INGREDIENTS:

Flour2 cups
Baking powder2 tsp
Shredded coconut1/2 cup
Sugar1 and 1/2 cups
Coconut milk3/4 cup
Butter6 oz
Eggs3 large
Vanilla essence1 tbsp

METHOD:

  • Pre heat oven at 150c and grease muffin pan.
  • Mix all dry ingredients and set aside.
  • In a bowl add butter and sugar and beat till creamy, Now add eggs one by one and beat till fluffy.
  • In a separate bowl mix coconut milk and vanilla essence and set aside.
  • Now in egg batter add coconut milk ,beat and then add flour mix ,beat then again add milk and beat now add flour and beat for few minutes.
  • Pour mixture in cupcake pan and bake at 180c for 20 minutes or till done.
  • Let them cool completely for few minutes and then decorate with fondant topping.

INGREDIENTS:

Flour3 cups
Cocoa powder1 cup
Baking soda1 tbsp level
Baking powder1 and 1/2 tsp
Saltpinch
Oil3/4 cup
Butter milk1 cup
Warm water1 cup
Vanilla essence1 tsp
Eggs3
Sugar ,grind it3 cups

METHOD:

  • Preheat oven at 150c. Grease cake pan.
  • In a large bowl sift flour, baking powder, baking soda, cocoa and pinch of salt.Add sugar.
  • In this dry mixture add, butter milk, eggs, warm water, vanilla essence one by one. Beat till smooth.
  • Pour in baking pan and bake at 180c till done. Let it cool completely.
  • Roll fondant and spread butter cream on cake then cover cake with fondant. Cut excess fondant.
  • I have used cutters to make HAPPY BIRTHDAY ALI.
  • Make theme of your choice and serve 🙂

cc mPakistan Day we celebrate to remember the Lahore Resolution on March 23 each year. The word “Pakistan” was never used but the Lahore Resolution is considered a major milestone in the Muslim struggle for an independent state in undivided India.
To celebrate Pakistan day with my readers i have brought a never
fail recipe of Custard cup cakes/ dome cake. I have made small dome cakes but you can make cupcakes or a normal cake from the same recipe.

INGREDIENTS:

Flour150gms
Butter150gms
Caster sugar150gms
Eggs3
Custard powder of any flavor3 tbsp
Baking powder1 tsp
Vanilla or any custard if you want custard toppingas needed

METHOD:

  • Pre heat oven at 150 c and grease your baking pan.
  • In a bowl cream together butter and sugar.
  • Add egg one by one and beat well.
  • Now add custard powder, flour and baking powder (sieved) in egg mixture.
  • Pour in cake or muffin pan and bake at 180c till done.
  • Let them cool completely and spread butter cream on top and roll fondant to make flag and spread on each cupcake.
  • You can serve as it is or top them with any topping of your choice.
  • I have served my dome cake with a ROSE. In my next post i will explain you the method of making rose.
  • Make custard of any flavor and top these cupcakes or cakes with it ,if you want to serve with this topping.But spread custard on cupcakes just before serving otherwise they will become soggy.

INGREDIENTS:

Chocolate chip cookies7 oz
Roasted almonds or hazelnuts (roughly chopped)3 and 1/2 oz
Unsalted butter100 g or 3 and 1/2 oz
Dark chocolate2 oz
For filling , Cream600 ml
Dark chocolate7 oz
White chocolate 2 oz

METHOD:

  • Grease  a 8 inch loose base pan.
  • In a food processor add cookies and finely crush them, transfer in a bowl.
  • Mix crushed and roasted almonds or hazelnuts in cookies powder and set a side.
  • Melt butter and chocolate in a pan and then add cookies mixture in it.
  • Pour in the tin and press with spoon to cover the base completely.
  • Chill until firm.
  • Whip cream till peaks form.
  • Melt chocolate on double boiler let it cool for few minutes an add in cream.
  • Spoon the chocolate cream into the tin , smoothing the surface with spatula or flat spoon.
  • Melt white chocolate in a pan on hot water not boiling and then pour over tort an make swirls of white chocolate with fork. (I have skip this step)
  • Chill this cake overnight for best results.

HOW TO MAKE CHOCOLATE BOUNDARY  🙂

  • Now melt chocolate.
  • Spread chocolate on a sheet of greased paper/ butter paper to make a rectangle a little deeper than the cake and long enough to wrap around the outside.
  • Leave until almost set but still pliable.
  • Carefully wrap the chocolate band around the cake and chill till firm.
  • Peel the paper carefully. No panics at all 🙂

  • Decorate with any thing ( fill in strawberries, cherries, chocolate curls ) and serve.

capli kebab mainI am a great admirer of my mother’s Chapli Kebabs, she was  expert in kebabs making. I have tasted Chapli kebabs in Nowshera, KPK few years ago. Eating Hot Chapli Kebabs with Tandori Naans was an exciting experience for me.Kebabs were indeed sumptuous which was later topped with the typical Qihva…

Here is my Mom’s recipe which is not at all different in taste from  Nowshera’s kebabs..

INGREDIENTS:

Beef mince with fat1 kg
Egg1
Gram flour2 tbsp
Saltto taste
Red chili powder1 tbsp/ to taste
Pomegranate seeds/ Anar dana (soak in warm water then grind it) 1 tsp
Black pepper crushed1 tsp
Cumin seeds (grind it roughly)1 tsp
Coriander seeds(grind roughly)1 tsp
Whole spice powder/ garam masala1 tsp
Onion (minced)1 medium
Green chillies (minced)4-5
Tomatoes2 medium
Oilfor frying

METHOD:

  • Roast gram flour on flat pan and set aside now take an egg and make scramble egg without using any oil.
  • Mix gram flour and egg in mince.Mix well. Grate onion and mix in mince.
  • Add all spices and again mix well with your hands.
  • Add chopped tomatoes in the mince  OR you can put a slice of tomato on top  after making kebabs.
  • Fry in oil.
  • Serve with naans and Raita.

The simple & most beautiful things and experiences in life do not cost money. What I am grateful for is people, like the people I associate with in my life my family and friends and students who remind me everyday that life is a gift and its all choice.
Once i have read some where:
A gifted and talented student is defined as one who demonstrates a high degree of intellectual and/or creative abilities, exhibits an exceptionally high degree of motivation.
One of my creative and motivated student  FAIZ MASROOR,  gifted something very special.I always considered myself lucky because my students always give me love and respect.For a teacher, the best gift is when you visit them in the future and tell them how you are doing, upholding what they have taught you in their words and examples. That is treasure we as teachers think of. We wonder what happens to the students who pass through our doors to make it in the world. It sounds like you have a caring set of teachers who have impacted your life. Let them know how you feel and go and live your life in the most respectable way you can and your actions will be their reward……..and if you must know….it will be your reward to yourself.

CLASSIC CHOCOLATE CAKE

INGREDIENTS:

Butter125 g / 4 oz
Caster sugar125 g/ 4oz
Flour125g/ 4oz
Cocoa75g/ 3 oz
Baking powder2 tsp
Egg3 medium
Butter2 oz
Plain chocolate chopped100 g
Golden syrup/ Honey1 tbsp
Cream1/2 cup

METHOD:

  • Preheat oven at 180c. Grease pan.
  • Stir flour, sugar, cocoa and salt in a bowl ,now add butter and rub in with your fingers until the mixture resembles fine bread crumbs.
  • Stir in eggs and milk, beat well with wooden spoon.
  • Add 2tbsp water and mix again to a smooth, dropping consistency. Pour in baking pan and bake for 30 minutes until a skewer inserted into center comes out clean.
  • Leave to cool.
  • Make topping, place butter, chocolate and golden syrup in a heat proof bowl set over a pan of hot water until melted.Stir in the cream to  thicken  the sauce, pour before serving the classic cake..:)

SUJI KI QATLIAN

IMG_0464MAINMany Muslims in various countries pray on the 15th night of Shabaan, and ask for forgiveness of their sins and on the following day proceed to fast.
Imam Ibn Majah states:

It is narrated by Ali (Radi allahu unho) that the Prophet [May Allah bless Him and grant Him peace] stated; “ when it is the 15th night of Shabaan, do Qiyaam in the night, and fast in the morning, and ask for forgiveness. Because on that night Allah calls: ‘Is there anyone who is asking for forgiveness so that I can forgive them, who is in distress that I may relieve his distress, is there anyone who needs (rizq) food that I may give it to him.’ And this continues till the morning.” [Ibn Majah chapter Salaah]

Imam Tirmidhi writes:

Aisha Radi Allahu unha said: “On this night the Prophet [May Allah bless Him and grant Him peace] went to Jannat-ul-Baqee to make du’a, I followed him. The Prophet [May Allah bless Him and grant Him peace] said to me: Allah puts His attention towards the first Heaven, and forgives the sins of the people, even if they were equivalent to the hairs of the goats of Bunn Qalb. (A tribe who at the time had a lot of goats)

In our country people makes Halwas or any sweet dish for distribution amongst relatives, neighbors and poor. I saw my mother making 2-3 types of HaLWAS on this special occasion.
Here is my mother’s “SUJI KA KUSHK HALWA/ QATLIAN OR SEMOLINA DRY SWEET” recipe.

INGREDIENTS:

Semolina/ suji2 cups
Sugar2 cups
Cardamom4-5 nos
Ghee1/2 cup
Water1 cup
Nutsas needed

METHOD:

  • First make sugar syrup/sheera . In a pan add ghee and cardamom seeds, let them crackle and then add sugar.Pour water carefully and keep on stirring on low flame.
  • In another heavy bottom pan roast semolina till nice golden color appear.Grease any tray to pour Halwa in it.
  • Now this step you need to perform quickly.Add suji in syrup and keep on stirring till become thick.
  • Spread halwa on tray and level the surface, sprinkle nuts.
  • After 5 minutes with pizza cutter cut shapes of your choice.
  • Let it col down completely.

RECIPE OF SPECIAL CAKE ON SPECIAL OCCASION

INGREDIENTS:

Eggs4
Caster sugar8 oz
Cocoa2 oz
Plain flour2 oz
Chocolate curls to decorateas needed
Powder gelatin 2 tbsp
Double cream1 packet
Liquid glucose1 tbsp
Chocolate broken into pieces10 oz

METHOD:

  • Preheat the oven to 180c.Grease and line a Swiss Roll tin (optional).
  • Whisk together eggs and sugar until pale and thick. Sift cocoa and flour and fold in.
  • Pour into the pan and bake for 20 minutes until springy to the touch.
  • Leave to cool.Turn out.
  • Place 8inches shallow cake tin (loose bottom pan) on top on cake and cut just inside the line, to make a circle to fit in the tin.
  • Soak the gelatine in 4 tbsp cold water.Whip the double cream until peaks forms.
  • Place the glucose in a pan with 50 ml water and bring to the boil.Cool slightly.
  • Add the gelatin and chocolate and beat with whisk until smooth.Leave to cool.
  • Fold the chocolate mixture into the cream.Pour into the cake tin.
  • Keep it in fridge for 2-3 hours until set.
  • I kept it over night and next day it was set beautifully.
  • Remove the dessert from tin and decorate with white and dark chocolate curls and dust cocoa.
  • Serve and enjoy..:)

Pakistani Wedding is the ceremony to celebrate the wedlock of a bride and a groom.Before leaving to Bride’s home, Sehra bandi is performed at groom’s house. The groom wears Sehra (veil of flowers) but nowadays he is just adorned with flower garlands.Groom makes his way to the bride’s home on a richly decked horse or in a car and “baraat” follows him.

The bride’s parents welcome their guests and adorn the groom and his parents with a garland of flowers and girls showers rose petals on the Baratis(guests).

Bride traditionally wears red color dress with heavy makeup and jewelry and groom attires in Sherwani.Once the baraati’s arrive, the nikkah ceremony can begin.

Nikah-naama (document of marriage contract) is registered in Nikah. Islamic Imam (called maulana or maulvi in Urdu) reads selected verses from the Quran and waits for the Ijab-e-Qubul (proposal and acceptance) of wedding. Maulvi and witnesses (gavah) take the Nikahnaama to the bride and read it aloud to her. She accepts the Nikahnaama saying ‘qabool kiya,’ meaning ‘I accept and signs it. The Nikahnaama is then taken to the groom and read aloud to him. He accepts saying ‘qabool kiya and signs the document. The Maulvi and witnesses (gavah) also do sign the Nikahnaama contract and the wedding becomes legal. The Maulvi recites the Quranic verses or blessings to mark the closing of Nikah ceremony.
After Nikkah Groom’s side distributes “bidh” – which are small pouches consisting of sweets, and chuwarey(dried dates) pieces of dried fruit and nuts.

After this the bride enters in the hall and is leads to the stage. Groom is then escorted to his bride where he’s allowed to site beside his wife.

A few Rasams begins by the bride’s sisters and cousins, most famous is Doodh Pilai and Juta Chupai.

These are very interesting custom and groom usually carries a lot of cash, due to the popularity of this custom. He pays money to get back his shoes and to drink milk, and girls divide the money among themselves.

Bride says goodbye to her parents, close friends and family. The Quran is held over her head as a blessing.She is then taken away by the baraat. This marks the end of the wedding ceremony.

I am grateful to Hafsah, who on my request shared a very tempting recipe of Biryani .Biryani is one of the most important and famous dish in wedding menus….Over to Hafsah :

I will start with a little intro about myself. I am Haffa Bexi, a food blogger from Pakistan & blogging on Haffa’s Kitchen Adventures.. where I share different recipes of different cuisines and my adventures & new cooking experiments. I am doctor by profession. I started blogging as my hobby few months back, after great encouragement from my hubby lol 😛 

 I recently got to know Ainy as a blogger & was really impressed by her lovely & delicious recipes. Her blog is among the few famous blogs I try to follow. Few days ago she did a guest post for me “Strawberry poke chocolate cup cakes“. Now she is having a weeding recipe month and she asked me to do a guest post related to that. I am soo much excited to be here today after the invitation from Ainey to write a guest post for her!

As it’s a diverse topic, I had so many dishes in my mind for this post, LIKE; Rice pudding (Firni), Sweet rice (zarda), Fish tikka, seekh kebabs, diffrent types of rice etc. But finally ended up bringing to u a spicy Pakistani dish, locally known as “Kofta Biryani (Meat balls biryani)”  🙂

Ingredients for Meatballs/ Koftas:

Minced beef (Lean/no fat Qeema)      1/4 kg
Egg                                                    1 tbsp.
Onions                                               1 medium (chopped)
Green Chili                                         1 (chopped)
Red Chili powder                               2 1/2 tsp
Garlic ginger Paste                              1/2  tsp..
Salt                                                     1/4 tsp.
Cumin Powder                                    1/2 tsp.
Coriander Powder                               1/2 tsp.

Black Pepper powder                          1/2 tsp 
Tandoori Masala                                  1/4 tsp.
Whole Spices Powder                          1 tsp.
Coriander Leaves with stem                  1/2 bunch (chopped)
Chickpeas roasted                                1 1/2 tbsp.
Oil for frying


Mix all the above mentioned ingredients together and refrigerate them for 30 minutes – 2 hours.

Procedure:

Take out the refrigerated meat and make 20-25 ping pong balls sized meatballs with the help of hand. Shape them round very gently. After shaping the meatballs, freeze them so that they stay together while frying. (However, u can directly deep fry them without freezing.) After freezing the meatballs, deep fry the meatballs in a pan/skillet for 10 minutes or until they change their color into golden brown 🙂 Don’t overcook the meatballs because they will again be cooked in gravy made for rice 🙂

Ingredients for Biryani:


Meatballs                                            250 gm
Rice                                                    1 1/2 glass (soaked in water for 20-30 min)
Onions                                                2 (sliced)
Tomato                                               3 medium (chopped)
Oil                                                      1 1/2 wooden spoon (doi)
Green Chilli                                         2 (chopped)
Red Chilli powder                               3/4 tsp.           
Turmeric Powder                                1/4 tsp.
Garlic ginger Paste                               1 tsp
Salt                                                     1 tsp.
Cumin Powder (Zeera)                        1 tsp.
Coriander Powder                               1 tsp.
Maythi (Fenugreek) seeds                    Few
Black Pepper whole                             2
Cinnamon sticks (daar cheeni)              2 -3
Clove (Long)                                        2
Cardamom pods                                   2
Dried Plum (Aalo bukhara)                   3-4 optional
Yogurt                                                  1/2 cup

Orange color                                        Pinch in water
Coriander, Curry & Mint leaves            Few

Procedure:


Heat oil, and add the fenugreek seeds, curry leaves, whole spices, followed by the chopped onions.

Fry until onions are golden brown. 

Then add garlic and ginger paste, green chilies and the chopped tomatoes and fry until they make a nice paste. Fry until the oil separates.

Next add all other spices and meatball pieces. Fry for few minutes. Add some water and cook until the meatballs are properly cooked. And all the water is absorbed. Meatball gravy is ready.

On the other hand, in a large skillet boil 10-12 glasses of water, add some oil to help rice not to stick together and salt (acc to taste) and then add the soaked rice. Wait until the rice are about to boil (and not fully boiled). Check by pressing the rice grain in in ur hand. Drain.

In a greased pan, spread a layer of rice and then the layer of meatball gravy. Layer by layer it goes. Sprinkle the orange color on top of the rice. Keep the lid covered for 10 minutes on steam/dum. And Meatball/ Kofta biryani is readyyyyy!! Just soo delicious! Gently mix the rice and serve with raitasalad etc 🙂 Enjoyyyy… sssss… 😛

Culture, customs and traditions are greatly differ in all provinces of the country.There are varying shades, however very colorful and fascinating. A Pakistani wedding is followed by several pre-wedding customs and rituals…Mayon…Mehndi…Barat…Valima…Muklava.

MAYON:

Mayon/ manjha/ mayan can either be a lavish affair, or a small family gathering of ladies of all age groups before 10 or 5 days before wedding. In my family it starts after a Quran khuani.The bride is not allowed to leave her house during this mayon period and the beautification rituals begin during this time.The Pakistani mayon bride is donned in a yellow outfit.
Some families arrange dholki nights leading up to Mehndi night. Totally a female event where they sing wedding songs or famous movie songs by tapping on the dhol with song beats.

RASM E HINA (MEHNDI FUNCTION):

This usually takes place one or two days before wedding.This also is mainly women event, Hina/Mehndi is applied to both the groom and the bride by the female friends and relatives of both sides.The event is held separately for the bride and the groom but in some families held Rasm e Hina on one place of both bride and groom.
Bride normally wears yellow dress with a tinged of green or orange color and hides her face in veil.Sisters, cousins and friends walk in with the decorated plates of Mehndi and candles.The Bride is led to the stage, under the shade of a Beautifully decorated dopatta which is held up by brothers,cousins and sisters.

Now the female married women apply Mehndi on bride’s hand and feed her any sweet. Sadka (warding off evil through charity) is performed on the bride by donating money circling three times on the bride’s head.

How can we forget a song competition between bride and grooms families, many dance sequences are common these days.
Normally this is a joyous occasions with colors, music and many more.

In food normally bbq food is very famous in Mehndi event. Kebabs parathas, kachori, halwa is hot favorite of all.

My Friend Maryam Raza, shared her tried recipe of Gulab Jamuns for this Mehndi event..:)

 

HOT AND YUMMY GULAB JAMUNS

INGREDIENTS:

dry milk powder (nido)   2 cup
baking powder    2 tsp
maida/ flour 1 tsp
ghee   2 tbsp
egg  (beaten)      2
ghee /oil   ( for frying)

sugar syrup: 
sugar 2-1/2 cup
water 2 cup
elachi 6
food color 1 pinch

method:
Combine dry milk powder, baking powder, maida, ghee, egg to make a dough.
Now make  small balls with dough.
Deep fry small balls in preheated ghee.
Meanwhile make a sugar syrup in other pan by adding sugar, water elachi n food color.
Now put fried small balls in sugar syrup.And leave them for 5-10 minutes. Serve hot.
