CREAM PUFF MThese home made Cream Puffs are light and melt in mouth. Your family will surely like these puffy, creamy and delicious puffs.

INGREDIENTS:

Plain flour1 cup
Butter1/4 cup
Water1 and 1/4 cups
Eggs3
Cooking or milk chocolate for topping
Creamas needed
Vanilla essence as needed
Vanilla pudding1 packet
Whipped Cream1 cup
Cream cheese2 tbsp

METHOD:

  • Place butter and water in a pan and bring water to the boil. Stir constantly till butter melts.
  • Remove from flame and add sifted flour in it, use hand whisk to mix smoothly.
  • Again cook till mixture leaves the sides of the pan and form a smooth ball.
  • Allow the mixture to cool slightly and add eggs one by one.
  • Beat with electric beater till smooth mixture form.
  • Fill a piping bag to pipe 7-10 cm lengths for éclair.
  • Make small balls for cream puffs or profiteroles.
  • Bake at 220c for 10-15 minutes or till they look brown and crispy.
  • Beat cream by using vanilla essence till fluffy, fill in the piping bag.
  • Melt chocolate in microwave or double boiler.
  • Make a hole and fill in the cream or cut from center and fill the cream. Dip upper shell in chocolate.

  • Keep in refrigerator for few minutes before serving 🙂

  • For Éclair filling : Cook pudding according to instructions on the box and let it cool a bit.  Now mix in whipped cream and cream cheese mix well.

PITA PIZZA CAKE

pita piza cake mThis small size pizza cake is easy to make and use readily available ingredients. I have seen this recipe of Pizza Cake somewhere on Facebook page. In original recipe they used pizza dough to make layers and I have replaced pizza dough with Pita Bread.

  • Marinate chicken with Tikka masala. For Tikka Marination check this link: CHICKEN TIKKA PIZZA.
  • Cook the chicken and set aside.
  • Take pita bread as many as you required. I have used 3.
  • Spread pizza sauce and chicken on first layer and sprinkle cheese.
  • Cover with second layer and do the same process.
  • Repeat this in all layers.Press with hand. On top layer sprinkle cheese, oregano and olives.

  • Bake at 180c till cheese melt and nice brown color appear.

  • Wrap a cake slice in cling sheet and give in your kids lunch box. They will surely love it 🙂

salad on apple mA perfect appetizer recipe which is healthy and delicious, this recipe doesn’t need a recipe 🙂 You can change ingredients according to your taste buds.

INGREDIENTS:

Apples2-3
Chicken, boiled and shred1/2 cup
Cabbage1/4 cup
Carrot, grated1
Capsicum, chopped1 small
Dried craneberries1 tbsp
Cream cheese2 tbsp
Mayonaise1/2 cup
White pepper1/4 tsp
Black pepper1/2 tsp
Saltto taste
Oliveas needed
Red chili flakes as needed

METHOD:

  • Cut all vegetables and mix all other ingredients in it.
  • Keep it in refrigerator.
  •  Just before serving cut apple slices and place  spoonful salad on slice and serve.
  • You can dip apples in lemon water to avoid browning of slices. Instead of mayonnaise use yogurt if you like.

frozen paratha patties mFriends have you ever tried making patties with frozen parathas, If no than you should try it today. Because its not only easy but very close to puff pastry patties. Thou these patties are not exactly the same as puff pastry one but i must say these are super crisp and delicious.
You can make French hearts and baqar khani from these parathas too.

INGREDIENTS:

Frozen Parathas of any brand.as needed
Chicken fillingas needed
Egg , beaten1

METHOD:

  • Prepare chicken filling from this recipe : Chicken fried sandwices.
  • Now take out frozen parathas and remove sheet, dust flour on surface and place on it. Let it thaw for few seconds and cut shape from cutter. Remove sheet on first place otherwise paratha will stick with sheet. In that case remove it and make a parah again and roll it.
  • Place filling and cover with another piece.
  • Brush egg wash and place on baking tray.
  • Bake at 180c till nice color appear.
  • Serve with ketchup.

CHICKEN FRIED SANDWICH

fried sandwich mI assure you this recipe is very different from other fried sandwiches and also very delicious. You can add this in your kid’s lunch box menus 🙂

INGREDIENTS:

Chicken, boiled and shred1/2 kg
Onion, chopped and squeezed2 large
Soya sauce1 tbsp
Black pepper1 tsp
Saltto taste
Green chilies, crushed1 tbsp
Chicken powder1 tsp
Ginger arlic paste1 tbsp
Milk1 cup
Egg2
Bread slices8-10
Mayonaiseas required
Cucumber and tomatoes, choppedas required
Plain Flour1 and 1/2 tbsp

METHOD:

  • In a pan add oil and ginger garlic paste, saute for few minutes.
  • Rough chop onion and add in oil, fry till light brown, add green chilies and stir.
  • Add chicken and chicken powder. Mix well.
  • Add salt and flour, stir well for few minutes to remove flour smell.
  • Add milk and stir vigorously.  Cook till milk dries and than add black pepper and soya sauce. Mix well.
  • Let it cool.
  • Cut sides of bread and spread ketchup on slice. Spread chicken mixture on other slice and cover with ketchup spreaded slice.
  • Beat eggs and dip slices in egg  and than in crumbs.
  • Fry in medium hot oil.
  • After frying cut slices in triangle and spread mayonnaise on corner. Sprinkle cucumber and tomato chopped on edges.
  • This will give a very different taste to your sandwiches.

  • You can freeze them and when just thaw and dip in egg and fry when required.

ZEBRA CAKE

INGREDIENTS:

Flour2 cups
Eggs 4
Sugar1 cup (grind it)
Milk1 cup
Oil1 cup
Baking powder1 tbsp
Cocoa powder2 tbsp
Vanilla essence1 tsp

METHOD:

  • In a bowl add eggs and sugar , beat till creamy. Now add oil and milk and beat again. (Add milk in 1/2  quantity first if required more than add more)
  • Mix flour and baking powder and add in egg mixture, beat well and add vanilla essence. Batter should not be runny.
  • Divide batter in two portions and add coco powder in one portion. mix with spoon or beater.
  • Take a 9″ round pan and place paper liner, grease it now take a deep spoon like ladle and fill it with white batter pour in the middle of the pan.
  • Now take separate spoon and fill in cocoa batter in it. pour on white batter.
  • Do not tilt pan or spread with spoon. Just keep on pouring white and cocoa batter alternately till finish batter.
  • Place pan in Preheated oven at 180c till cake done.

MINCE STUFFED BREAD FLOWER

bread flower mmA long ago I have posted the recipe of Bread Roses, this recipe is a bit similar to that but believe me you will like the taste and presentation of this stuff bread. Inspired recipe from a Facebook page 🙂

INGREDIENTS FOR DOUGH:

Plain flour2 cups
Salt1 tsp level
Sugar1 tsp
Egg1
Instant yeast2 tsp
Oil1 tbsp

METHOD:

  • Add all dry ingredients and mix, now add egg and mix.
  • Add water and start kneading. Knead and place in a large bowl. Keep it on a warm place for 2 hours.
  • It will be double in size.
  • You can use puff pastry for this recipe too.

INGREDIENTS FOR FILLING:

Chicken or beef mince less than 1/2 kg
Ginger garlic paste1 tsp
Saltto taste
Turmeric powder1/2 tsp
Crushed red chilies1/2 tsp
All spice powder1/2 tsp
Cumin seeds1/4 tsp
Coriander leaves and chilies chopped3 tbsp
Oil2 tbsp

METHOD:

  • Add oil in a pan and add onion, saute till change color. Add ginger garlic paste and stir.
  • Add mince and all spices, stir till mix well.
  • Let it cook for few minutes. Remove from stove when water dries.
  • Let it cool completely.

ASSEMBLING:

  • Divide dough in 8-10 balls and Roll out a ball and cut with a round cutter, you can use doughnut cutter too.

  • Now make a center of flower. Take a round rolled dough and make cuts diagonally , leaving center intact.

  • Place a small amount of filling in center , take one section and place on filling, take opposite side of dough and brush water on corners and place on filling, do the same with remaining two sections.

  • Now either use samosa/ gujia maker for petals or just roll dough and cut with round cutter and place filling on one side brush water on the corners of  round now cover with opposite side and seal with fork.

  • Make petals with the same method.

  • Now take a cake pan and place a liner, so it will be easy to take out flower.
  • Arrange center flower in center and brush water on each petal and arrange on the side of central part.

  • Brush egg yolk and sprinkle sesame seeds on petals.
  • Bake in preheated oven at 180c for 20-25 minutes approx or till done.
  • For beautiful brown color of petals turn off lower grill and turn on upper grill.
  • It will take just 5-10 minutes and color will be changed.

CHICKEN CHEESE THREAD BOMBS

INGREDIENTS:

Boiled potatoes6-7 large
Red chili powder1 tsp
Saltto taste
Chicken mince1 cup/ 1 pao
Oil1 tbsp
Garlic cloves2-3
Onion, chopped1 small
Saltto tase
Black pepper1/2 tsp
Red chili powder1 tsp
Cumin powder1/2 tsp
Pizza cheeseas needed (optional)
Wonton/ samosa wrapsas needed
Eggs 2, beaten

METHOD:

  • Boil potatoes and mash them, add salt and red chili powder and mix well. Set aside.
  • In a pan add oil and garlic mince , stir for few seconds and add onion. Cook till soft.
  • Add chicken mince, red chili powder, salt, pepper and cumin. Fry till done.
  • Let it cool.
  • Cut pizza cheese in small cubes of 1 inch.
  • Now take mash potatoes and make a patti, place mince and cheese cube in center and cover with mash potatoes.
  • Make a ball and set aside.
  • Cut thin strips from wonton/ samosa wraps.
  • Dip bombs in egg and wrap thread/strips on each bomb.
  • Fry in oil.

CREAMY CHICKEN CASSEROLE

creamy casserole mA perfect comfort meal with simple recipe and ingredients, original recipe is of Ms. Rukhsana Lone, with potato base but you can give a layer of pasta also. I felt so much proud and glad when i tried this first time on a Family Hi tea and believe me it was well appreciated by all guests.

INGREDIENTS FOR MASHED POTATO LAYER:

Potatoes1/2 kg
Cream 1 tbsp
Butter1 tbsp
Black pepper1/4 tsp
Mixed herbs1/4 tsp
Salt1/2 tsp

METHOD:

  • Boil potatoes and peel skin.
  • Mash with masher and add cream, butter, salt, black pepper and mixed herbs. Mix well.
  • Set aside.

INGREDIENTS FOR CHICKEN:

Chicken boneless, cut in strips1/2 kg
Butter50 g
Fresh garlic cloves, chopped2
Saltto taste
Red chili flakes1 tsp
Green onion, white part , chopped3
Jalapeno pepper, chopped3-4
Mushrooms, chopped3-4
Olive oil1 tbsp

METHOD:

  • In a pan add oil and garlic, saute for few seconds and add chicken strips, stir till color change.
  • Add chili flakes, salt,onion, mushrooms and jalapeno pepper, stir fry them.
  •  Cook till chicken tender.

INGREDIENTS FOR CREAMY SAUCE:

Cream1 cup
Thai chili sauce/ Tabasco sauce 1/2 cup or to taste

METHOD:

  • In a pan heat cream, hot sauce/ Tabasco sauce and pinch of salt. Mix well and remove from heat.

INGREDIENTS FOR GARLIC BREAD:

Garlic powder1 tsp
Bread slices6-7 or as needed
Mixed herbs1/2 tsp
Butter5 tbsp
Mozzarella and cheddar cheese1 cup, for topping

METHOD:

  • Cut triangles of bread slices.
  • Mix garlic powder, mixed herbs and butter in a small bowl.
  • Butter each slice and set aside.

ASSEMBLING:

  • In a Pyrex dish of any shape first spread mashed potato mixture.
  • Now spread chicken on potatoes.
  • Spread creamy sauce on chicken.
  • Arrange bread slices on the side of the dish.
  • Sprinkle Mozzarella cheese, olives 6-7 , mixed herbs and chili flakes.
  • Bake at 180c in preheated oven till cheese melt.
  • Serve hot.
  • You can adjust spices according to your taste buds I have used less spices because of my kids.

CHICKEN CONES SAMOSA

INGREDIENTS:

Chicken, boiled and shredded 1 cup
Green chilies, chopped2-3
Spring onion, chopped2 sticks

Black pepper1/2 tsp
Chili garlic sauce2 tbsp or according to taste.

METHOD:

  • In a large bowl mix all ingredients, adjust spices according to your taste.
  • Take square shape Roll/ Wonton wraps, make a cone, seal edges with flour paste. Fill in the mixture.
  • Close the upper part and use flour paste to seal it.
  • Fry in oil.

CHICKEN FAJITA PASTA BAKE

fajita pasta bake mChicken Fajita pasta is one of my favorite meal, fully loaded with crispy chicken, crisp vegetables and creamy sauce is utterly delicious. Very easy and quick recipe.

INGREDIENTS FOR TACO/ FAJITA SPICE:

Smoked paprika or red chili powder2 tbsp
Black pepper2 tbsp
Garlic powder1 tbsp
Cumin, grounded1/2 cup
Salt1/2 tsp

INGREDIENTS FOR PASTA:

Chicken breast, cut in cubes or stripes.2
Pasta 2 cups
Bell pepper1, cut in cubes or stripes
Cabbage1/2 cup, thinly sliced
Onion1 medium, cubed
Cream1/2 cup
Chicken broth1/4 cup
Tomato1 cubed
Green chillies3-4, chopped
Garlic cloves2-3, minced
Oil2 tbsp
Cheeseas needed
Taco/ Fajita seasoning 2 tbsp or to taste
Oreganoas needed

METHOD:

  • Prepare Fajita or Taco spice first, it’s very easy to make.
  • Mix all ingredients of Fajita spice, store in a jar for seasoning your meat when required.
  • In a bowl add chicken cubes or strips and fajita spice. Mix well.
  • In a pan add 1 tbsp oil, and place chicken in single layer let it cook till nice brown color appear, turn the side and cook. Set aside.
  • Boil pasta and drain it, now in pasta add cream, salt and broth, cook till become thick, set aside.
  • In a pan add 1 tbsp oil, stir fry garlic and fry all vegetables including tomato.
  • Mix vegetables and  chicken in pasta and toss them. Adjust salt and spices according to your taste buds.
  • In a oven proof dish transfer pasta and sprinkle grated cheese and oregano.
  • Bake in preheated oven at 180c till cheese melt.
  • Serve hot.
  • Enjoy.

INGREDIENTS FOR CHICKEN MARINATION:

Chicken boneless1 pound
Black pepper 1/2 tsp
White pepper1/4 tsp
Red chili flakes1/4 tsp
Soya sauce1 tbsp

INGREDIENTS FOR FILLING:

Buns3
Carrot1 small, chopped

Ice burg lettuce1 leaf

Ketchup3-5 tbsp. To taste

METHOD:

  • Take buns and cut them in halves, create a pocket very carefully with knife.
  • In 1 tsp oil fry marinated chicken and keep on frying till tender. Let it cool and shred it. You can freeze this chicken for future convenience.
  • Chop all vegetables, in 1 tsp oil sauté for few seconds. Now add chicken also. Let it simmer for a minute.
  • Add ketchup according to your taste. Even you can adjust spices according to your taste. You can add more pepper or salt if required.
  • Fill buns with mixture and join both parts together, place on baking tray and put a cheese slice on top. If you don’t have slices than sprinkle shredded cheese.
  • Sprinkle oregano, onion ring and garlic powder or olives if you like.
  • Bake at 180c till cheese melt.
  • You can grill it by covering a lid on stove as well.

FRENCH HEARTS

french hearts mFrench hearts are light and tasty biscuits, you can easily make them if you have puff pastry at your home. Try them today and inspire your family 🙂

METHOD:

  • Roll puff pastry as thin as you required.
  • Now roll pastry from both sides towards center, cut slices and place on baking tray.
  • Press each piece from your palm.
  • Brush egg wash on each pastry and sprinkle granulated sugar. Lightly press it down.
  • Bake in preheated oven at 180c till done.

NARGISI KEBAB

nargasi-kebab-mThis recipe is taught by a friend and Its an inspiration from Nargisi koftas. Difference is mince mixture which I have used in kebabs. Serve these kebabs with Green Chatney or yogurt mint sauce.

INGREDIENTS:

Beef / mutton boneless1/2 kg , cut in cubes
Gram lentil/ chana dal1 cup
All spice powder/ garam masala1 tbsp
Saltto taste
Whole red chilies6-7
Ginger garlic paste1 tbsp
Onion1 medium, sliced
Egg1, for adding in mince
Hard boiled eggs4-5
Coriander leaves1/4 cup
Mint leaves2-3 tbsp
Green chilies chopped2-3

METHOD:

  • In a pot add all ingredients and cook till meat and lentil tender.
  • Let the water dries and cool completely.
  • Now chop it and add eggs, coriander and mint leaves and green chopped chilies.
  • Mix well and set aside.
  • Boil eggs and remove skin.
  • Cover the egg with mince and Fry in shallow oil.

INGREDIENTS FOR CHICKEN STRIPS:

Chicken strips1/2 kg, cut in thin strips
Oil1/4 cup
Soya sauce3 tbsp
Mustard paste/ paste1 tsp
Black pepper1 tsp
Salt1 tsp or to tatse
Red chili flakes1/2 tsp
Garlic chopped1 tbsp
Lemon Juice1 tbsp
Coriander chopped2 tbsp
Egg2-3
Corn flour1/4 cup
Flour1/2 cup
Bread crumbs2 cups
Sesame seeds1/4 cup
Oilfor frying

METHOD:

  • Make strips from fillet.
  • In a bowl add oil, soy sauce, mustard powder or paste, black pepper, salt, red chili flakes, garlic, lemon juice and fresh coriander chopped. Mix all ingredients.
  • Add chicken strips in this mixture and coat well.
  • Marinate it for 40-45 minutes.
  • In this mixture add flour, corn flour and egg.
  • Mix well to avoid lumps formation.
  • In a bowl mix sesame seeds and bread crumbs (use PANKO brand or any good quality brand for beautiful look)
  • Heat oil take a strip roll in crumbs, press one side and coat crumbs , turn the side and coat again.
  • Deep fry strips. Let it cook for few minutes do not use spoon for turning them. When one side cooked, turn the side and cook till light golden color appear.
  • Serve with Ranch dip.

SANDWICH MAKER CAKE

INGREDIENTS FOR BROWNIE CAKE:

Flour 1 cup
Castor sugar/ granulated sugar1/2 cup
Eggs2
Baking powder1/2 tsp
Cocoa powder1/4 cup
Vanilla essence1/2 tsp
Nutella 2 tbsp , extra for filling
Milk1/2 cup
Oil1/2 cup

METHOD:

  • Sift all dry ingredients and set aside.
  • In a bowl add eggs and sugar. Beat well and add vanilla and milk. Beat well.
  • Add dry ingredients in egg mixture and mix.
  • Add oil , beat. Mix nutella.
  • Preheat sandwich maker for  1-2 minutes. Now pour 2-3  tbsp mixture in each greased half.
  • Fill all four and close the lid.
  • Check after 3-4 minutes with toothpick. If not done, give 1-2 more minutes.
  • Let them cool down and cut from center. Fill Nutella inside and serve.
  • Wrap with cling sheet and give this to your kids in lunch box.

Flour1/2 cup
Custard powder of any flavor2 tbsp
Baking Powder1 tsp
Butter1/4 cup
Egg1
Castor sugar1/4 cup
Vanilla essence1/4 tsp
Milk2 tbsp

METHOD:

  • Sift all dry ingredients. Set aside.
  • In a bowl beat butter and sugar till creamy. Now add egg and beat well.
  • Add vanilla essence and mix, Now start adding dry ingredients.
  • Add half quantity and mix, add milk and beat. Now add remaining half and beat.
  • Grease all halves of sandwich maker.
  • Preheat for 2-3 minutes and pour batter till each half fill.
  • Close the lid and bake for 3-4 minutes.
