool slightly then wrap in cling sheet and pound this chicken breast with kitchen hammer or any heavy thing.
  • In a bowl add pounded chicken, boiled egg in small pieces, salt, black pepper, ketchup and mayonnaise.
  • Now cut bread slices with a round cutter or any glass.
  • In another bowl beat eggs, corn flour, flour and milk.
  • Take crushed cornflakes in a plate.
  • Arrange all near you ,now mix chicken mixture and spread on one slice with spoon. Spread evenly. Place another slice on it.
  • Dip in egg mixture and then coat cornflakes.
  • Fry in oil and place on paper towel.
  • Now either take cheese slice or shred cheese and place capsicum and tomato on it .
  • Bake them in oven at 180c till cheese melt.
  • Serve with any sauce.

METHOD:

  • Peel skin of peaches and remove seeds.
  • Add peaches, orange juice, lemon juice , sugar and salt in blender and blend.
  • Pour in molds and freeze till well set.

INGREDIENTS:

Chicken1 cup ,cut in small cubes
Oil2 tbsp
Garlic1 large
Soya sauce1 tbsp

Red chili flakes1 tsp
Black pepper1 tsp
Cheese, of your choiceas needed
Pepperoni (optional)as needed

Egg1 ,for brushing

METHOD:

  • Prepare Dough from this recipe : PIZZA DOUGH.
  • In 2 tbsp oil add garlic minced and fry for few seconds, add chicken and fry till color change now add salt, black pepper, soya sauce, red chili flakes and vegetables.(capsicum, carrot, onion thinly chopped-as needed)
  • Stir for 2 minutes and remove from flame. Let it cool down completely.
  • Now roll dough and cut small triangles. Arrange them side wise in circle. Now place chicken , pepperoni and boiled egg slices. Spread cheese and cover this filling by pointed end of triangle
  • Press all edges down to form a ring shape.
  • Brush egg on surface and sprinkle sesame seeds.
  • Bake at 180c till nice brown color appear.

chicken cheese balls mTempting….delicious…crispy outside…melting cheese inside….woooow. I am sure you will second me when you try this at your home for your family. I am grateful to my very old Facebook Friend, Amber Saleem whose recipe i have tried and my family loved it.

INGREDIENTS:

Chicken 500 gms
Soya sauce4 tsp
Red chili sauce4 tsp
Saltto taste
Bread slices2
Black pepper1 tsp
Green chillies4
Eggbeaten, half for chicken.
Eggbeaten for coating 1
Bread crumbsas needed
Plain flour2 tsp
Corn flour2 tsp
Mozzarella or cheddar cheese cubesas needed
Oil for frying

METHOD:

  • In a pan add chicken, soya sauce , Chili sauce and salt. Cook till tender and dry.
  • In a bowl soak bread slices in water and then squeeze water with hands .
  • Add bread slices, chicken, green chilies and black pepper in this mixture and blend.
  • Dough will form then add half egg in this mixture and mix well.
  • Cut small cubes of cheese and keep in freezer for few minutes.
  • Make a small flat circle/ Patti and place one cheese cube in it.
  • Cover this cubes completely with chicken mixture.
  • Make all balls.
  • Place bread crumbs in a plate, mix corn flour and plain flour in a separate bowl and beat egg, roll balls in egg then in flours and then in  crumbs. Coat them completely. you can freeze these balls on this stage in a ziplock bag.
  • Fry on medium flame and serve immediately with any sauce.

HAKKA NOODLES

h n mI consider Hakka Noodles as a desi style Noodles. This is chef Zakir’s recipe and like all other recipes this is also a super hit recipe of him.

INGREDIENTS:

Chicken boneless in cubes1 cup
Capsicum1 medium size
Cabbage1 cup
Saltto taste
Red chilli flakes1 tsp
Oyster sauce1 tbsp
Chilli garlic sauce3 tbsp
Ketchup3 tbsp
Worcestershire sauce 1 tbsp
Soya sauce1 tbsp
Garlic clove minced2 large
Oil1/4 cup
Egg noodles or spaghetti 1 packet
Spring onion3 tbsp

METHOD:

  • Boil noodles/ spaghetti and set aside.
  • Cut all vegetables  and chicken in cubes. Set aside.
  • In a deep pan add oil and garlic mince, saute it for few seconds then add chicken cubes and stir it. Cook till tender.
  • Now add all sauces and spices, stir and add vegetables. Mix well.
  • Add boiled noodles and Mix well.
  • Sprinkle spring onion and mix.
  • Serve hot.

PIZZA MThis is a quick and jhat pat recipe of pizza, if your kids are asking for pizza and you have no time to make dough from yeast then try this recipe, I am sure you will love it. A perfect lunch box and evening snack for all age groups.

INGREDIENTS:

Flour8 oz
Baking powder2 tsp
Salt1/4 tsp
Butter2 and 1/2 oz
Milkfor kneading dough.
Chicken bone less in cubes1/2 kg
Cream3 tbsp
Milk1/4 cup
Butter/ ghee2 tbsp
Cheddar cheese1/4 cup grated
Saltto taste
All spice powder1/2 tsp
Black pepper1 tsp
Lemon juice1 tsp
Cumin powder1/4 tsp
Red chilli flakes1/2 tsp (optional)
Papaya paste1 tsp (optional)
Pizza sauceas needed (for spreading on pizza base)
Cheesesprinkle on top
Vegetables( capsicum, onion and tomato) cubedas needed

METHOD:

  • Mix all ingredients in flour and knead with milk. Set aside and prepare topping.
  • You can store this prepared dough in refrigerator for 3 days.
  • Marinate chicken in spices mentioned above and leave it for 3-4 hour .
  • Bake it at 180c till done or cook in a pan by adding 1 tbsp oil in pan.
  • You can store in freezer  also after cooking tikkas.

ASSEMBLING OF PIZZA:
Now roll the dough and cut circles of your choice .
Place in baking tray and spread pizza sauce or chilli garlic sauce then cooked malai tikka.
Now add vegetables (tomato and capsicum in small cubes.)
Sprinkle shredded cheese , olives and oregano.
Bake at 180c till cheese melt and bread well cooked.
Serve hot with ketchup.
Enjoy easy peasy Pizza in few minutes.

ST C MMy son Ali love chocolate covered strawberries and always ask me to use sprinkles for decorating them 🙂

You just need to melt chocolate and dip strawberries in chocolate, roll them in sprinkles and place on butter paper, let them set.

PC MMy mother was an innovative and creative home cook. I have very fond memories of the different things she would concoct to feed us.I used to love those as a child.There are so many interesting and delicious meals which I’ve enjoyed, and still make today, simply because they are delicious 🙂
This stuffed pancake recipe is taught by cooking expert Kokab Khuaja. I was a kid when my mother first time tried it and the taste i still can feel. I will write variations here. All are finger licking delicious.
Pancakes are perfect base for so many different fillings. Try with variations. From sweet to savory….you will find them delicious 🙂

STUFFED PANCAKE -1

INGREDIENTS:

Eggs 4
Flour1 and 1/2 cup
Salt1/4 tsp
Chinese salt1/2 tsp
Water1 and 1/2 cup

METHOD:

  • Beat eggs and add water.Use whisk and again beat.

  • Add flour and mix. Add water till dropping consistency obtained. Now add salt and Chinese salt.
  • Leave this for few minutes and then heat up the pan.
  • Spray oil in pan or grease it with brush.
  • One ladle’s worth of batter is usually enough for perfect pan cake. Move the pan in circular motion your batter will take a perfect shape and cover all corners of pan.

  • After five minutes you will see corners will start turning up.

  • Do not overcook otherwise it will break during filling process.

  • Cover with cling wrap and refrigerate it. When you want to make take them out and fill. But for one week you can refrigerate.

INGREDIENTS:

Water1/2 cup
Milk1/2 cup
Salt1/4 tsp
Chinese salt1/2 tsp

METHOD:

  • Mix all ingredients and with whisk beat them.
  • Now batter is ready to cook.
  • Make pancakes as i have mentioned above. These are crispy pancakes.

FILLING:

INGREDIENTS:

Mince (Chicken/ beef/ Fish)1 cup
Saltto taste
Ginger garlic paste1/2 tsp
Crushed black pepper1/2 tsp
Soya sauce2 tbsp
Cabbage 2 cup thinly sliced
Carrots2 thinly cut
Peas1/4 cup

METHOD:

  • In a pot add mince, salt and ginger garlic paste. Add 1 cup water and cook till water dries. Add crushed black pepper and soya sauce. Mix well.
  • Add thinly chopped vegetables and cook on high heat.
  • Set a side .
  • Now place filling on one side of pancake and roll it, use flour paste to seal edges. I normally use toothpicks to close the edges.
  • Fry in oil or you cake bake them also.
  • I usually fry them in less oil but you can deep fry them.
  • Pancake 1 you can freeze after filling .
  • But pancake 2 will crack so use them within 2-3 days time.
  • You can take chicken boneless and cook as mentioned above then shred it and add veggies. As i have used..:)

Eggs2 medium size
Sugar4 oz
Oil4tbsp
Orange juice4 tbsp
Baking powder2 tsp
Orange skin grated1 tbsp

METHOD:

  • In a large bowl add eggs and beat them with whisk, add oil an again mix.
  • Now Add orange juice, sugar, orange skin (grated) mix them.
  • Combine flour and baking powder and mix in egg mixture.
  • Knead it an cover with cling wrap an keep it in fridge.
  • Roll the dough and cut in doughnut shape and fry.
  • Dip each in honey syrup and serve immediately.
  • If not using honey syrup then make orange glaze and dip in it.

ORANGE GLAZE

  • Take 1 cup icing sugar ,add 2 drops of orange food color and 1 tbsp Orange juice.
  • Mix well and use.

HONEY SYRUP

  • In a pan add sugar 1 cup, water 1/2 cup and 1 tbsp lemon juice. Cook till sugar dissolve.
  • Mix in honey 1/2 cup , when become warm dip doughnuts in it and serve hot immediately.
  • Enjoy ORANGE DOUGHNUTS …:)
