INGREDIENTS:

Rice 2 cups
Eggs 2
Garlic 2 cloves, chopped
Yellow food color, optionalpinch
Milk/ water1 tsp
Capsicum1 large
Cabbage1 cup
Carrot1/4 cup
Spring onionfew leaves
Saltto taste
Chicken powder1 tbsp
Chinese salt, optional1 tbsp
Black pepper1 tsp
Sugar 1 tsp
Vinegar1 tbsp
Soya sauce1-2 tbsp
Oil1/2 cup

METHOD:

  • Boil Rice and let them cool completely.
  • Beat egg with milk or water and pinch of yellow food color.
  • In a wok add oil and heat it. Cook on high flame now.
  • Add chopped ginger and stir, add eggs and stir.
  • Now add vegetables and stir fast.
  • Add all spices and keep on mixing.
  • Add Rice and stir.
  • Before serving sprinkle green part of spring onion and serve hot.
  • Serve with Manchurian , beef dry chili or any other Chinese Dish 🙂

  • Marinate Chicken with all ingredients.
  • Set aside.
  • Just before serving fry it in oil and add in Sauce.

Honey1 tbsp
Chili powder1 tsp
Brown sugar1 tsp
Vinegar2 tbsp
Chili garlic sauce1/4 cup

METHOD:

  • In a pan add chili oil and garlic now fry till golden brown in color.
  • Add all ingredients and mix well.
  • Add fried chicken and mix well.
  • Before serving sprinkle sesame seeds on top.
  • Adjust spices according to your taste buds.

INGREDIENTS FOR CHILLI OIL:

Oil3 cups
Red chili powder1/2 cup
Red chili flakes1/2 cup

METHOD:

  • Heat oil in a pan.
  • Now add red chili powder and red chili flakes, stir for few seconds.
  • Remove from stove and leave it overnight.
  • Next day strain it and store in any bottle.

CHICKEN KABSA RICE

Al Kabsa or Kabsa rice is Arabic Rice dish. Serve this dish with Tomato Chatney or sauce which will enhance the taste of Rice. I assure you, your family will like this dish.

INGREDIENTS:

Chicken cut in 6 pieces1 kg
Onion5 medium, thinly sliced
Cumin seeds, crushed2 tsp
Green Cardamom3
Red chili powder2 tsp
Turmeric powder4 tsp
Tomatoes5-6 large, cut in small pieces
Rice1 kg
Cooking oil1 and 1/2 cup
Saltto taste

METHOD:

  • Soak rice in water first.
  • Fry onion in oil till light golden in color. Oil you can use according to your requirement.
  • Now add chopped tomatoes , salt, red chili powder, turmeric powder and stir constantly. Cover with the lid till tomatoes become soft.
  • Add chicken and mix well. Add cumin and cardamom. Fry chicken with spices. Add water double in quantity from rice.
  •  Cover with the lid till chicken tender and water boils.
  • Add soaked and drained rice in chicken.
  • Let it cook till water dries.
  • Simmer rice for 10 mins. Kabsa Rice is ready.
  • Serve with Tomato Chutney or sauce.
  • You can add Shallow fried Resins and almonds ( peeled). Garnish on rice before serving.

INGREDIENTS FOR TOMATO SAUCE:

Tomatoes2
Fresh coriander1/2 cup
Green chilies2
Garlic cloves2
Saltto taste
Red chili powderto taste

METHOD:

  • Blend tomatoes first.
  • Blend all other ingredients and mix in tomato paste.
  • Mix well and serve with your Kabsa Rice.
  • I serve this sauce with Tihari and other rice dishes too. You can also try and give me your feed back.

PERI PERI FRIES

peri peri fries mWithout fries , grilled peri peri chicken is incomplete. My kids loved these crispy and chat patae fries. Serve these fries with Peri Peri chicken and rice.

INGREDIENTS:

Potatoes2-3
Crushed red chilies2 tbsp
Saltto taste
Chat masala1/2 tsp
Lemon salt1/2 tsp

METHOD:

  • Cut potatoes in fingers.
  • Boil water in a pot and just dip potatoes in boiled water for five minutes.
  • Strain and let them cool a bit.
  • Coat them with corn flour and fry in oil.
  • Make spice mix for Fries.
  • Mix salt, lemon salt, crushed red chilies and chat masala.
  • Sprinkle this masala before serving.
  • Serve these fries with SPICY PERI PERI RICE AND GRILLED PERI PERI CHICKEN.

SPICY PERI PERI RICE

INGREDIENTS:

Boiled rice 500 g
Soya sauce2 tbsp
Peri peri sauce2 tbsp
Ginger garlic paste1 tbsp
Chopped onion2 tbsp
Tomato cut in cubes1 medium
Capsicum , cubed1 medium
Oil1/4 cup
Saltto taste
Black pepper1 tsp

METHOD:

  • In oil fry chopped onion, add ginger garlic paste and stir for few seconds.
  • Now add boiled rice, cubed capsicum, salt, black pepper, soya sauce, peri peri sauce , mix well.
  • Add chopped tomato in rice and let it simmer for 10 minutes.

CREAMY CHICKEN CASSEROLE

I felt so much proud and glad when i tried this first time on a Family Hi tea and believe me it was well appreciated by all guests.

INGREDIENTS FOR MASHED POTATO LAYER:

Potatoes1/2 kg
Cream 1 tbsp
Butter1 tbsp
Black pepper1/4 tsp
Mixed herbs1/4 tsp
Salt1/2 tsp

METHOD:

  • Boil potatoes and peel skin.
  • Mash with masher and add cream, butter, salt, black pepper and mixed herbs. Mix well.
  • Set aside.

INGREDIENTS FOR CHICKEN:

Chicken boneless, cut in strips1/2 kg
Butter50 g
Fresh garlic cloves, chopped2
Saltto taste
Red chili flakes1 tsp
Green onion, white part , chopped3
Jalapeno pepper, chopped3-4
Mushrooms, chopped3-4
Olive oil1 tbsp

METHOD:

  • In a pan add oil and garlic, saute for few seconds and add chicken strips, stir till color change.
  • Add chili flakes, salt,onion, mushrooms and jalapeno pepper, stir fry them.
  •  Cook till chicken tender.

INGREDIENTS FOR CREAMY SAUCE:

Cream1 cup
Thai chili sauce/ Tabasco sauce 1/2 cup or to taste

METHOD:

  • In a pan heat cream, hot sauce/ Tabasco sauce and pinch of salt. Mix well and remove from heat.

INGREDIENTS FOR GARLIC BREAD:

Garlic powder1 tsp
Bread slices6-7 or as needed
Mixed herbs1/2 tsp
Butter5 tbsp
Mozzarella and cheddar cheese1 cup, for topping

METHOD:

  • Cut triangles of bread slices.
  • Mix garlic powder, mixed herbs and butter in a small bowl.
  • Butter each slice and set aside.

ASSEMBLING:

  • In a Pyrex dish of any shape first spread mashed potato mixture.
  • Now spread chicken on potatoes.
  • Spread creamy sauce on chicken.
  • Arrange bread slices on the side of the dish.
  • Sprinkle Mozzarella cheese, olives 6-7 , mixed herbs and chili flakes.
  • Bake at 180c in preheated oven till cheese melt.
  • Serve hot.
  • You can adjust spices according to your taste buds I have used less spices because of my kids.

CHICKEN FAJITA PASTA BAKE

INGREDIENTS FOR TACO/ FAJITA SPICE:

Smoked paprika or red chili powder2 tbsp
Black pepper2 tbsp
Garlic powder1 tbsp
Cumin, grounded1/2 cup

Chicken breast, cut in cubes or stripes.2
Pasta 2 cups
Bell pepper1, cut in cubes or stripes
Cabbage1/2 cup, thinly sliced
Onion1 medium, cubed
Cream1/2 cup
Chicken broth1/4 cup
Tomato1 cubed
Green chillies3-4, chopped
Garlic cloves2-3, minced
Oil2 tbsp
Cheeseas needed
Taco/ Fajita seasoning 2 tbsp or to taste

METHOD:

  • Prepare Fajita or Taco spice first, it’s very easy to make.
  • Mix all ingredients of Fajita spice, store in a jar for seasoning your meat when required.
  • In a bowl add chicken cubes or strips and fajita spice. Mix well.
  • In a pan add 1 tbsp oil, and place chicken in single layer let it cook till nice brown color appear, turn the side and cook. Set aside.
  • Boil pasta and drain it, now in pasta add cream, salt and broth, cook till become thick, set aside.
  • In a pan add 1 tbsp oil, stir fry garlic and fry all vegetables including tomato.
  • Mix vegetables and  chicken in pasta and toss them. Adjust salt and spices according to your taste buds.
  • In a oven proof dish transfer pasta and sprinkle grated cheese and oregano.
  • Bake in preheated oven at 180c till cheese melt.
  • Serve hot.
  • Enjoy.

Chicken bone less1/2 kg
Carrots2 medium, julienne cut
Bell pepper/ capsicum1 large, julienne cut
Cabbage1 cup, thinly sliced

Sesame oil or vegetable oil3-4 tbsp
Soya sauce6 tbsp
Chili sauce6 tbsp or to tatse

Red chili flakes1 tsp
Chinese salt1 tsp
Black pepper1/2 tsp
Spring onion ,green part1/4 cup

METHOD:

  • Boil noodles and set aside.
  • In a Wok or pot add 1/2 tsp oil and fry all bell peppers. Take it out and add 1/2 tsp oil in wok again, now stir fry cabbage. Take it out.
  • Add 1/2 tsp oil and onion, stir fry them and take tem out.
  • Stir fry carrots in 1/2 tsp oil and take it out.
  • In wok add 1 tsp  sesame oil, soya sauce, chili sauce, black pepper, Chinese salt, salt, chili flakes and half garlic. Cook for few minutes till thick. Take it out.
  • In a wok add oil and garlic, stir it. After a minute add chicken and cook for few minutes till tender.
  • Add noodles and stir.
  • Add all vegetables one by one. Stir for few seconds.
  • In the end add spring onion and remove from heat.
  • You can garnish with sesame seeds and serve.

CHICKEN / BEEF LASAGNA

LASAGNA MThis recipe is one of the best recipes I have come across. This is adopted from Chef Zakir cook book. This meaty, cheesy and saucy dish is favorite of all, specially kids.

INGREDIENTS:

  • Lasagna sheets                 1 packet, boil it.
  • Mozzarella cheese           as needed.
  • Chicken /beef mince       1/2 kg
  • Carrots                               2 small, thinly cut
  • Capsicum                           2 medium, thinly cut
  • Onion                                  2 small, thinly sliced
  • Tomatoes                           2 , chopped
  • Garlic cloves                      5-6, finely chopped
  • Milk                                     2 cups or 1/2 litter
  • Tomato paste                     1/2 cup
  • Flour                                    1/2 cup
  • Oil                                         1/4 cup
  • Parsley or coriander          1/4 cup
  • Oregano                               1 tsp
  • Thyme                                  1 tsp
  • Rose merry                          1 tsp
  • Black pepper                       1 and 1/2 tsp
  • Salt                                        to taste
  • Oil                                          3 tbsp

METHOD:

  • In a pan add oil 3 tbsp and garlic. Saute it for few seconds.
  • Now add mince and fry till color change. Now add half vegetables. Stir.
  • Add 1/2 tsp oregano, 1/2 tsp thyme, 1/2 tsp rose merry, salt, black pepper and tomato paste. Mix all well. Keep aside.
  • Boil lasagna as instructed on box. After boiling grease lasagna sheets with oil and set aside.
  • In a pot add 1/4 cup oil and flour, fry it till color change. Add milk slowly and keep on stiring continuously with hand whisk. to avoid lumps formation.
  • Add salt, black pepper, rosemerry, oregano, thyme and 1/2 vegetables. Stir well.
  • In a greased pyrax dish place lasagna sheets, now give a layer of sauce and then mince. Repeat the layering.
  • On top sprinkle grated cheese.
  • I have sprinkled olives and oregano too.

  • Bake at 180 c till cheese melts and nice golden color appear.
  • Serve hot.

INGREDIENTS:

  • Chicken             1/2 kg , cut in cubes
  • Spaghetti          3 cups, boiled
  • Tomato paste   1 tbsp
  • Garlic minced   1tbsp
  • Ketchup              2 tbsp
  • Pasta sauce        2 tbsp
  • Chili garlic sauce  2 tbsp
  • BBQ sauce           1 tbsp
  • Red chili flakes   1 tsp
  • Oregano                1 tsp
  • Rosemary          1 tsp
  • Oil                        1/4 cup
  • Parsley or coriander leaves for garnish
  • Capsicum            1
  • Cabbage              as needed

METHOD:

  •  In a pan add oil and garlic. Saute for few seconds. Add chicken stir till color change.
  • Add all spices and sauces, mix well.
  • Add vegetables and stir for few more seconds.

AMERICAN CHOPSUEY

chopsuey mAmerican Chopsuey is one of the very popular dish here In Pakistan. Crispy crunchy noodles with delicious sauce is appealing for kids. This recipe is adopted from Shireen Anwer cookbook 🙂

INGREDIENTS:

  • Egg Noodles    1 packet
  • Chicken             2 breast fillets, cut in cubes.
  • Prawns              1/2 cup
  • Salt                     to tatse
  • White pepper   1 tsp
  • Garlic                 1 tsp, chopped
  • Ketchup             1/4 cup
  • Vinegar              2 tbsp
  • Chili garlic sauce  3 tbsp.
  • Sugar                  2 tbsp
  • Corn flour          4 tbsp
  • Chicken stock   2 cups
  • Capsicum          1 , medium cut in julienne cut
  • Onion                 1, medium in julienne cut
  • Cabbage             1 cup   in julienne cut
  • Carrot                 1 medium, cut in julienne
  • Spring onion     1/2 cup
  • Fried egg            1, for garnish
  • Oil                       as required.

METHOD:

  • Boil noodles and drain water.  Fry them in oil till crispy.
  • In a bowl marinate chicken and prawns with 1/2 tsp salt, 1/2 tsp white pepper and 2 tbsp. corn flour. Set aside for 20 minutes.
  • In a pan add 3 tbsp oil and garlic. Sauté for few minutes. Now add chicken and prawns. Cook till tender.
  • Add all spices and sauces except chicken stock and corn flour. Mix well. Add vegetables and cook for 5 minutes.
  • Add chicken stock and dissolve corn flour in 5 tbsp water and mix in mixture. It will become thick.
  • In a platter spread fried noodles and top them with delicious sauce.

shashlik mChicken Shashlik is one of the most popular dish here in Pakistan. Normally serve with Fried rice specially in winter season. Shashlik means meat in skewer. It was made with meat originally. But now a days we use cubes of chicken. My kids love this dish.

INGREDIENTS FOR SHASHLIK:

Chicken cut in cubes1/2 kg
Mustard paste1 tsp
Saltto taste
Ketchup3 tbsp
garlic paste1 tbsp
Crushed red chilies 1 tbsp
Sugar2 tsp
Soya sauce2 tbsp
Oyster sauce2 tbsp
Vinegar2 tbsp
Oilfor frying
Capsicum cut in cubesas needed
Tomatoes cut in cubesas needed
Onion cut in cubesas needed
Shashlik sticksas needed

METHOD:

  • Marinate chicken with all spices and leave it for an hour or two.
  • Take a wooden skewer and insert onion, capsicum and tomatoes (should be in cubes) then chicken cube. Repeat this sequence.
  • In a pan spray oil and fry till well cooked. You can bake or grill them too.
  • Arrange on platter and serve with sauce or drizzle on top of Shashlik.

Tomatoes6 large size
Saltto tatse
Garlic paste1 tbsp
Crushed red chili 1/2 tsp
Crushed black pepper1/2 tsp
Red chili powder1/2 tsp

METHOD:

  • In a pot add water and tomatoes in halves. Boil for 5 minutes and cover with the lid.  Turn off the flame and remove skin of tomatoes.
  • Let them cool, grind and set aside.
  • In a pan add oil and garlic mince. Sauté and add tomato paste in it. Stir and add all spices.
  • Mix spices well and let sauce cook till thick.
  • Serve with Shahlik and Fried Rice.

CHICKEN MASALA RICE

Rice Boiled1 cup

METHOD:

  • In a pan heat oil . In eggs add pinch of yellow food color and beat lightly. Add in oil and fry.
  • Add rice and fry. Stir well.
  • Add spring onion and chicken. Mix well.
  • Add carrot, all spice powder , nutmeg , mace, salt and mix.
  • Add green chilies and Chinese salt. Mix well and let rice simmer on low flame.
  • Serve hot.
  • I have used cabbage and capsicum, you can also use if you like to.

CHICKEN/ BEEF CHILLI

CHICKEN BEEF CHILIES MThis recipe is easy to make and delicious in taste. You will love the aroma of Hot and Spicy Chilies along with Spiced rice. Must try recipe.

INGREDIENTS:

Beef /chicken1/2 kg
Onion1 medium
Green chilies10-12
Black pepperto taste
Saltto taste
Soya sauce3 tbsp
Vinegar2 tbsp
Corn flour3 tbsp
Chinese salt1 tbsp. (optional)
Chicken stock2 cups
Oilless then 1 cup

METHOD:

  • If you are using beef, then cut length wise and add water, salt and pepper. Boil till tender.
  • If you are using Chicken then cut thin long stripes and set aside.
  • Cut onion slices.
  • Cut green chilies length wise.
  • In a pan add oil and onion, stir till soft.
  • Add meat and chilies. Stir till well cooked.
  • Add all other ingredients and mix well. Now add chicken stock and cook for few minutes.
  • Dissolve corn flour in water and add in meat. Mix till become thick, remove from stove.
  • Enjoy hot .

  • Add salt, ketchup 2 tbsp and lemon juice and stir well.
  • Add water 1/2 cup and cover with lid and cook for 10 minutes till tender.
  • Now add Chili sauce which we prepared first, then vegetables. Stir and add chili garlic sauce 1tbsp and ketchup 1 tbsp and mix well.(You can omit vegetables from recipe)
  • Serve with rice.
