PIZZA PARATHA

pizza paratha.mPizza paratha is a desi style snack, meal or brunch. In Pakistan it is very famous. My son’s always ask me to make pizza parathas for school lunch.

INGREDIENTS:

Flour2 cups
Salt1/2 tsp
Chicken boneless1 cup
Chicken tikka masala2 tbsp
Capsicum1 chopped
Onion 1 small chopped
Olives6-7 chopped
Mushrooms3, chopped
Pizza sauce2 tbsp
Mozzarella cheese1/2 cup , shred it.
Oilfor frying

METHOD:

  • Add salt in flour and knead with water, make soft dough.
  • Marinate chicken in Tikka masala (take any brand)  for 1/2 hour and cook in 1 tbsp oil till tender.
  • In a bowl add onion, capsicum, olives, mushrooms, shredded chicken, pizza sauce and mozzarella cheese. Mix well.
  • divide dough. Make balls. Take two balls and roll them.
  • On one flat bread spread  chicken mixture.
  • Cover with second flat bread.
  • Roll it carefully and fry using less amount of oil.
  • Fry from both sides and serve with ketchup.

INGREDIENTS FOR CHICKEN STRIPS:

Chicken strips1/2 kg, cut in thin strips
Oil1/4 cup
Soya sauce3 tbsp
Mustard paste/ paste1 tsp
Black pepper1 tsp
Salt1 tsp or to tatse
Red chili flakes1/2 tsp
Garlic chopped1 tbsp
Lemon Juice1 tbsp
Coriander chopped2 tbsp
Egg2-3
Corn flour1/4 cup
Flour1/2 cup
Bread crumbs2 cups
Sesame seeds1/4 cup
Oilfor frying

METHOD:

  • Make strips from fillet.
  • In a bowl add oil, soy sauce, mustard powder or paste, black pepper, salt, red chili flakes, garlic, lemon juice and fresh coriander chopped. Mix all ingredients.
  • Add chicken strips in this mixture and coat well.
  • Marinate it for 40-45 minutes.
  • In this mixture add flour, corn flour and egg.
  • Mix well to avoid lumps formation.
  • In a bowl mix sesame seeds and bread crumbs (use PANKO brand or any good quality brand for beautiful look)
  • Heat oil take a strip roll in crumbs, press one side and coat crumbs , turn the side and coat again.
  • Deep fry strips. Let it cook for few minutes do not use spoon for turning them. When one side cooked, turn the side and cook till light golden color appear.
  • Serve with Ranch dip.

INGREDIENTS FOR RANCH DIP:

Mayonnaise 1 cup
Cream 1/2 cup
Vinegar1 tbsp
Oregano1/2 tsp
Saltto taste
Black pepper1/4 tsp
Milk2 tbsp

METHOD:

  • Mix all ingredients and serve with chicken.

SANDWICH MAKER CAKE

sandwich-maker-cake-mEasy recipe which you can make in just 5 minutes. These yumlicious triangles, you can serve with many variations. Here i am posting about Nutella Filled Brownie triangles :). You can call them Pillow cakes too.

INGREDIENTS FOR BROWNIE CAKE:

Flour 1 cup
Castor sugar/ granulated sugar1/2 cup
Eggs2
Baking powder1/2 tsp
Cocoa powder1/4 cup
Vanilla essence1/2 tsp
Nutella 2 tbsp , extra for filling
Milk1/2 cup
Oil1/2 cup

METHOD:

  • Sift all dry ingredients and set aside.
  • In a bowl add eggs and sugar. Beat well and add vanilla and milk. Beat well.
  • Add dry ingredients in egg mixture and mix.
  • Add oil , beat. Mix nutella.
  • Preheat sandwich maker for  1-2 minutes. Now pour 2-3  tbsp mixture in each greased half.
  • Fill all four and close the lid.
  • Check after 3-4 minutes with toothpick. If not done, give 1-2 more minutes.
  • Let them cool down and cut from center. Fill Nutella inside and serve.
  • Wrap with cling sheet and give this to your kids in lunch box.

INGREDIENTS FOR CUSTARD CAKE:

Flour1/2 cup
Custard powder of any flavor2 tbsp
Baking Powder1 tsp
Butter1/4 cup
Egg1
Castor sugar1/4 cup
Vanilla essence1/4 tsp
Milk2 tbsp

METHOD:

  • Sift all dry ingredients. Set aside.
  • In a bowl beat butter and sugar till creamy. Now add egg and beat well.
  • Add vanilla essence and mix, Now start adding dry ingredients.
  • Add half quantity and mix, add milk and beat. Now add remaining half and beat.
  • Grease all halves of sandwich maker.
  • Preheat for 2-3 minutes and pour batter till each half fill.
  • Close the lid and bake for 3-4 minutes.

PIZZA CORNETTO

pizza-corneto-mCornetto is a favorite word for kids 🙂 Another favorite of kids is pizza so why not make a combination of both kid’s favorite.

INGREDIENTS:

Pizza doughas needed
Pizza sauceas needed
Cheeseas needed
Egg 1, beaten
Sesame seedsfor sprinkling on cones
Chicken boneless1 cup
Saltto taste
Garlic paste1 tsp
Onion chopped1 medium
Black pepper powder1 tbsp
Olive oil or vegetable oil1 tbsp

METHOD:

  • Roll pizza dough and cut long thin strips. (Pizza Dough Recipe)
  • Take card board sheet and cut square shape. As many as you need. Make a cone and use stapler to join it.
  • Wrap aluminum foil on each cone.

  • Wrap dough strip around each cone.

  • Try to overlap during warping.
  • Brush egg wash on cones and sprinkle sesame seeds and kalonji seeds on top.
  • Bake at 180c in pre heated oven , for 10 minutes.
  • Let them cool completely and remove from cones.

  • Prepare filling now, In olive oil saute onion and garlic till soft. Add chicken and salt stir and add black pepper, Cook on high flame for 5-6 minutes. Remove from flame.
  • You can add mushrooms, capsicum or onion in filling, will not recommend tomatoes for filling.

  • Spread pizza sauce inside cones (optional step). (Recipe of Pizza Sauce)
  • Fill in Chicken filling and sprinkle cheese on top.
  • Bake again till cheese melt and nice brown color appear.
  • Serve hot.

PIZZA ON TAWA / PAN

tawa-pizza-mI have posted Whole Wheat pizza in pan, a long time ago. Today i am posting a pizza recipe which you can make on Tawa or pan. Follow step by step procedure. A quick recipe with delicious taste.

STOVE TOP WHOLE WHEAT PIZZA

INGREDIENTS:

Pizza doughas needed
Pizza Sauceas needed
Pizza cheeseas needed
Chicken tikka chunksas needed
Vegetables, capsicum, onion, tomatoesas needed
Oilfor greasing

METHOD:

  • Marinate chicken in chicken tikka masala for an hour. Cook and set aside. You can check the recipe of chicken filling here if you do not want ready made masala: CHICKEN FILLING FOR PIZZA.

  • I have used Ready made Pizza sauce but if you want to use Home made Pizza sauce than chick the recipe here: Home made Pizza Sauce.
  • Take a Pan and grease it , roll pizza dough of pan size.

  • Place rolled dough on pan and cook for 5 minutes, you will see small bubbles on the surface.

  • Remove from stove when firm.

  • Place it back in pan keeping cooked side up.

  • Spread pizza sauce on cooked side.

  • Spread chicken and vegetables.

  • Cover the lid of pan with Aluminum foil. Your Pizza will not become soggy with this Aluminum cover.

  • Cook for 10 minutes on very low flame.

  • Cheese will melt. Remove from pan and serve.

  • If you want to make on Tawa than you just need to follow the same steps.
  • Keep the pizza pan on Tawa and cover with the lid, or  place pizza crust directly on Tawa and cook on very low flame.

SPECIAL PIZZA

pizza-mThis pizza recipe is Chef Ghafor’s one of the delicious recipes. I like the taste of pizza sauce and chicken. Its very different and delicious.

For your convenience i am posting conversion table from Grams to cups.

INGREDIENTS FOR PIZZA DOUGH:

Plain flour500 g
Icing sugar50 g
Salt7 g
Yeast10 g
Oil50 g
Eggs2
Wateras needed, for kneading

METHOD:

    • Add all dry ingredients in a bowl and mix well, now add oil, eggs and water. Knead well.
    • You can use butter as well instead of oil.
    • Place on a flat surface and knead it with your palm.
    • Divide dough in 3 portions and leave it for 15-20 minutes.
    • Now dust the surface and roll the dough. Press all sides with your finger tips and place on baking tray and place on a warm place for proofing.
    • Half bake it for 6-7 minutes at 180c.
    • Now ready for further process.
    • For parties you can half bake pizza crust and keep in zip lock bags. Freeze it, when needed just thaw and use.

INGREDIENTS FOR PIZZA SAUCE:

Tomatoes500 g
Butter30 g
Salt7 g
Black pepper1/4 tsp
Sugar25 g
Lemon juice20 g
Oregano1/4 tsp

METHOD:

  • Grind tomatoes and add all ingredients in it.
  • Cook till become thick.
  • Set aside.

METHOD:

  • Mix all spices and cut chicken in cubes and add in spices.
  • Cook till tender.

  • Spread pizza sauce on half baked pizza.
  • Spread chicken, capsicum, tomatoes, olives, onion and cheese.
  • Sprinkle oregano and bake at 180c for 10 minutes approx.

DONUT – BAKERY STYLE

donuts-mA lot of Donut recipes I have posted earlier but today this recipe is copycat bakery recipe. Chef Arshad Ghafoor is teaching us in detail.

INGREDIENTS:

Flour1 kg
Butter100 g
Sugar50 g
Egg yolk5
Yeast20 g
Salt5 g
Milk powder50 g

METHOD:

  • You can watch video for clear understanding.
  • In a large bowl add all ingredients and knead it with water.
  • Now knead it with your palm.
  • Now make dounts and leave these for few minutes. They will rise.
  • Fry in oil.
  • Dip in melted chocolate and decorate.

cronuts-mCROUNTS are croissant and doughnut pastry first introduced and invented by a pastry chef Dominique Ansel. Pastry is than fried , filled and gazed. Like doughnuts your kids will love these Cronuts which are like doughnuts but in taste very different and more crispy, flaky and delicious.

Original recipe of Dominique I am attaching with my post, but i have made it a bit more easier instead of making dough I have used Puff pastry. You can check the authentic recipe here:

DOMINIQUE ANSEL- AT HOME CROUNTS

INGREDIENTS:

Puff pastryas needed
Waterfor brushing layers.
Oil for frying
Nutella or any ganacheas required
Sprinklesas needed

METHOD:

  • Roll the puff pastry, should not be thick.
  • Cut with doughnut cutter.
  • Brush each piece with water and place 3-4 pieces on each other.

  • Press them and set aside.

  • Prepare all. Heat oil and Fry on medium heat. Press each cronut with spoon and turn sides time to time till golden brown.
  • Remove from oil when brown and fill icing bag with Nutella or any ganache
  • Insert nozzle in cronut and fill in filling. Do icing and serve.

You can bake these cupcakes with your kids too because this is no fail recipe. LUNCH BOX IDEA -3

lunch box 3 mYou can attract and encourage your kids by preparing and packaging their food in interesting way. You can have fun with sandwiches, cut them in different shapes or characters or make rolls of sandwiches as i have shown in my last post. Make faces on fruits like Banana.

Give them bite size food. Protein, fruits and veggie look great on skewer or toothpick and kids mostly like these skewers. Add new food in lunchbox in a small amount and continue to reintroduce it on and off several weeks. If at the end they do not like it then switch it with any other food but from the same food family.

Make the lunch box of your kid more interesting with different ideas. Make a character or right a note on ziplock bag and pack sandwich in it.

  • If you will pack a different Lunch daily, your child will take interest. You can cut sandwiches and french toasts in different shapes.
  • Try different fillings of sandwiches. Wrap in cling sheet.
  • Buy lunch boxes of their own choice. Ask them to arrange lunch in boxes themselves.
  • Try to give a lunch which is manageable and easy to eat.
  • If your child is not eating lunch despite your best effort, do not give up. Pack healthy and nutritious Lunch your child will eat when hungry.

METHOD:

  • Boil chicken and shred it.
  • Cut carrot and capsicum finely.
  • In a pan add oil and chicken, add all spices and vegetables. Mix well.

  • Fry in oil and drain excess oil on paper towel.

FAIRY CHOCOLATE BREAD ROLLS

fairy bread roll mFriends make your kids lunch box more attractive by simple ideas. I am sharing a very simple and easy recipe , in no time you can make it. These are pinwheel type of rolls.

INGREDIENTS:

Bread slices as needed
Chocolate Spread/ Jam/ jellyas needed
Sprinklesas needed

METHOD:

  • Remove corners of bread and use rolling pin to press it down.
  • It will become thin, bread should be fresh and soft.
  • Spread thin layer of chocolate on bread and roll it carefully.
  • Cut the rough edges, you can divide in two halves.
  • Spread chocolate on edges of bread roll and dip in sprinkles.
  • Ready to serve 🙂
  • You can use any jam or jelly which is your kid’s favorite.
  • Wrap in cling sheet and give your kids in lunch box .

cheesy potato rolls mYou will definitely think that what is a new thing in this recipe, we all know how to make these bites or Rolls. Different is the technique and taste which you will adore. Make them a day before, fry in the morning and give these to your kids in Lunch box. Diet conscious friends can bake and enjoy with any sauce.

INGREDIENTS:

Boiled Potatoes2 large
Mozzarella or cheddar cheesegrated, 1/2 cup
Chicken 1/2 cup
Saltto taste
Chinese salt1/2 tsp
Chili sauce1 tsp or to taste
Black pepper1/2 tsp
White pepper1/4 tsp
Egg1 , beaten
Bread crumbsas needed

METHOD:

  • Boil potatoes and peel skin.Grate boiled potatoes. Set aside.
  • Grate cheese and set aside.
  • Shred chicken and set aside.
  • In a large bowl add all ingredients including, chili sauce, black pepper, salt, white pepper, ajino moto/ Chinese salt.
  • Mix with light hands.
  • Make small rolls and dip in egg and roll in crumbs.
  • Fri in oil.
  • If baking then place them on a baking tray and spray olive oil. Bake at 180c till light brown from the bottom. Turn the side and again bake till nice brown color appear.

KIDS LUNCH BOX IDEAS-1

kids lunch box mDaily preparing lunch  for your kids and planning it ahead according to their taste and liking is as difficult  as to plan for your own lunch or dinner meal. 🙂
After 2 Month’s, fun filled summer vacations schools are now open and mothers are struggling with the same problem. I myself hate to see my sons come back from school with half left food in lunch boxes because they did not feel like eating it.We all know that healthy lunch can keep our kids active, alert and give nutrition they required daily. But my point is no matter how healthy you will provide lunch to your kid, it won’t give you ant result it it doesn’t get eaten. Lunch should be not only nutritious but also tasty and interesting.
My Friends and new Moms always asked about Lunch Box ideas from me so i realized, like me all mothers are worrying and thinking about Packing a lunch box which kids can eat gladly.
I will share few Tip with you Which will help you out in preparing your kids Lunch boxes.

  • Keeping Food Pyramid in your mind Plan small portions for lunch boxes.

  • Keep all food groups in your kids lunch box. Fruit and veggies, starchy food, protein and dairy. Guide your kids regarding importance of food groups and convince them to eat every small portion of their healthy lunch.

  • Be creative, your kids will Love to eat different and interesting food as compare to simple one.
  • In summer give them frozen bottle of water, it will still be cold till Lunch time.
  • In summer or hot weather avoid fish, milk or yogurt in Lunch boxes. I will strongly condemn to use Tetra flavored milk in summers.
  • Do not give them soggy sandwiches. Pack them in cling or plastic sheet.
  • I usually prepare Lunchbox food night before and just fry or assemble in the morning.
  • Use different cutters for making and giving shapes to breads or sandwiches.
  • Make or take a printout of special lunch box note. Your kids will love to read special note. If you can not make daily, do it twice in a week.
