CHEESY SCOTCH EGGS

se mPlan something healthy in your brunch today, why not try these tasty Paleo friendly Scotch Eggs. Traditionally Scotch eggs are British picnic classic but you can enjoy these baked Scotch eggs any time of the day. You will find fried version mostly but i love to make baked version just to cut down extra fat and calories.

You can give this to your kids in lunch boxes, you can add veggies in meat which will give a flavor and color to these eggs.

BAKED SCOTCH EGGS WITH CHEESE

 

INGREDIENTS:

Chicken / Beef Mince  1 pao ( i have used boneless chicken)
Onion  1 small
Capsicum  1 very small
Bread crumbs  2 tbsp
Black pepper  1/2 tsp
Salt  to taste
All spice powder   1/2 tsp
Red chili flakes (optional) 1/2 tsp
Hard/ Medium boiled eggs 2
Cheddar cheese as needed
Paprika 1/4 tsp

FOR SAUCE:
Chilli garlic sauce  2 tbsp
Salt  to taste
Red chili powder  1/4 tsp

Black pepper 1/4 tsp

METHOD:

  • If using bone less cubes of chicken or beef then add onion, capsicum, bread crumbs, black pepper, salt, spice powder, chilli flakes in food processor and chop.
  • Now with wet hands wrap eggs with mince.
  • Make balls and set aside.
  • In a small bowl mix all ingredients of sauce.
  • Shred cheese.
  • Assemble all things on counter and transfer Meat big balls in a serving oven prof plate.
  • Pour sauce and cheese on top.Sprinkle paprika and bake at 180c  till cheese melt and mince well cooked.
  • Serve hot.
  • Enjoy bubbling cheesy Scotch eggs with any salsa or dip.

VARIATIONS:

  • If you want fried version then after warping eggs with mince, dip in egg and then roll on bread crumbs and fry in oil. You will get crispy scotch eggs.
  • You can fry them and then sprinkle cheese and sauce then bake. I have done the same.

HAKKA NOODLES

h n mI consider Hakka Noodles as a desi style Noodles. This is chef Zakir’s recipe and like all other recipes this is also a super hit recipe of him.

INGREDIENTS:

Chicken boneless in cubes1 cup
Capsicum1 medium size
Cabbage1 cup
Saltto taste
Red chilli flakes1 tsp
Oyster sauce1 tbsp
Chilli garlic sauce3 tbsp
Ketchup3 tbsp
Worcestershire sauce 1 tbsp
Soya sauce1 tbsp
Garlic clove minced2 large
Oil1/4 cup
Egg noodles or spaghetti 1 packet
Spring onion3 tbsp

METHOD:

  • Boil noodles/ spaghetti and set aside.
  • Cut all vegetables  and chicken in cubes. Set aside.
  • In a deep pan add oil and garlic mince, saute it for few seconds then add chicken cubes and stir it. Cook till tender.
  • Now add all sauces and spices, stir and add vegetables. Mix well.
  • Add boiled noodles and Mix well.
  • Sprinkle spring onion and mix.
  • Serve hot.

MEXICAN RICE

m rice mThis recipe is very different from our typical Pakistani rice dishes. Frying rice is a very interesting step before cooking in broth.

INGREDIENTS:

Rice2 cups
Tomatoes3 medium
Onion1 medium
Saltto taste
Chicken Broth/ stock2 cups
Cumin seeds1/2 tsp
Garlic clove2 large
Green chillies3-4
Coriander leavesfew
Lemon juice1 tbsp
Oil1/4 cup

METHOD:

  • Wash and soak rice in water for 15 minutes.
  • In a blender, blend tomatoes and onion with 1/4 cup of water.
  • Pour in a pan and let it boil , now add salt, cumin and chicken broth in it. Let it boil for few minutes.
  • In another pan add oil and and rice , fry till light brown, add green chillies chopped and garlic chopped and stir.
  • Add tomato and onion puree in it. Adjust salt and water if required more.
  • Cover with the lid and cook on low flame after ten minutes pour lemon juice , coriander leaves and mix with very light hands.Cover the lid again and cook till done.
  • Serve with Cheese Potato patties. (recipe in my next post)

CREAMY CHICKEN STEAK

steak mCheese filled chicken steak with thick creamy sauce is a loaded meal for special occasions.In my recipe you will not see creamy sauce instead i have serve these steaks with veggie pasta.

INGREDIENTS:

Chicken breast pieces2 (after cutting you will get 4)
Cottage cheese/ cheddar cheese)1/2 packet
Green onion2 tbsp
Worcestershire sauce2 tbsp
Saltto taste
White pepper1/4 tsp
Black pepperas needed
Olives4-5 chopped
Flour2 tbsp
Cream 1 cup
Garlic1 large , chopped
Oil 1 tbsp

METHOD:

  • Grate cottage/ cheddar cheese and add green onion, olives.
  • Cut one breast piece into two pieces.
  • Marinate it with salt, pepper and Worcester sauce.

  • Place cheese mixture on one side of chicken breast and roll it.

  • Insert tooth picks to seal and pan fry it from all sides.

  • In a pan heat oil and add garlic mince and stir now add cheese mixture in it.
  • Now add flour and stir ,add cream ,salt, pepper, white pepper, woster sauce. Mix well .
  • Pour on chicken steaks or on one side an serve with pasta.

BAKED PASTA

B PASTA MThis creamy recipe of baked pasta is a versatile staple food. Adopted from Chef Zakir’s cook book.It’s definitely easy and you can just make this in few steps.

INGREDIENTS:

Pasta1/2 packet (boiled)
Milk1/2 lit
Flour4 tbsp
Cheddar cheese3/4 cup
Saltto taste
Black pepper1/2 tsp
Sugar1/2 tsp
Capsicum2 med
Tomato2 med
Onion1med
Carrot1 med
Spring onion2 nos

METHOD:

B PASTA 1
  • Boil half packet of pasta.
  • In a pot toast flour ,then add milk in it.Stir constantly with whisk.
  • Stir till thick, add salt, black pepper, 1/2 tsp sugar.
  • Add all vegetables in milk. (cut veggies in small pieces)
  • Now add pasta in milk and mix well.
  • Pour in Pyrex or heat proof dish and spread shredded cheese .
  • Now bake at 180c for 15-20 minutes till cheese melt.

ROTISSERIE POT PIE

IMG_0273mainThis pot pie is very easy and flavorful, If you are planning something for your weekend then keep this on top of your list. Rotisserie chicken will give you different flavor then any other pot pie.

INGREDIENTS:

Chicken bone less3 cups
Capsicum 1 diced
Carrot1 small diced
Peas1/ 2 cup
Onion1 small
Saltto taste
Black pepper1 tsp
Green chillies chopped1 tbsp
Paprika1 tsp
Flour3 tbsp
Chicken broth1 cup
Puff pastry packet
Egg ,beaten1

METHOD:

  • Marinate chicken with Rotisserie special spice, check the recipe of ROTISSERIE CHICKEN .
  • Boil peas and carrots.
  • In a pan add oil 2 tbsp and saute onion.Remove onion and add marinated chicken and cook till tender in the same oil.
  • In  separate pan add 1 tbsp oil and add flour and saute, pour stock and stir add capsicum , carrot and peas and spices .
  • Add saute onion and chicken ( you can shred chicken).

  • Roll puff pastry and spread on the base of greased pot then spread chicken  mixture and cover with another rolled puff pastry. You can make flower garnish and even can make borders if you like.

KHAO SUEY

kh manLet me introduce this interesting dish to you,
“In Memoni cuisine, Khow suey, from Burmese, is a noodle dish that comes from the mountainous Shan State. It is a one-dish soup meal made of egg noodles and curried beef or chicken with coconut milk, served with a variety of contrasting condiments. A squeeze of lemon also adds tanginess to Khow Suey. The dish is similar to the Burmese noodle dish.”
In Karachi this is not only famous among Memoni community but also all Memoni cuisine lovers. This is a modified version. Like “Singaporen rice” we Pakistanis add some Pakistani Tarka in it…lolz.

INGREDIENTS FOR CHICKEN CURRY:

Boneless chicken cubes1/2 kg
Chopped tomatoes1/2 kg
Salt to taste
Ginger minced1 tsp
Garlic minced1 tsp
Red chilli crushed1 tbsp
Cumin crushed1/2 tsp
Coriander crushed 1/2 tsp
Turmeric powder1/2 tsp
Dry methi leaves1/2 tsp
Oil1/2 tbsp
Green chillies chopped3-4

METHOD:

  • In a pan add oil and ginger garlic ,fry till color change. Add all other spices except green chillies.
  • Stir and add tomatoes, stir and cover with lid. Cook till tomatoes well cooked and oil separates from curry.
  • Sprinkle green chillies and set aside.

INGREDIENTS FOR COCONUT CURRY:

Yogurt1/2 kg
Gram flour/ basan4 tbsp
Saltto taste
Crushed red chillies1 tbsp
Turmeric powder1/2 tsp
Ginger garlic paste1 tsp
Coconut powder2 tbsp
Coriander powder1 tsp
Water2-3 glass

METHOD:

  • Add all ingredients in a blender and mix. In a pan pour and add water.
  • Cook till required consistency obtained.
  • In a pan add 2 tbsp oil, whole red chillies 2-3, Cumin seeds 1/4 tsp, Curry leaves 2-3. Fry for few seconds and give tarka to coconut curry.

ASSEMBLING:

  • Boil noodles 1 packet as instructed on box.Drain and toss 1 tbsp oil to give a gloss.Set aside till assembling.
  • You can serve khao suey with two different procedures, First you can place boiled noodles on plate then pour curry and top it with chicken curry. Sprinkle garnish and serve.
  • Second you can layer noodles in a Pyrex dish then pour curry of coconut and then chicken, layer noodles again now bake it for 10 minutes at 180c,sprinkle garnishes before serving.
  • Serve garnishes with khao suey. And do not forget to squeeze lemon juice on top.
  • I will recommend you to serve with first procedure and serve coconut curry and chicken curry also, so one can add more curries according to taste and requirement.

GARNISHING:

Few garnishes which will enhance the taste of your khao suey are as follow..:) You can skip few.

  • Lemon wedges.
  • Fried onion.
  • Fried garlic
  • Mint leaves.
  • Coriander leaves.
  • Green chillies.

GUEST POST- GRANDMA LASAGNA

LASANA MANItalian cuisine is one of the most favorite and widely adopted cuisine in the world.How can we forget Italian Pizzas, pasta, lasagna and much more which are part of our Pakistani cuisine.I am quoting Marcella Hazan’s words here about Italian cuisine.

“I think the success of Italian food is that it’s the food that is easiest to live with. Also, in a restaurant, nothing is cooked until you order it. If you eat Italian food in the American way it is fattening. Italians don’t serve butter on the table with the bread. Also they don’t serve olive oil on the table. Now in America it is fashionable, instead of having the dish with butter they have a little dish full of olive oil so that people dip their bread in it. Because butter got a bad name, olive oil got a good name, and all the Italian restaurants in America do this, but it’s not Italian at all.

You don’t have the big portions, you usually don’t have cake or dessert but fruit or something made with fruit. And we don’t snack. At home supper is usually very light, pastina in brodo, a formaggino, maybe a vegetable, but very light. That is also healthy because eating a big dinner means you go to sleep and burn less calories. Also I wish that in the United States they would learn how to eat long pasta without a spoon. That is the fault of the restaurant, because they put a spoon there. People don’t know how to eat pasta with just a fork.”

Why i am mentioning about Italian cuisine today, because we have a guest today with us. She is an Italian and an excellent cook. I liked her tempting and healthy recipes. I am grateful to her for stopping by and shared such a famous recipe with us. This is equally famous in Pakistan as in Italy.

LASANA DOWN

Grandma’s Lasagne

INGREDIENTS

For the ragout:

 

  • 1 stalk of celery
  • 1 small carrot
  • 1 small white onion
  • 4 tablespoons of extra virgin olive oil
  • 500 g of minced beef meat
  • 100 ml of beef stock
  • 1 lit of tomato sauce
  • salt
  • black pepper

 

For the Lasagne:

 

  • 350 g of Mozzarella
  • 500 g of dried egg pasta or lasagna noodles
  • 100 g of grated Parmesan cheese
  • Fresh basil
  • Olive Oil for the pan

 

METHOD

Prepare the ragout by placing in a pot the chopped celery, carrot and onion with 4 tablespoons of extravirgin olive oil. Fry over a low heat for about ten minutes, stirring occasionally.

When the vegetables have browned add the meat and turn up the heat.
Add the stock and when it’s completely evaporated, add the tomato sauce, a generous pinch of salt and some freshly ground pepper.
Let the ragout cook for at least 3 hours, stirring occasionally with a wooden spoon.

Once the ragout is ready boil the lasagna noodles in salted water for about 5 minutes. Drain and set aside.

Grease the baking tray, spread the bottom with a layer of ragout sauce and begin to layer the pot with lasagna noodles, mozzarella, ragout, basil leaves and a handful of Parmesan cheese.
Continue to fill the lasagna until you have 5 layers, ending with Parmesan cheese.
Cover with aluminum foil and bake at 200° C (375F) for 35-40 minutes.
Remove the foil and continue baking for another 5 minutes, turning on the grill function.

main nmThe important thing about this recipe is….This is super healthy and easy. If you are looking for a weight watcher recipe then do not miss this. You can do a lot of variations with stuffing , hope you will like it.

INGREDIENTS:

Chicken fillet 4 thinly sliced.
Lemon juice2 tbsp
Saltto taste
Black pepper1 tsp
Potato, boiled and mashed2 medium
Peas, boiled and mashed1/4 cup
Green chillies , crushed2
salt and pepperto taste.
Bread crumbsas required
Olive oil, lemon juice , salt and pepperfor coating
Veggiesfor serving.
Cheese, shredded1/2 cup

METHOD:

  • Marinate Chicken fillets with salt, black pepper and lemon juice for 3-4 hours.
  • In a bowl add mashed potatoes ,mashed peas, green chillies crushed, salt, black pepper( to taste) and cheddar cheese  . Mix well.
  • Place fillet on working place and flattened it with hammer, then spread potato mixture on fillet. Roll it tightly and insert toothpicks on both ends.
  • In a bowl mix Olive oil 2tbsp, salt ,pepper and lemon juice 1 tbsp.Dip rolls in this oil and coat with breadcrumbs.
  • Place on lightly greased baking tray and bake them till brown from all sides at 180c.
  • You can fry these in less oil too.
  • Serve with sauteed veggies. Saute any vegetable with salt and pepper in 1 tbsp oil.
  • You can do a little variation by adding oyster sauce 1tbsp and chilli sauce 1 tbsp in chicken marinade.Just to give a bit spicy touch.Then before spreading potato mixture spread mayo on fillet it will give a creamy taste to your chicken.

This is also my versatile recipe in which you can use any type of filling ,topped up with cheese and here it is Rock & Roll disk for all age groups…and for dieters too..

INGREDIENTS:

Lasagna noodles10 sheets
Chicken boiled and shredded 2 cups
Oil1-2 tbsp
Garlic clove1 large ,minced
Pasta sauce2 tbsp + for spreading on lasagna sheets
Saltto taste
Red chilli flakes1 tbsp (adjust according to your taste buds)
Veggiesif needed
Cheese ( i have used cheddar) as needed
Mixed herbs/ oreganofor sprinkle on top.

METHOD:

  • Boil lasagna noodles. Coat oil to keep them separate.
  • In a pan pour 1 tbsp oil. Add garlic mince and chicken shredded, saute it for few minutes and add salt and crushed red chillies.
  • Add pizza/ pasta sauce and mix well. You can add chopped veggies and mushrooms also.
  • Now spread sauce on lasagna noodles and place chicken on one end, roll it tightly and place seem side down  in a greased baking dish.You can freeze on this stage for 2-3 weeks if using veggies other wise for 1 month easily.When needed take them out and directly arrange in dish and bake.
  • Arrange as many as you want.
  • Sprinkle cheese and mixed herbs or oregano.
  • Bake it for 10-15 minutes till cheese melt.
  • Serve hot.

This recipe is an adaptation from Shreen Appa’s cook book….:) I am sure you will love this recipe. Aroma of corn rice combined with creamy sauce chicken  will give you a unique taste.

INGREDIENTS FOR CORN RICE:

Rice4 cups
Corn1 cup
Capsicum1 small chopped
Green onion3-4 tbsp
Coriander leaves2-3 tbsp
Butter1 tbsp
Oil4tbsp
Black pepper crushed1/2 tsp
Saltto taste
Green chillies3 chopped

METHOD:

  • Boil rice and set aside.
  • In a deep pan add butter and oil then add rice, toss them and add all other ingredients one by one.
  • Toss them and in a tube pan fill then tightly.But served them without giving ring shape.
  • But Do try this ring shape rice…:) Now cover with foil and bake these rice at 180c for 10 mins.

INGREDIENTS FOR SAUCE:

Boneless Chicken1/2 kg
Onion1 small ,chopped
Mushrooms4 tbsp ,sliced
Green onion2-3 tbsp
Black pepper1/2 tsp
Saltto taste
Green chillies3 chopped
Coriander leaves2 tbsp chopped
Plain flour2 tbsp
Butter1 tbsp
Oil2 tbsp
Chopped Garlic1 tbsp
Cream1/4 cup
Chicken stock1 cup

METHOD:

  • In a pan add butter and garlic chopped.Saute and add chicken cubes, fry till color change.
  • Add onion ,salt ,black pepper and flour again saute for 5-10 minutes then add chicken stock on low flame.
  • Stir it constantly to make a smooth sauce then add mushrooms ,coriander leaves, green chillies and green onion.
  • Now add cream in it.
  • Stir it and remove from stove.

ASSEMBLING:

  • In a platter invert the tube pan and carefully remove it.
  • Inside the rice ring pour sauce and serve Hot..:)

SPASAGNA (SPAGHETTI & LASAGNA)
Confused……..? Yes, I have combined lasagna and spaghetti together, I mean instead of using lasagna sheets I have used spaghetti. What else I have done check it out.. (This is a veggie version but you can use chicken, beef, mutton or fish also.)

INGREDIENTS:

Spaghetti 1 packet
Vegetables (capsicum,carrot,broccoli,mushrooms )1 cup
Milk1/2 cup
Pizza sauce5-6 tbsp
Parsley dried1 tsp
Oregano1 tsp
Salt to taste
Oil 2 tbsp
Flour2 tbsp
Vegetable/Chicken stock1 cup
Black pepper1 tsp
Cheeseas needed
Onion1 small

METHOD:

  • Boil spaghetti according to the directions mentioned on box.
  • Drain and grease it, set aside.
  • In a large bowl mix pizza sauce, oregano, parsley and milk, add spaghetti in it and toss with mixture. Set aside.
  • In a pan add oil /butter and chopped onion, saute it for few minutes then add flour and stir it till rawness removed now add chicken or vegetable stock in it and mix till required thickness achieved.
  • Add salt and black pepper and chopped vegetables, mix well and set aside.
  • Now in an oven proof dish layer spaghetti then pour sauce evenly and then again spaghetti on top sprinkle cheese. I have used cheddar but you can use any of your choice. Sprinkle oregano and bake it till cheese melt. Serve hot, but not directly from oven otherwise the slice to will find runny.

INSTANT MUG MAC & CHEESE WITH CHICKEN
I saw this idea and decided to make Mac & cheese, by adding chicken and mushrooms. The result was too good. If u have boiled pasta in your freezer and you don’t have time to cook something proper for yourself then just add few ingredients and make your delicious pasta in few minutes. You can make this in microwave as well but as I mentioned before I personally do not like microwave cooking so I will also recommend you to use normal oven…

Ingredients:

Boiled elbow macaroni 3/4 cup
Chicken (boiled ) – optional 1/4 cup
Mushrooms (diced) 2
Salt to taste
Cheddar cheese (shredded) 1/4 cup
Oil to grease mug

METHOD:

  • In a bowl mix all ingredients and fill in mug.
  • Then bake it at 160c for 10 minutes.
  • We can make this in micro wave also but I prefer baking in oven.. serve hot .

INDONESIAN RICE


My cousin Arifa shared this recipe with me, this is totaly different from other chinese dishes … In this dish we have used same ingredients like we are using in chinese cuisine but the basic difference is red chilli powder and fresh ginger …Aroma n taste of ginger attracts me and hope you will also try it .

INGREDIENTS:

rice  1/2 kg

chicken boiled   1 cup

onion   2

ginger     1 tbsp crushed

spring onion   1/2 pao

peas   1/2 cup boiled

carrot   1/2 cup  boiled

capsicum    1

cabbage   1 cup

green chilli   2-3

soya sauce 2 tbsp

red chilli    2 tsp

salt

Chinese salt   1 tsp (optional)

crushed black pepper   1/2 tsp

eggs   2

oil   1/2 cup

METHOD:

First beat eggs and add pinch of zarda color in it then make omelet n cut this into stripes….set aside.

In a pot add oil and fry onion( cut in slice) ,saute and add ginger stir for few seconds then add chicken…now on high flame add all vegetables just stir fast and add lal mirch,pepper,salt,soya sauce,chinese salt ,stir it and remove from stove …

Now boil rice in saltish water add drained rice in vegetables .serve with french fries and omelet ….

YOU WILL FEEL THE TASTE OF GINGER  VERY UNIQUE ….

EASY PEASY PASTA


I picked this recipe from the book of Chef Zakir , its not only tasty but also very easy. As you know pasta is a very good partener of other nutritious food and its great to pair pasta with vegetables, meat ,beans ,olive oil and much more.

INGREDIENTS:

pasta   as needed  (boil as directed on the box)or  2 cups boiled

boiled chicken  as needed or 1 cup

carrot  1  large cut in cubes

capsicum    1  large  cut in cubes

cabbage     1  cup shred

onion   1  small

garlic   2  cloves  small

white pepper    1/2 tsp

black pepper    1 tsp

salt

oyster sauce   1 tbsp

soya  sauce   2 tbsp

oil     2 tbsp

METHOD:

In a pan add oil and onion , saute it and add crushed garlic.Garlic will give a different aroma to your pasta,now add boiled chicken fry it and add vegetables but keep in your mind carrot should be boiled.Cook well on high flame then add pasta and all spices and sauces , mix well .Just cook for 2-3 mins and serve.


Jalfrezi  along with fried rice, a very tasty combination .In my opinion those who do not like Chinese cuisine because of less mirch masalas can easily consume this dish. Like in my family most of the people do not like Chinese but Jalfrezi is their favorite of all.

INGREDIENTS FOR JALFRAZI:

chicken in cubes  1/2 kg

onion cut in cubes      2 medium

capsicum   cut in cubes     2 medium size

tomato     cut in cubes   3 medium

green chilli   3-4  slitted

oil   3 tbsp

yogurt   1/2 cup

salt

Chinese salt   1 tsp

black ppr freshly ground   1 tsp

red chilli powder   1 tsp

haldi/turmeric  1/2 tsp

corn flour   1 tbsp

soya seeds  1/4 tsp

METHOD:

Cook half tomatoes in oil till mashy then add chicken cubes and all spices on high flame, add yogurt also. Stir constantly as soon as chicken’s color change ,add 3 tbsp water and cover the lid …let it cook till chicken tender .Now add capsicum ,onion ,tomatoes n green chillies ,mix all well give 5 mins to vegetables,do not over cook the vegetables and  dish it out….serve with rice….

SIMPLE FRIED RICE

INGREDIENTS:

boiled rice   3 cups

peas   1 cup

capsicum   1  large in cube cut

cabbage   1/2 cup

carrot    1/4 cup chopped

onion   1  small  chopped

soya sauce  2 tbsp

salt

black ppr  1 tsp

white ppr  1/2 tsp

eggs   2

spring onion handful    if u want to add

METHOD:

In a pan add oil and heat it up then add beaten eggs in it , fry them .Take them out and add vegetables saute them ….now add rice and all other spices, mix well with light hand in, the end mix eggs in it…. serve hot.
