INGREDIENTS:

Flour2 cup
Eggs2
Butter1/2 cup
Castor Sugar1 -1/2 cup
Vanilla essence1 tsp
Buttermilk (1/2 cup milk +1 tsp vinegar)1/2 cup
Food colorsas needed
Baking powder1 tsp
Baking Soda1 tsp

METHOD:

  • Pre heat oven at 150c.
  • Grease muffin tray.
  • In milk add vinegar and stir. Set aside.
  • In a bowl add butter and sugar and beat till creamy.
  • Add eggs and beat again.
  • Now mix flour, baking powder and soda. Add half and beat, add half buttermilk and beat.
  • Add remaining half of flour mix and beat. Add remaining buttermilk (you can take 1 cup if require more) and beat.
  • Divide batter in equal halves and add different colors of your choice in batter. Mix well.
  • Drop 1 table spoon of all colors in muffin case.
  • Bake at 180c for 20-25 minutes.
  • Let them cool and decorate them.

LADO PETHIYAN

Those who are living in Lahore must be familiar with this Chat PAti snack. This recipe is Shireen Anwer’s recipe. Hope you will try it.

INGREDIENTS FOR LADOO:

Gram lentil250 gms
Ajwaen1/4 tsp
Cumin seeds1/2 tsp
Saltto taste
Baking powder1/2 tsp

INGREDIENTS FOR APRICOT CHATNEY:

Dry Apricot125 gms
Water 1 cup
Saltto taste
Red chili powder1/2 tsp
Cumin seeds1/2 tsp
Sugar1/2 cup

INGREDIENTS FOR IMLI CHATNEY:

Dry dates (choare)6 nos
Tamarind pulp/ imli pulp 1 cup
Cumin seeds1/2 tsp
Red chili powder1 tbsp
Saltto taste
Vinegar1 tbsp
Jaggery/ gur1/2 cup

METHOD:

  • Soak gram lentil overnight.
  • In the morning add salt, ajwain, cumin seeds and baking powder in lentil and blend fine in blender.
  • Now fry them in oil and serve with chatneys or you can soak in water and squeeze water with hands.
  • Serve  with Chatneys , radish and onion slices.
  • For Apricot chatney add all ingredients in a pan with water and cook till soft. Remove seeds and grind. Sauce should be thick.
  • For Imli chatney soak dry dates over night and next day remove seeds and cook all ingredients in water. Grind them to make a smooth sauce.
  • Grate radish and carrot or cabbage , slice onion thinly and serve with pethian. You can use Chat masala and green chatney too.

  • Roll the pastry dough and cut squares or any shape of your choice.
  • Brush egg on top and bake at 180c till done.
  • Let them cool and then divide in two halves carefully.
  • Mix nuts in Nutella and Spread this on one half of puff.
  • Cover with other half and Garnish.
  • Keep in refrigerator for few minutes and serve.

INGREDIENTS:

Pizza doughas needed
Chicken boiled and shredded1 cup
Cabbage shredded1/2 cup
Carrot shredded1/2 cup
Capsicum 1/2 cup
Garlic cloves3 chopped
Soya sauce2 tbsp
Vinegar2 tbsp
Slatto taste
Black pepper1 tsp
Chinese salt1/2 tsp
Oil1/4 cup

METHOD:

  • Leave the dough for 2 hours and then prepare filling.
  • In oil add garlic and sauté add all ingredients and cook on high flame.
  • Let it cool down and then divide dough in equal parts.
  • Roll one part and place filling then seal the edges.
  • With kitchen knife start cutting from one side. Do not cut deeply. Prepare all.
  • Brush egg on top and bake at 180c till done.

POTATO PAKORA

potato pakora mMy sister in law Madiha Nauman made these crispy and delicious pakoras one pleasant evening in Skardu after Rain. We enjoye these with Green Temarind sauce/ chutney.

INGREDIENTS:

Gram flour1 cup
Saltto taste
Red chili powder 1 tsp
Baking soda1/4 tsp
Ajwain1/4 tsp
Dry kasuri methi1/2 tsp

METHOD:

  • In gram flour add water and make a smooth thick paste.
  • Add salt, red chili powder, soda, ajwaen and dry methi. You can add 1/4 tsp cumin seeds too.
  • Mix them and set aside.
  • Cut potatoes in thin slices and dip each slice in gram flour. slide in hot oil and fry.

SPECIAL SPRING ROLL

spring roll mThis recipe is a copycat recipe. United bakery is one of a popular bakery in Karachi. I always like there spring rolls and chicken samosa. So I decided to share this awesome recipe with you.  I taught my niece LAIBA to make Rolls. She first time made these and with a perfect shape.

INGREDIENTS:

Chicken boiled n shredded1 cup
Vegetables (capsicum, carrot)1-1/2 cup
Saltto taste
Black pepper1/2 tsp
Soya sauce1 tbsp
All spice powder1/4 tsp
Red chili powder1/2 tsp
Red chili flakes1 tsp
Chinese salt (optional)1/2 tsp

METHOD:

  • Cut all vegetables  very thinly.
  • Boil chicken and shred fine.
  • Now in a large bowl add vegetables, chicken and all spices and sauce.
  • Mix well with hands.
  • Now take roll wraps and make rolls. Seal the edges with egg.

pulki mThis is a special recipe and different too. Last year I have posted Green masala phulki and you all liked it. Now presenting again a must try recipe.

INGREDIENTS:

Green coriander leaves1/4 cup
Green chili 1 large
Garlic clove1 large
Cumin seeds1/4 tsp
Onion1 small
Baking Soda1/4 tsp
Saltto taste
Red chili powder1 tsp or to taste
Gram flour1 cup
Yogurt1/2 kg
Saltto taste
Black Salt1/4 tsp

METHOD:

  • In a blender add onion, green chili, garlic clove, cumin seeds, coriander leaves, blend them with 2 tbsp water.
  • Mix this paste in gram flour and add more to make a thick paste. Add salt , baking soda and red chili powder too. Leave this for 15 minutes
  • Prepare yogurt by adding salt and black salt in it. Mix well. (you can use nestle raita also)
  • Heat oil and drop 1 tbsp gram flour mixture in hot oil. Fry till brown. Take water in a bowl and drop all dumplings in it for 5- 10 minutes. Squeeze water with hands carefully and arrange in a serving dish.
  • Make Green Chutney and Imli Chutney .
  • Pour yogurt on dumplings and then both Chutneys.
  • You can sprinkle Chat masala too.

crispy sandwich mThis recipe I saw in a food group and attracted by cheesy top. After trying these crispy sandwiches I found them delicious and kids friendly. You can serve them in Iftar, evening teas or give these in kid’s lunch boxes.

INGREDIENTS:

Chicken1 breast

Ginger garlic paste1/2 tsp
Boiled Egg1
Ketchup3 tbsp
Mayonnaise1 tbsp
Saltto taste
Black pepper1/2 tsp
Eggs (for coasting)2
Corn flour1 tbsp
Flour2 tbsp

Milk1/2 cup
Crushed corn flakes2 cups

Capsicum and tomato slicesas needed

METHOD:

  • Boil chicken with 1/2 cup water , ginger garlic paste and salt.
  • Let boiled chcken breast cool slightly then wrap in cling sheet and pound this chicken breast with kitchen hammer or any heavy thing.
  • In a bowl add pounded chicken, boiled egg in small pieces, salt, black pepper, ketchup and mayonnaise.
  • Now cut bread slices with a round cutter or any glass.
  • In another bowl beat eggs, corn flour, flour and milk.
  • Take crushed cornflakes in a plate.
  • Arrange all near you ,now mix chicken mixture and spread on one slice with spoon. Spread evenly. Place another slice on it.
  • Dip in egg mixture and then coat cornflakes.
  • Fry in oil and place on paper towel.
  • Now either take cheese slice or shred cheese and place capsicum and tomato on it .
  • Bake them in oven at 180c till cheese melt.
  • Serve with any sauce.

khate aloo mKhate aloo or Potato in tamarind sauce is one of the famous chat recipe in Pakistan. Very easy and delicious. Give this recipe a try 🙂

INGREDIENTS:

Boiled Potatoes2 large (cut in cubes)

Onion1 very small (chopped)
Rai (onion seeds)1/4 tsp
Mustard seeds(methi dana)1/4 tsp
Kalongi ( Negilla seeds)1/4 tsp
Cumin seeds1/4 tsp
Curry leaves3-4
Temarind pulp1 cup
Red chili flakes1/2 tbsp
Red chili powder1 tsp

Green chilies and corianderas needed

METHOD:

  • In a pan add oil and add cumin , rai, kalongi, mustard seeds.
  • Let them crackle and then add curry leaves. Stir and add onion.
  • Sauté onion for few seconds and then add boiled potatoes.
  • Mix red chili flakes, salt, red chili powder in tamarind pulp and add in potatoes.
  • Mix well and then cover the lid for five minutes.
  • Add green chilies and coriander leaves chopped.
  • Serve it with sweet tamarind sauce and sev.

INGREDIENTS:

Pizza doughas needed
Chicken1 cup ,cut in small cubes
Oil2 tbsp
Garlic1 large
Soya sauce1 tbsp
Saltto taste
Red chili flakes1 tsp
Black pepper1 tsp
Cheese, of your choiceas needed
Pepperoni (optional)as needed
Boiled eggs2
Egg1 ,for brushing

METHOD:

  • Prepare Dough from this recipe : PIZZA DOUGH.
  • In 2 tbsp oil add garlic minced and fry for few seconds, add chicken and fry till color change now add salt, black pepper, soya sauce, red chili flakes and vegetables.(capsicum, carrot, onion thinly chopped-as needed)
  • Stir for 2 minutes and remove from flame. Let it cool down completely.
  • Now roll dough and cut small triangles. Arrange them side wise in circle. Now place chicken , pepperoni and boiled egg slices. Spread cheese and cover this filling by pointed end of triangle
  • Press all edges down to form a ring shape.
  • Brush egg on surface and sprinkle sesame seeds.
  • Bake at 180c till nice brown color appear.

chicken cheese balls mTempting….delicious…crispy outside…melting cheese inside….woooow. I am sure you will second me when you try this at your home for your family. I am grateful to my very old Facebook Friend, Amber Saleem whose recipe i have tried and my family loved it.

INGREDIENTS:

Chicken 500 gms
Soya sauce4 tsp
Red chili sauce4 tsp
Saltto taste
Bread slices2
Black pepper1 tsp
Green chillies4
Eggbeaten, half for chicken.
Eggbeaten for coating 1
Bread crumbsas needed
Plain flour2 tsp
Corn flour2 tsp
Mozzarella or cheddar cheese cubesas needed
Oil for frying

METHOD:

  • In a pan add chicken, soya sauce , Chili sauce and salt. Cook till tender and dry.
  • In a bowl soak bread slices in water and then squeeze water with hands .
  • Add bread slices, chicken, green chilies and black pepper in this mixture and blend.
  • Dough will form then add half egg in this mixture and mix well.
  • Cut small cubes of cheese and keep in freezer for few minutes.
  • Make a small flat circle/ Patti and place one cheese cube in it.
  • Cover this cubes completely with chicken mixture.
  • Make all balls.
  • Place bread crumbs in a plate, mix corn flour and plain flour in a separate bowl and beat egg, roll balls in egg then in flours and then in  crumbs. Coat them completely. you can freeze these balls on this stage in a ziplock bag.
  • Fry on medium flame and serve immediately with any sauce.

CHANE/CHOLE BHATURE

INGREDIENTS FOR CHANA /CHICK PEA MASALA:

White chickpeas boiled250g
Ginger2 tsp
Chopped tomatoes4
Chopped onion4
Whole spice mixed1 tbsp
Turmeric powder1 tsp
Red chili powder1 tsp
Coriander powder1 tsp
Saltto taste
Cumin seeds1 tsp
Anar dana/ pomegranate seed2 tbsp
Oil1/4 cup
Green chilies and coriander leavesfor garnish

METHOD:

  • In a pan add oil and onion, fry onion till brown, add ginger  and whole spices ,stir for 1 minute.
  • Now add chopped tomatoes and all other spices and fry till separate oil.
  • Add boiled chickpeas and water 1 cup, cook till oil separates.
  • Garnish with coriander leaves and green chilies.

 

INGREDIENTS FOR BATHURE:

Flour1/2 kg
Baking Soda1/2 tsp
Salt1 tsp
Yogurt1/2 cup
Ghee/butter4tbsp
Sugar1 tbsp
Oilfor frying

METHOD:

  • Mix all ingredients and knead.
  • Set aside for 2-3 hours.
  • Roll them. (keep the size small)
  • Fry in oil and serve with Chole.

CHEESY SCOTCH EGGS

se mPlan something healthy in your brunch today, why not try these tasty Paleo friendly Scotch Eggs. Traditionally Scotch eggs are British picnic classic but you can enjoy these baked Scotch eggs any time of the day. You will find fried version mostly but i love to make baked version just to cut down extra fat and calories.

You can give this to your kids in lunch boxes, you can add veggies in meat which will give a flavor and color to these eggs.

BAKED SCOTCH EGGS WITH CHEESE

 

INGREDIENTS:

Chicken / Beef Mince  1 pao ( i have used boneless chicken)
Onion  1 small
Capsicum  1 very small
Bread crumbs  2 tbsp
Black pepper  1/2 tsp
Salt  to taste
All spice powder   1/2 tsp
Red chili flakes (optional) 1/2 tsp
Hard/ Medium boiled eggs 2
Cheddar cheese as needed
Paprika 1/4 tsp

FOR SAUCE:
Chilli garlic sauce  2 tbsp
Salt  to taste
Red chili powder  1/4 tsp

Black pepper 1/4 tsp

METHOD:

  • If using bone less cubes of chicken or beef then add onion, capsicum, bread crumbs, black pepper, salt, spice powder, chilli flakes in food processor and chop.
  • Now with wet hands wrap eggs with mince.
  • Make balls and set aside.
  • In a small bowl mix all ingredients of sauce.
  • Shred cheese.
  • Assemble all things on counter and transfer Meat big balls in a serving oven prof plate.
  • Pour sauce and cheese on top.Sprinkle paprika and bake at 180c  till cheese melt and mince well cooked.
  • Serve hot.
  • Enjoy bubbling cheesy Scotch eggs with any salsa or dip.

VARIATIONS:

  • If you want fried version then after warping eggs with mince, dip in egg and then roll on bread crumbs and fry in oil. You will get crispy scotch eggs.
  • You can fry them and then sprinkle cheese and sauce then bake. I have done the same.
