OREO CHOCOLATE BITES

cocolate mNo bake Oreo chocolate bites are simply awesome. In no time you can prepare and serve these bites to your kids or friends.

INGREDIENTS:

  • Milk chocolate        1 cup
  • White chocolate     1/2 cup
  • Oreo biscuits           5-6

METHOD:

  • Crush cookies to form a fine powder.
  • Melt chocolates one by one in microwave or use double boiler method to melt chocolate.
  • Fold Oreo in chocolate. Mix well.
  • Grease silicon chocolate mold. Drop Oreo mix in mold with spoon.
  • Tap mold tray on flat surface to remove air bubbles.
  • Keep in refrigerator for 1/2 hour.
  • Remove from mold and serve.

  • I have wrapped in colorful sheets. You can also do the same for your kids.

POTATO SMILEY

potato-smilies-mWhat about trying this recipe for kids lunch box tomorrow. My sons love these smiling faces. You can add more spices if planning to make for hi tea. I have used less spices because of my kids.

INGREDIENTS:

  • Potatoes                                  2 large, boiled and mashed
  • Cornflour                                3-4 tbsp or use more if required.
  • Salt                                           to taste
  • Black pepper                          1 tsp
  • Red chili powder                   1/2 tsp
  • Oregano or mixed herbs      1/2 tsp (optional)
  • Baking powder                       1/4 tsp
  • Oil                                             for frying

METHOD:

  • Mash potatoes very fine. Mix all ingredients and mix well.
  • Now take Aluminum foil / plastic sheet, place on a flat plate, spread potato mixture on foil.
  • Cover with another sheet and roll it with rolling pin or you can spread with your hands too. Spread evenly.
  • Should not be very thick. Keep in refrigerator for 20 -25 minutes.
  • Remove cover and cut with smiley cutter ,if you do not have use knife to cut mouth and straw to make eyes.
  • Heat oil on medium flame and fry smileys till light brown.
  • Enjoy with tea or give in your kid’s lunch boxes.

 

  • You can add  green coriander, all spice powder or Parmesan cheese if you want to give a different touch to your SMILEYS 🙂

POTATO SMILEYS DD

spageti cups mAgain i am posting easy to follow recipe for your family. You can give a twist by adding meatball filling instead of chicken tikka but i know most of people like tikka fillings. So try and give me your feedback.

INGREDIENTS

  • Spaghetti                  1/2 packet , boil it.
  • Chicken                     1 cup  , cut in cubes
  • Tomato paste           1 tbsp
  • Capsicum                   1 small, chop it
  • Cabbage                     1/4 cup
  • Red chili flakes         1/2 tsp
  • Salt                              to taste
  • Tikka masala             2 tbsp, any brand
  • Garlic clove                1 , mince it
  • Red chili powder       1/2 tsp
  • Lemon juice                1 tsp
  • Oil                                 2 tbsp

METHOD

  • Pre heat oven at 150c. Grease muffin pan.
  • Spread spaghetti in muffin case and make some space for filling. Press down with hand. Repeat this with every case and bake at 180c till light brown.
  • In apan add oil and garlic mince, saute for few seconds.
  • Add chicken fry for few minutes. Now add tomato paste, chili flakes, salt, red chili powder, tikka masala, lemon juice. Stir for few seconds.
  • Add vegetable and let it cook for few more seconds. You can adjust spices according to your taste buds. If you want to add carrot or onion then go for it.
  • Give smoke of charcoal, this step is optional.
  • Now arrange spaghetti cups on a serving plate and fill chicken tikka filling in center.

  • Serve hot. You can sprinkle cheese and bake for 5-10 mins if you like.
  • You can also add green coriander and green chilies in filling.

ZESTY CHICKEN BITES

zesty chicken bites mA recipe which your kids will like and ask you to make again and again. You can bake if you are health conscious. Try and reply 🙂

INGREDIENTS:

  • Chicken breast         1/2 kg, cut in small cubes
  • Salt                              to taste
  • Red chili flakes         1 tsp
  • Red chili powder      1/2 tsp
  • Paprika powder        1/4 tsp
  • Garlic powder            1/2 tsp
  • Italian seasoning       1/4 tsp
  • Egg                               1
  • Water                           1/2 tsp
  • Plain flour                   1/2 cup
  • Bread crumbs             1 cup

METHOD:

  • If you want to bake bites then preheat oven at 150c. Grease baking tray.
  • In a bowl beat egg and water. set aside.
  • In another bowl add all ingredients except crumbs.
  • Now dip chicken in egg then roll in spice mixture. Coat crumbs, press with hand and fry in oil.
  • If baking then place on tray and bake  at 180c till done.

ROASTED BEEF SANDWICH

beef sandwh mI can not forget the aroma and cheesy taste of Roasted Beef Sandwich which my mother was making. She adopted the recipe from Chef Rahat’s cooking show. You can use chicken instead of beef.

INGREDIENTS:

  • Bread slices        as needed
  • Beef loaf              1/2 kg piece, take under cut portion
  • Salt                       to taste
  • Tomatoes            2-3, slices
  • Cheddar cheese  slices    as needed
  • Black pepper crushed      as needed
  • Oil                         for toasting and roasting

METHOD:

  • In a pot add 2 tbsp. oil and roast beef loaf from all side till color change to golden brown. Now add water and cook on low flame till tender.
  • Let it cool and cut slices.

  • Cut edges of bread slices and place beef slice then sprinkle salt and black pepper on it.
  • Place tomato slices and cheese slice. Cove with another slice and press lightly.
  • Now pour 1 tbsp. on pan and place sandwich. Cook on low flame till light brown. Turn the side and toast from other side. Pour 1 tbsp also. Toast on low flame.
  • Serve hot with sauce.

FRIED WHITE CHANA CHAT

chat mChat is all age favorite. A perfect healthy snack. I am sharing a very different and lip smacking recipe, try it and give me your feed back.

INGREDIENTS FOR CHANA/ CHICKPEA CHAT:

  • Chickpeas/ White Chana    2 cups, boiled
  • Potatoes                                  2 medium  , boiled and cubed
  • Onion                                      1 medium , sliced
  • Tomato                                   1 large, chop half and cut rings of half tomato.
  • Salt                                          to taste
  • Cumin seeds                          1 tsp
  • Coriander leaves                   as needed, chopped
  • Green chilies                          as needed, chopped
  • Oil                                             1/4 cup

INGREDIENTS FOR CHATNEY:

  • Mint leaves                            1 cup
  • Coriander leaves                   1 cup
  • Green chilies                          3-4
  • Red chili flakes                      1 tbsp.
  • Tamarind/ imli  pulp           1/4 cup
  • Salt                                           to taste

METHOD:

  • First prepare chatney. In blender add all ingredients. Blend well and set aside.
  • In a pan add oil and cumin seeds, let them crackle and add chatney in it. Stir and add Chickpeas, fry for few minutes
  • Now add potatoes, tomatoes (chopped), onion (chopped), mix well and let it simmer for 5 minutes.
  • Garnish with onion and tomatoes rings.
  • You can add more imli pulp according to your taste.
  • Serve hot.
  • Enjoy this delicious chat pati chat with a cup of tea.

CHICKEN TIKKA BREAD BALLS

tikka balls mIf you are looking for any different bread rolls recipe then try this out. Give these in your kids lunch box or serve with evening tea, your family will definitely like them.

INGREDIENTS:

  • Chicken cut in cubes  1/2 kg
  • Onion, chopped           1 small
  • Tikka masala                3 tbsp.
  • Lemon juice                  6 tbsp.
  • Oil                                   2 tbsp.
  • Bread slices                   10-12
  • Egg                                  1
  • Bread crumbs               as needed

METHOD:

  • In a bowl add chicken, tikka masala, lemon juice. Mix well and leave it for 1/2 hour.
  • In a pan add oil and onion, sauté and add chicken. Fry till tender. Let it cool completely.
  • Now remove corners of bread and spray water lightly on slice. Squeeze extra water with hands and place chicken tikka in center.
  • Cover it with bread and make a shape of a ball.
  • Dip in egg and roll in crumbs.
  • Fry in oil.

MIRCH ROLLS

INGREDIENTS:

  • Germen chilies (large size) 6-7
  • Chicken mince                       1 cup
  • Garlic paste                            1 tsp
  • Onion                                      1 small , chopped
  • Crushed red chilies               1 tbsp.
  • Salt                                           to taste
  • Turmeric powder                   1 tsp
  • Cumin seeds                           1/2 tsp
  • Green chilies                           2 , chopped
  • Chat masala                            1 tsp
  • Coriander leaves                          1/4 cup , chopped
  • Samosa wrap/ patti               6-7
  • Egg                                            1, beat it
  • Oil                                              for frying

METHOD:

  • In a pan add 3 tbsp. oil and sauté garlic, add onion and stir till soft.
  • Add mince and all spices. Fry well and add green chilies and coriander. Let it cool down.
  • Now slit open chili from center and fill cooked mince.
  • On samosa wrap brush egg and wrap on chilies.
  • Fry in oil. Serve with ketchup.

alsi ladu mSpecial winter season recipe for you. Its not also healthy but also very nutritious. Alsi/ flax seeds or Linseeds are rich in Omega 3 and Omega 6 which can control your cholesterol.

INGREDIENTS:

  • Wheat flour            1 cup
  • Alsi/ flax seeds      1 cup
  • Sugar(grind it)       3/4 cup or to taste
  • Cardamom powder   1 tsp
  • Gond                        50 gms
  • Almond                    1/2 cup, chopped
  • Pistachio                  1/2 cup, chopped
  • Dry date/ choara    1/4 cup, chopped
  • Coconut                    1/4 cup , grated
  • Desi ghee                 1 cup

METHOD:

  • Dry roast wheat flour and set  aside.
  • In 2 tbsp. ghee fry gond, it will pop. Remove and spread on paper towel.
  • Clean Alsi seeds and grind them. Roast them in 2 tbsp. ghee. Set aside.
  • Chop all nuts and set aside.
  • Grind gond.
  • Now assemble all ingredients on work place near to stove.
  • In a pot add ghee and wheat flour stir for few seconds and add all ingredients one by one.
  • Mix well. If you want to add more ghee you can add.
  • Remove from stove and let it cool a bit.
  • Check if you can handle the mixture to make balls then start making pinni/ ladu. If you feel it hot then wait for few more minutes then make ladus.

  • Mix all ingredients (except eggs) in a large bowl and set aside.
  • Cut shapes of bread and spread mixture on it.
  • Dip it in egg mixture and shallow fry till light brown.

  • Boiled and mashed Potatoes    4 large
  • Salt                                                  to tatse
  • Red chili powder                          1 tsp
  • All spice powder                           1/2 tsp
  • Green chilies and coriander chopped  2 tbsp. each
  • Chicken or beef mince                 1 cup
  • Oil                                                     2 tbsp.
  • Onion                                               1 small chopped
  • Ginger garlic paste                        1 tsp
  • Salt                                                   to taste
  • Red chili powder                           1/2 tsp
  • Crushed red chilies                       1/2 tsp
  • Coriander and green chili chopped   2 tbsp.
  • Egg                                                    1, beaten
  • Bread Crumbs                                 as needed

METHOD:

  • Mash potatoes and add salt, red chili powder, all spice powder, green chilies chopped and coriander leaves. Mash well and set aside.
  • In a pan add oil and onion, sauté for few minutes and add ginger garlic paste, stir and add mince.
  • Add all spices and stir.
  • Now add 2 tbsp water and cover the lid till water dries.
  • Add coriander and green chilies. Mix and let it cool down.
  • Make Patti of potato and spread mince on it cover with another potato Patti.
  • Seal ends of Patti with your hands.
  • Dip in egg and roll in crumbs.
  • Shallow fry till light golden.
  • Serve with ketchup.

METHOD:

  • Thaw puff pastry and dust your working place.
  • Roll puff pastry. Cut different shapes, cut a thin rectangle on one side of puff shape and place on baking tray.
  • Bake till done.
  • Let them cool down and spread icing sugar topping.

  • Make icing sugar topping by adding 1/2 cup icing sugar, 1 tsp water and food color. Mix well and spread on puffs.

meethi tikkia mVery famous snack of Pakistan, usually people make these tikkian on special occasions. You can store them in air tight container for a week. Here in Punjab region villagers distribute these on child birth or on marriages. They named it Gogi/Pakwan.

CHAT BITES MLooking for a perfect finger food for your party ….. then surely you will love this easy and crispy veggie treat. I have used Peek Freans Butter puffs veggie crackers. Very tasty and delicious in taste. This recipe is with traditional touch.Hope you will like it.

INGREDIENTS:

Chick peas1 cup boiled
Potato boiled and cubed1
Tomato cubed1
Onion chopped1 small
Saltto taste
Cumin seeds crushed1/4 tsp
Red chili flakes1/2 tsp
Green chilies chopped1 tbsp
Green coriander leavesfew
Imli/ Tamarind sauce (you can use tomato ketchup too instead of imli sauce)1/4 cup

  • Mix all ingredients and Imli sauce. (do not mix green sauce)
  • Arrange biscuits on platter and just before serving place spoonful of chickpea mix on it.
