This super easy recipe is a blessing from my mom , i saw her making this when i was a small kid, now i am making this for my kids….:) This colorful and time saving recipe you can add in your Ifftar Party Menus or  can add in your Eid Menus.I am sure you will like it….

INGREDIENTS:

Dessicated coconut1 cup
Powder milk1 cup
Condensed milk6 tbsp
Crushed pistachioas needed

METHOD:

  • In a large bowl add all ingredients and mix well.Roll them and set aside.
  • I have used colored coconut for coating .You can take 2 tbsp dessicated coconut in a zip lock bag and add 2 drops of food color of your choice now shake it well , roll your coconut rolls one by one and wrap them in a colored paper or cling wrap.
  • Enjoy these easy coconut rolls…:)

Vanila With Fresh Fruit
Sounds interesting, isn’t it..? I saw my mother making these pakoras frequently in Ramadan with mint chutney, I have done some alterations to my mother’s original recipe. You can say my family recipe with my touch…:)

INGREDIENTS:

Mong lentil1 cup
Saltto taste
Red chilli powder1 tsp
Red crushed chillies1/2 tsp
Whole coriander crushed1 tsp
Baking soda1/4 tsp
Green coriander3 tbsp
Green chilli chopped2 tsp
Onion chopped1 small

METHOD:

  • Soak moong lentil overnight or 4-5 hours and then in a food processor grind it very finely, add salt and red chilli powder also.
  • Transfer into a bowl and then add 1/2 tsp soda, crushed coriander, crushed red chillies, onion, green coriander, green chilli.
  • Mix all well and then with wet hand pick and make a small long shape with impressions of your fingers on it ,slide it in oil. Oil should not be very hot.
  • Fry till golden and crispy .
  • Serve with any sauce or mint chutney.

MASH KI DAL KE BARE/DAHI BHALLE
My mother was an expert in making these Dahi baras, I never tried these in front of her but after marriage when I tried these first time my joy was unexplainable because they were so perfect. After my mother whenever I make baras, they remind me of her delicious baras and sweet and sour sauce.

INGREDIENTS:

White lentils/ mash ki dal/urad dal1 cup
Baking soda1 tsp
Saltto taste
Red chili powder1/2 tsp
Cumin seeds/zeera1/4 tsp
Onion 1 small
Yogurt1/2 kg

METHOD:

  • Soak lentil in  water with  baking soda for 4-5 hours (in summers 3 hours are enough).
  • Now wash it and drain water completely .
  • In a food processor add lentil,onion,cumin,salt,red chilli powder and grind it till smooth.Do not add water at all on this stage otherwise baras will break during frying.
  • Keep it aside for 10 minutes ,now wet your hands and make Baras in a form of flattened circles/tikkia.Slide it medium hot oil and fry till golden brown.
  • Put these fried Baras in water .Meanwhile prepare yogurt sauce.
  • Whisk yogurt and add salt and red chilli powder in it,according to your taste.
  • Squeeze water from Baras and slide them in yogurt sauce .Keep them aside for 10 more minutes in this way they will soak yogurt sauce also.
  • Serve with Imli  sauce and chat masala , enjoy these tasty and delicious DHAI BARAS…

He virtually fought single handedly to carve out Pakistan.
It is an auspicious occasion for the Pakistani nation that calls for evaluation of our failings and achievements to seek guidance for the future. Pakistan has endured many ups and downs in the course of its history over the past six decades.I am hoping for a bright future for my kids and this poem is dedicated to my new generation…

Stand tall oh mighty oak, for all the world to see,

INGREDIENTS:

Doughnut doughas needed
Oreo biscuitsas needed
Icing sugaras needed/1 cup
Food colorfew drops
Water 1-2 tbsp

METHOD:

  • Knead the dough, leave it for 2-3 hours at warm place,  before baking or frying add crushed Oreo biscuits in it.Again knead them.
  • In icing sugar add 2 drops of green food color and 1 -2 tbsp water ,mix well and dip doughnuts in the icing.
  • sprinkle crushed Oreo biscuits on top.
  • You can dip doughnuts in chocolate and then sprinkle Oreo.Choice is yours.
  • Enjoy delicious Oreo glazed doughnuts.

CHICKEN TEMPURA

Chicken tempura is a hot favorite among kids and I picked this outstanding recipe from Chef Zakir’s cook book. Most interesting thing is that I have used same recipe for Prawns and fish tempura as well. I am sure you will like this.

INGREDIENTS:

Chicken300gms
Plain flour2 tbsp
Corn flour3 tbsp
Egg1
Garlic paste2 tbsp
Baking sodaa pinch
White pepper1/4 tsp
Black pepper1/4 tsp
Saltto taste
Oilfor frying

METHOD:

  • Cut chicken in stripes and mix all ingredients and marinate in the batter for 1/2 hour (except baking soda). In the original recipe it was mentioned that make batter and dip stripes in the batter and fry them. I tried the method which I have mentioned and the result was very nice.
  • Before frying add baking soda and mix well.
  • Roll every single piece in dry flour and fry in oil.
  • Serve with ketchup…

VEGGIE PIZZA - SPRING THEME
Sounds interesting, isn’t it? Actually in this recipe I have used pizza dough, you can use puff pastry as well. Then cut the shapes and bake them, spread veggies of your choice and enjoy this easy and healthy snack with tea. A perfect lunch box recipe as well.

INGREDIENTS:

Pizza dough/puff pastryas needed
Spread/ cream cheesevegetable,chicken,olive ,anyone of your choice
Mix vegetables ,of your choice(Carrot,cucumber,onion,capsicum) dicedas needed
Oilfor greasing tray

METHOD:

  • Use pizza dough or puff pastry and roll it, it should be very thin.
  • Cut with knife or cutters of any shape of your choice and bake it till golden and crispy.
  • Spread any spread ( vegetable, chicken, olive ).
  • Cut all vegetables in very small cubes and spread on your leaves and flowers.
  • Serve with sauce.

This recipe is specially for my son’s friends. If you ask any kid about their favorite snack, they will probabely tell you… Nuggets. Veggie nuggets are extremely healthy for you and your kids. Interesting thing is that you can add any vegetable of your choice.

INGREDIENTS:

Potato (boiled)2 large
Carrot1 large
Peas1/4 cup
Broccoli1/4 cup
Saltto taste
Black pepper1/2 tsp
Garlic powder1/4 tsp
Onion powder1/4 tsp
Plain flouras needed
Bread crumbsas needed
Eggs1-2
Oilfor greasing and spraying.

METHOD:

  • Boil all vegetables, with masher mash them completely and add all spices. Mix well.
  • Spread the mixture on a tray of 1/2 inch thickness and keep this in freeze for 1-2 hours. Then take it out and cut shapes from cookie cutter, place them on butter paper. Again keep them in freezer.
  • Grease your baking tray and preheat oven.
  • First coat them with flour then with egg and in the end with bread crumbs. Place on baking tray and spray oil on nuggets.
  • Bake them first few minutes from one side then turn the side and bake till golden color appear.
  • Serve with sauce.

SPICY AND CRISPY BAKED CHICKPEAS
Low fat and highly healthy snack or can be a lunch box item as well. Spicy and crunchy chickpeas are very easy to make, you can make them in just 10 minutes. Boil chickpeas and freeze them when needed just microwave them, add spices and  your crispy and spicy snack is ready…:)

INGREDIENTS:

Chickpeasas needed
Saltto taste
Red chili powderas needed
Crushed red chilliesto taste
Chat masalato taste
Oiljust to grease tray.

METHOD:

  • Boil chickpeas and drain water now with paper towel pat dry them .
  • On baking tray spray oil and spread chickpeas, sprinkle salt, red chili powder, crushed red chili and chat masala.
  • Toss them so that all spices coat on chickpeas evenly.
  • Bake at 180c till chickpeas become brown n crispy.

BREAD GULAB JAMUN

Gulab Jamun
A very easy sweet dish. You just need few ingredients and within 10 minutes you can make super easy and dooper delicious jamuns. I will tell you the recipe of bread jamun with sugar syrup as well, but today enjoy my favorite snack time recipe.

INGREDIENTS:

Bread slices4
Sugar (grind it)as needed/to taste
Dessicated coconut1/2 cup
Cardamom powder1/4 tsp
Egg1
Mixed nuts(chopped)1/4 cup (optional)
Oil for frying
Milk1-2 tsp

METHOD:

  • Remove the corners of bread and crumble this first. Now add all ingredients and mix well.
  • Dough should be soft and pliable so you can easily make small balls. You can use milk if your dough is a bit dry .
  • Fry these on medium flame because bread cook so quickly and turn their side constantly.
  • Roll them in dessicated coconut and serve hot.

Small bite size pizzas, but on potato base.. isn’t it interesting…? If you want to have pizza but have no time to make dough then this is a very good option. Just slice up potatoes and top with ingredients and bake for few minutes. Your easy peasy pizza is ready to serve…:)

INGREDIENTS:

Large size potatoes2
Chicken boiled 1/2 cup
capsicum1 medium
Saltto taste
Black pepper 1/4 tsp
Oregano1/4 tsp
Pizza sauceas needed
Cheese as needed
Oilfor brushing

METHOD:

  • Peel off potatoes and make slices crosswise. Slices should not be thin.
  • Give them a boil of 5 minutes only and then spread on a tray.
  • Brush your baking tray with oil and place slices on tray.
  • I sprinkled salt and black pepper on slices also but this step is completely optional.
  • Mix chicken, capsicum thinly cubed salt, pepper and mix all ( you can use mushrooms, carrot, peas anything you like)
  • Spread pizza sauce on slice and then add spoonful of mixture.
  • Sprinkle shredded cheese and oregano.
  • Bake at 170c till fork tender and well cooked.

If you are expecting guests at evening tea and you have no time to make things with lengthy procedures then these nutty boats can be your first choice. Just grab few nuts and toss them in honey. Interesting thing is that you do not required any measurement and only three ingredients are involved in this dish.

INGREDIENTS:

Bananas as needed
Honey as needed
Nuts as needed

METHOD:

  • Peel bananas and cut in two halves, scoop out inner pulp to give a shape of boat.
  • Mix all nuts with honey and  pour spoon full into banana boat.
  • Ready to serve and healthy to eat. Good for your kids.

INSTANT MUG MAC & CHEESE WITH CHICKEN
I saw this idea and decided to make Mac & cheese, by adding chicken and mushrooms. The result was too good. If u have boiled pasta in your freezer and you don’t have time to cook something proper for yourself then just add few ingredients and make your delicious pasta in few minutes. You can make this in microwave as well but as I mentioned before I personally do not like microwave cooking so I will also recommend you to use normal oven…

Ingredients:

Boiled elbow macaroni 3/4 cup
Chicken (boiled ) – optional 1/4 cup
Mushrooms (diced) 2
Salt to taste
Cheddar cheese (shredded) 1/4 cup
Oil to grease mug

METHOD:

  • In a bowl mix all ingredients and fill in mug.
  • Then bake it at 160c for 10 minutes.
  • We can make this in micro wave also but I prefer baking in oven.. serve hot .

If you are thinking of making easy and time saving pizza  for you or your kids then you should try this one.. Can be your evening snack or kids lunch box item, you can add mushrooms, chicken or any other thing you want along with fries, otherwise simple fries pizza is also tasty. One more thing no measurement required in this recipe…amazing….isn’t it..???

INGREDIENTS:

Fries as needed
Pizza Sauce to taste
Cheddar and Mozzarella Cheese as needed
Mushrooms, Chicken BBQ Chunks or Sausages optional

METHOD:

  • Make French fries and put them on paper towel for the oil to be absorbed.
  • Now in heat proof dish layer up fries, you can sprinkle salt a bit then in a pan heat pizza sauce. If you want to add salt then you can add in sauce as well (up to your taste ).
  • If you want to add any other filling then add after fries then pour sauce on fries.
  • Sprinkle cheese on top and then sprinkle oregano on cheese (optional). I normally do this because I like the aroma of oregano a lot.
  • Bake till cheese melt and is a little bubbly.
  • Serve hot and enjoy this easy peasy pizza…

NEW YEAR DOUGHNUTS


Hi friends a very sweet and chocolaty happy new year 🙂 I was thinking to wish you all in my style and as I mentioned before I love sweets and chocolate so instantly I decided to make “2013 doughnut”… It was an exciting activity for me and my kids. Hope you will like it as well. Top of all today its a beginning of a new journey of my website. I would like to thank my husband, without his support and efforts it couldn’t be possible. I will end with this wish for you and for myself as well..

INGREDIENTS:

Plain Flour 2 cup
Icing Sugar 3/4 cup
Instant Yeast 2 tsp
Salt a pinch
Powder Milk 1 tbsp
Egg 1
Butter 3 tbsp

METHOD:

  • Mix all ingredients and then knead them with lukewarm milk. It should be soft now keep it at warm place (near stove) to rise.
  • Now roll the dough with rolling pin and cut it with doughnut cutter.
  • Deep fry them on medium flame.

ICING INGREDIENTS:

Cooking Chocolate 4 oz
Butter 1/2 cup
Icing Sugar 2 cups
Milk 1/4 cup

METHOD:

  • In a pan add icing sugar ,butter and milk and mix well.
  • Now add chocolate and melt it on low flame (I always keep it in microwave for 20 sec) and then add in sugar mixture.
  • After mixing, dip doughnuts one by one and leave them to set…..
  • Make any shape you want with the dough (in this case I’ve made numbers), then dip them in icing and garnished with sprinkles.

POTATO SCOTCH EGGS


All time favorite of my kids and mine also…lol. This is my evening tea time snack and my son’s lunch box item , very easy to make but please do not freeze them because potato become  soggy if you store them for longer period of time. I always prepare potato based things fresh. Make in the evening for kid’s lunch box and fry them in the morning.

 INGREDIENTS:

hard boiled eggs    3

boiled potatoes    4 medium size

black pepper crushed    1 tsp

corn flour   1 tsp

soya sauce  1 tsp

salt

egg  1 for coating

bread crumbs   as needed

METHOD:

Mash potatoes and mix all ingredients.

Cover each egg with potato mixture and dip in egg then coat crumbs, set a side . Make all and then deep fry them…..very good for your kids lunch box…:)

I tasted these in my friend’s house ,i liked them a lot. They were bakery made but i examine them and at home I’ve  tried myself , these were very close to original one. You can use these in your iftar menu also.

INGREDIENTS:

chicken 1/2 cup

potato   4 medium size boiled

crushed red chili   1 tsp

salt

garam masala powder   1/2 tsp

sabut dhania    crushed   1/4 tsp

zeera   1/4 tsp

ajino moto   1/2 tsp

roll patti

METHOD:

Add all ingredients in a large bowl and mix well ,chicken should be shredded and potato mashed,now make rolls , deep fry them….

I will not recommend u to freeze them for longer period,use within a week because of potato filling.
