EASY PEASY PASTA


I picked this recipe from the book of Chef Zakir , its not only tasty but also very easy. As you know pasta is a very good partener of other nutritious food and its great to pair pasta with vegetables, meat ,beans ,olive oil and much more.

INGREDIENTS:

pasta   as needed  (boil as directed on the box)or  2 cups boiled

boiled chicken  as needed or 1 cup

carrot  1  large cut in cubes

capsicum    1  large  cut in cubes

cabbage     1  cup shred

onion   1  small

garlic   2  cloves  small

white pepper    1/2 tsp

black pepper    1 tsp

salt

oyster sauce   1 tbsp

soya  sauce   2 tbsp

oil     2 tbsp

METHOD:

In a pan add oil and onion , saute it and add crushed garlic.Garlic will give a different aroma to your pasta,now add boiled chicken fry it and add vegetables but keep in your mind carrot should be boiled.Cook well on high flame then add pasta and all spices and sauces , mix well .Just cook for 2-3 mins and serve.

Jalfrezi  along with fried rice, a very tasty combination .In my opinion those who do not like Chinese cuisine because of less mirch masalas can easily consume this dish. Like in my family most of the people do not like Chinese but Jalfrezi is their favorite of all.

INGREDIENTS FOR JALFRAZI:

chicken in cubes  1/2 kg

onion cut in cubes      2 medium

capsicum   cut in cubes     2 medium size

tomato     cut in cubes   3 medium

green chilli   3-4  slitted

oil   3 tbsp

yogurt   1/2 cup

salt

Chinese salt   1 tsp

black ppr freshly ground   1 tsp

red chilli powder   1 tsp

haldi/turmeric  1/2 tsp

corn flour   1 tbsp

soya seeds  1/4 tsp

METHOD:

Cook half tomatoes in oil till mashy then add chicken cubes and all spices on high flame, add yogurt also. Stir constantly as soon as chicken’s color change ,add 3 tbsp water and cover the lid …let it cook till chicken tender .Now add capsicum ,onion ,tomatoes n green chillies ,mix all well give 5 mins to vegetables,do not over cook the vegetables and  dish it out….serve with rice….

SIMPLE FRIED RICE

INGREDIENTS:

boiled rice   3 cups

peas   1 cup

capsicum   1  large in cube cut

cabbage   1/2 cup

carrot    1/4 cup chopped

onion   1  small  chopped

soya sauce  2 tbsp

salt

black ppr  1 tsp

white ppr  1/2 tsp

eggs   2

spring onion handful    if u want to add

METHOD:

In a pan add oil and heat it up then add beaten eggs in it , fry them .Take them out and add vegetables saute them ….now add rice and all other spices, mix well with light hand in, the end mix eggs in it…. serve hot.

FLAN DE LECHE / CREME CARAMEL

dolceThis creme caramel is actually a caramel custard  with soft sugar topping ,very famous in all over the world . In Pakistan we normally make pudding with these ingredients ,but one thing is different i.e condensed milk .This is why pudding is different from flan.

INGREDIENTS:

1 cup sugar

4 eggs

1/4 cup water

1 can    condensed milk

2 cups milk

vanilla essence  1/2 tsp

1/2 cup sugar

 

METHOD:

First in a pan add 1 cup  sugar and water ,let it boil ,do not touch till sugar dissolve and start to change its color into light golden ,now pour this caramelize sugar in any mold … beat eggs ,milk, condense milk, essence and sugar 1/2 cup ..but keep it in your mind that you are using condense milk also so adjust sugar to your taste…mix well and pour this mixture in mold and place this in a large oven safe bowl in which you have to fill water ,then keep it in oven for baking…..when set take out n serve chill….:)

PIZZA PASTA BAKE


You must try this recipe, I am sure you will like the pizza flavour combined with pasta and cheese…Actual flavour of pizza will come up because of pizza sauce , you can use any other topping, replacing chicken.

INGREDIENTS:

chicken  cubes  1 cup

garlic clove  1 large crushed

onion 1 small

oyster sauce  1 tbsp

Worcestershire sauce 1 tsp

black ppr   1 tsp

crushed red chilli   1/2 tsp

salt

olive oil  2 tbsp

capsicum  1 small cubed

pizza sauce  as needed

pasta  boiled  2 cups

mozzarella cheese as needed

cheddar cheese   as needed

oregano  to sprinkle

garlic powder  to sprinkle

 

 

METHOD:

First cook pasta according to the direction given on box,drain it and set aside.

In a pan add oil and sliced onion ,stir it for few mins on color change add garlic and chicken ,sauté it and add sauces,salt,black ppr ,crushed red chilli mix all well ,cook till chicken done. Add capsicum in the end and  just stir it and set aside.

In a large bowl mix pizza sauce n water 1/2 cup, after mixing add pasta and half shredded cheese(both) and chicken mixture .Now mix all with light hands…

YOU CAN ADD MUSHROOMS ALSO ,IF YOU LIKE.

Transfer this mixture in a dish and then cover remaining half cheese on top of it ,sprinkle oregano and garlic powder on top. You can garnish with capsicum and  tomato slice if you like. (i used red chilli flakes also).Bake it for 25 mins at 170c,serve hot and enjoy….

LASAGNA CUPS


I like Italian cuisine…most of Pakistanis like LASAGNA ,but I bring modified version of lasagna i.e  LASAGNA CUPS . And very important thing is , you can add chicken, vegetable ,fish or prawn filling. Smart looking cups with different taste must be in your menu list.

 

INGREDIENTS:

lasagna pasta sheets as needed  (boil as directed on box)

 

INGREDIENTS FOR SAUCE:

onion  1 small minced

chicken   1 cup boiled

pizza sauce  2 tbsp

salt

crushed red chilli  1/2 tsp

butter/olive oil  2 tbsp

 

In a pan add butter and onion …sauté it for few mins then add chicken and fry for 5 mins. Now add pizza sauce and all other ingredients ,mix well and set  aside.

 

CHEESE FILLING INGREDIENTS:

Parmesan cheese

cottage cheese

mozzarella cheese

egg  1

 

Mix all grated cheese ,but keep half mozzarella cheese aside for topping….

 

ASSEMBLING:

Grease muffins tray and place small lasagna sheet in the base now fold lasagna sheet to give the shape of cup and carefully place in tray now pour spoonful of sauce and then cheese filling , again sauce, In the end, top it with mozzarella cheese ,repeat this procedure with all cups and bake it for 20 mins …..now check if the cheese bubbling then take it out n serve hot ..Oh yes do not  forget  to sprinkle oregano on top….
