Sicilian Pizza is a thick crust or deep dish pizza, originated in Sicily, Italy.The main difference between Sicilian pizza and Italian pizza is in the crust. Italian or Italian-American pizza usually has a thin crust which can be either crispy or chewy. Sicilian pizza has a very thick crust. It’s more bread-like than Italian pizza. In Italian pizza, the emphasis is on the toppings such as sauce, cheese and pepperoni. With Sicilian pizza, the crust is king.

Italian pizza usually has a coating of sauce, cheese, vegetables, meats or other toppings. Sicilian pizza is often made without cheese using whatever is left over in the kitchen for toppings. The oldest type of Sicilian pizza is sfincione, which means “thick sponge.” It’s made with only herbs and olive oil.

Sicilian pizza, when it does use cheese, uses Sicilian-made cheeses like pecorino. Mozzarella is an Italian cheese. Modern Sicilian pizza chefs will use mozzarella, even in Sicily. Cheese can be baked into the dough or is placed directly on top of the dough before any spices, sauces or whatever.( information courtesy of Google)

HOW TO MAKE PIZZA DOUGH:

 

INGREDIENTS FOR DOUGH:

Plain Flour3- 1/2 cups
Yeast1 sachet of instant yeast
Olive oil1 tbsp
Salt1 tsp
Sugar1 tsp

METHOD:

  • Mix all ingredients and knead with Luke warm water and cover with a cling sheet .
  • Leave it for 2-3 hours and then dust flour on working place and roll it.
  • Grease square or rectangle pizza pan with olive oil and place rolled dough.

INGREDIENTS FOR TOPPING:

Tomatoes8 chopped
Onion2 sliced
Saltto taste
Pepper1 tsp
Chicken bone less in cubes1/2 kg
Saltto taste
Pepper1 tsp
Red chilli flakes1 tsp
Oyster sauce 1 tbsp
Ginger garlic paste1/2 tsp
Yellow food colorpinch
Olive oil3 tbsp
Mozzarella cheeseas needed
Capsicum (if required)1 large

METHOD:

Original Sicilian pizza style

  • In a pan add olive oil and 2  onions in slices and cook till soft .Now add 8 tomatoes ,cut in small pieces. Add salt and pepper and cook till soft. Set aside.
  • In original Sicilian Pizza sauce goes on top, first spread Anchovies (small salt water fishes) on dough and then spread a generous amount of cheese on top.
  • True Sicilian pizza is topped with slices of cheese not shredded one.
  • Now spread tomato sauce on top and leave it for 20 minutes to rise.
  • Bake for 20-25 minutes.

Sicilian Pizza Pakistani Style:

  • Make tomato sauce like mentioned in Original Sicilian pizza.
  • Marinate chicken with salt, pepper, ginger garlic paste ,red chili flakes, oyster sauce, pinch of yellow food color and oregano for 1-2 hours.
  • Cook in 1 tbsp oil and set aside.

Assembling:

  • On top of pizza dough spread cheese and then chicken mixture now sauce and then top it with cheese.
  • Sprinkle Mixed herbs and leave it for 20 minutes.
  • Bake it for 20 minutes at 180c.

HOW TO ELIMINATE YEAST SMELL FROM BREAD AND PIZZA DOUGH ?

These are the three points follow these to avoid smell of yeast after baking.

  • Give proper rising time to your dough.It should be double in size after rising.
  • Do not bake on high temperature otherwise bread will rise quickly, not give  yeast time to act properly. And might give a smell of yeast.
  • Give full time mentioned in recipe. If you will not give proper time and temperature ,yeast will give smell.

INGREDIENTS:

Plain flour3 1/2 cups
Icing sugar1 cup
Butter4 tbsp
Yeast8tsp level /2 sachet of instant yeast.
Cinnamon powder1/4 tsp
Eggs2 beaten
Warm milkfor kneading.

METHOD:

  • Mix all ingredients and knead with milk.
  • Set aside for 2-3 hours on a warm place.
  • Dust flour on working place and roll dough and cut circles and deep fry in oil.
  • Melt chocolate 1 cup and add cream 1 tbsp and 1 tbsp butter.
  • Dip doughnuts in sauce and decorate with sprinkles and serve…:)

LEMON GARLIC BREAD STICKS

Home made Garlic sticks with Hot soups goes deliciously well.Try is must…:) Make them and store in air tight container you can use them during winter season..

INGREDIENTS:

Plain Flour2 cups
Yeast2 tsp
Salt1 tsp
Sugar1/2 tsp
Olive oil1 tbsp
Warm wateras needed
Sesame seedsas needed
Olive oil1 tbsp (for brushing)
Lemon juice1 tsp (for brushing)

METHOD:

  • Add all ingredients in flour except lemon juice and oil.
  • Knead and set aside for 2 -3 hours.
  • When rise, roll it and cut with pizza wheel to form long sticks.Place them in baking tray.
  • Mix oil and lemon juice in a small bowl and brush it on sticks.
  • Sprinkle sesame seeds and bake them for 15-20 minutes at 180c.
  • Take them out and let them cool down.
  • They will become crispy.Then store in air tight jar.

I can’t forget the taste of Basen parathas which my mother was making…Those who are on diet can add these yummy parathas in their diet plan.

INGREDIENTS:

Wheat flour1 cup
Gram flour1/2 cup
Onion small ,thinly sliced1
Green chillies,chopped2 small
Fresh coriander leaves2 tbsp
Saltto taste
Red chili powder1 tbsp
Whole coriander seeds,crushed1 tsp
Cumin seeds,crushed1/2 tsp
Anar dana/pomegranate seeds1/4 tsp(optional)
Oil/gheefor frying and 2 tbsp for adding in the flour.

METHOD:

  • Mix all ingredients in flours and knead with water.
  • Set a side for 1/2 hour and make parathas.
  • Make impressions with fork or knife, if you like.
  • Serve hot with green chateney.

GREEN CHATNEY /SAUCE:

Fresh coriander1 cup
Mint leaves1/2 cup
Imli pulp/ tamarind 2 tbsp
Saltto taste
Ginger1/2 tsp
Cumin seeds1/4 tsp

METHOD:

  • Blend all ingredients and serve.

Nutella chocolate and nuts…wow mouthwatering combination and Of course the flavors of both with this bread is endless…:). Those who love Nutella will surely like this recipe.

INGREDIENTS:

Flour3 1/2 cups
Yeast2 tbsp
Luke warm milk3/4 cup
Butter6 tbsp
Sugartbsp
Salt1 tsp
Egg yolks4
Nutella/ chocolate sauceas needed
Mixed Nutsas needed
Vanilla essencefew drops

METHOD:

  • Cream together butter and sugar and start adding egg yolks one by one then add vanilla essence and beat till light and fluffy.
  • Add flour,yeast and salt.Add milk and knead with hand.
  • Set aside for rising for 2-3 hours.
  • Now divide the dough in equal portions and roll two circles and spread Nutella on one circle and spread mix nuts on top of Nutella. Cover this with other circle and cut into triangles.
  • Keeping top end attached, twist the both circles and brush with egg wash, sprinkle sesame seeds and bake.
  • Bake them on 180c for 20-25 minutes.
  • Let them cool down and eat delightfully with tea or give your kids in his lunch box…:)

CHOCOLATE SAUCE:

  • If you are not using Nutella then in a pan mix together chocolate  1 cup, butter 1/4 cup and pinch of cinnamon powder ,cook till chocolate melts.

CHICKEN PIZZA NAAN.

When i first time experienced these delicious naans i was so happy to get a very good recipe which we can enjoy as an evening snack or can give our kids in lunch boxes.

INGREDIENTS:

Pizza doughfor 1 large pizza
Chicken bone less1 cup
Capsicum1 medium
Onion1 small
Crushed black pepper1/tbsp
Crushed red chilli1 tsp
Saltto taste
Whole coriander seeds1/2 tsp crushed
Gram masala /whole spice powder1/4 tsp
Olive/ vegetable Oil 2 tbsp
Cheeseas needed
Olivesfew

METHOD:

  • In a pan heat oil and add onion,saute it and add chicken and all other spices.
  • Cook chicken till properly cook then add capsicum and olives finely chopped.You can add chopped coriander also.Let it cool down completely.

  • Transfer dough on a flat surface and mix all cooked ingredients.
  • Knead it well.Roll it with rolling pin and cut small circles or any shape of your choice.
  • On the surface spread cheese and olives and bake it .
  • Enjoy with any sauce or ketchup.
  • You can make naans and freeze them in zip lock bags ,when needed just thaw them and bake…:)

The nation is celebrating  Pakistan Day on 23rd March with traditional fervour and zeal to rejoice the emergence of Pakistan that marked the emancipation of an independent Muslim state.Allama Iqbal’s dream was redeemed as the Quaid responded to his vision with resolve, commitment, sincerity and devotion. He virtually fought single handedly to carve out Pakistan.
It is an auspicious occasion for the Pakistani nation that calls for evaluation of our failings and achievements to seek guidance for the future. Pakistan has endured many ups and downs in the course of its history over the past six decades.I am hoping for a bright future for my kids and this poem is dedicated to my new generation…

INGREDIENTS:

Doughnut doughas needed
Oreo biscuitsas needed
Icing sugaras needed/1 cup
Food colorfew drops
Water 1-2 tbsp

METHOD:

  • Knead the dough, leave it for 2-3 hours at warm place,  before baking or frying add crushed Oreo biscuits in it.Again knead them.
  • In icing sugar add 2 drops of green food color and 1 -2 tbsp water ,mix well and dip doughnuts in the icing.
  • sprinkle crushed Oreo biscuits on top.
  • You can dip doughnuts in chocolate and then sprinkle Oreo.Choice is yours.
  • Enjoy delicious Oreo glazed doughnuts.

PEPPERONI BREAD ROSES

Again roses but this time pepperoni roses. I simply loved them, a very easy and delicious snack. Give your bread a twist and make roses 🙂

INGREDIENTS:

Bread doughas needed
Pepperonias needed
Pizza sauceas needed
oilfor greasing
eggfor brushing

METHOD:

  • You can learn how to make dough from ROSE CROISSANTS recipe if you don’t know it already.
  • You just need to roll dough and make a very thin circle.
  • Cut pepperoni in halves.
  • Now cut long stripes of dough. Should be the size of half cut pepperoni.
  • Spread sauce in a thin layer and place pepperoni on dough, rounded shape up wards, place all side by side.
  • Roll firmly with tight hands and then brush egg wash and place on greased backing tray .
  • Bake them at 170c till bread done.
  • You can sprinkle cheddar cheese on sauce as well if you like to.

Naan Pizza
In our country we can get naan bread very easily. I am giving you time saving pizza recipe again, just go and get raw naan bread from any bread maker (tandoor) and search in your fridge what you can use for topping and bake it…:) I have done the same, I used bbq sauce for different touch and it was very successful.

INGREDIENTS:

Naan bread (shop bought)2 paras
Chicken tikka as needed
Cheeseas needed
Capsicum1 medium
Tomato1 medium
Pizza sauce as needed
Barbeque sauceas needed
oilfor brushing

METHOD:

  • Very simple to make this pizza just bring naan bread from market and grease pizza pan.
  • Roll the bread and place on pan.
  • Spread thin layer of pizza sauce on bread and then bbq sauce.
  • Spread chicken tikka cubes and sliced capsicum, tomato or anything you like to add.
  • Sprinkle cheese and bake them for 10-15 minutes .
  • No measurement required for this pizza , its only depends upon naans you are using.
  • You can use chicken tikka chunks (shop bought) or any leftover mince or chicken . You can have a lot of variations with this pizza.

POTATO PIZZETTE BITES

Small bite size pizzas, but on potato base.. isn’t it interesting…? If you want to have pizza but have no time to make dough then this is a very good option. Just slice up potatoes and top with ingredients and bake for few minutes. Your easy peasy pizza is ready to serve…:)

INGREDIENTS:

Large size potatoes2
Chicken boiled 1/2 cup
capsicum1 medium
Saltto taste
Black pepper 1/4 tsp
Oregano1/4 tsp
Pizza sauceas needed
Cheese as needed
Oilfor brushing

METHOD:

  • Peel off potatoes and make slices crosswise. Slices should not be thin.
  • Give them a boil of 5 minutes only and then spread on a tray.
  • Brush your baking tray with oil and place slices on tray.
  • I sprinkled salt and black pepper on slices also but this step is completely optional.
  • Mix chicken, capsicum thinly cubed salt, pepper and mix all ( you can use mushrooms, carrot, peas anything you like)
  • Spread pizza sauce on slice and then add spoonful of mixture.
  • Sprinkle shredded cheese and oregano.
  • Bake at 170c till fork tender and well cooked.

Pepperonias needed

METHOD:

  • Roll pizza dough and cut heart shape with knife then spread sauce. Sprinkle cheese and then all vegetables.
  • Cut in slice, again sprinkle cheese and spread peproni and sprinkle oregano and ginger powder.

A very nice and easy recipe, especially for kids. You can give this in lunch boxes and can be an evening snack as well.

INGREDIENTS FOR DOUGH:

Plain Flour 2 cups
Yeast 2 tsp
Sugar 1 tsp
Salt 1 tsp
Milk Powder 2 tbsp
Butter 2 tbsp
Egg 1

METHOD:

  • Mix all ingredients and knead with Luke warm water.
  • Set aside for 2 hours.

INGREDIENTS FOR FILLING

Chicken (boiled) 1 cup
Butter 1 tbsp
Onion 1 small
Capsicum 1 small
Tomato 1 small
Peas (boiled) ¼ cup
Cheese as needed
Flour 1 tbsp
Black Pepper ½ tsp
Salt to taste
Oregano 1 tsp
Milk ¼ cup
Coriander Leaves few
Green Chili (chopped) 1 small
Onion Seeds ¼ tsp
Sesame Seeds ¼ tsp
Egg for brushing

METHOD:

  • In a pan add butter and chopped onion, sauté it for few minutes.
  • Then add flour and stir for few seconds then add chicken and fry for few seconds.
  • Now add salt  and black pepper. After mixing them add milk and stir constantly to avoid lump formation.
  • In the end add coriander and chili and set aside.

ASSEMBLING OF PIES

  • Make small balls of dough and roll them.
  • Now place them in muffin tray cases.
  • Fill spoonful mixture in cups, sprinkle cheese and oregano.
  • With star shape cutter cut stars of the same dough and place on pies.
  • Brush egg wash and sprinkle onion seeds and sesame seeds. Bake them at 180c for 20 minutes.

My friend Fauzia asked me to make 100% whole wheat pizza ,I decided to combine three things in a pizza. My friend’s wish , pizza making on stove technique and last my sister in law Shabana shahid’s sheesh taouq recipe.. I hope you all will like this effort.

INGREDIENTS FOR PIZZA DOUGH:

Whole Wheat Flour 2 cups
Yeast 2 tsp
Salt 1 tsp
Vegetable Oil/olive oil 2 tbsp
Sugar/honey 1 tbsp
Luke Warm Water for kneading

METHOD:

  • In a bowl mix all ingredients and knead with water
  • Set aside for 2 hours

SHESH TAOUQ PIZZA TOPPING INGREDIENTS:

Chicken Boneless Cubes 1 cup
Garlic (minced) ½ tsp
Salt to taste
Paprika Powder ½ tsp
Nutmeg Powder pinch
Cinnamon Powder pinch
Black Pepper ½ tsp
White Pepper ¼ tsp
Cottage Cheese/Yogurt Cream 1 tbsp

METHOD:

  • In a bowl mix together all ingredients and leave it for 2 hours.
  • Then fry them in 1 tbsp oil.

ASSEMBLING OF PIZZA:

  • Roll pizza dough and place in pizza greased frying pan and spread pizza sauce.
  • Now sprinkle cheese followed by chicken and then sliced onion, capsicum ,mushrooms,olives and tomato.
  • Again sprinkle cheese and oregano.
  • Cover with lid and on very low flame cook till cheese melts.

This is my first pizza of pizza party. Hope you all will like it :). I made this with chicken tikka topping you can use any other of your choice. Surely kids will love this snowman idea…

PIZZAH DOUGH IN A FOOD PROCESSOR

If you do not have stand mixer then no problem use your food processor and make perfect dough. And if you do not have processor then again no problem, use your hands to knead a super perfect dough lolz

Plain flour 2 cups
Salt 1 tsp
Sugar 1 tsp
Milk Powder 2 tbsp
Olive Oil/Butter 2 tbsp
Yeast 2 tsp
Luke Warm Water as needed

METHOD:

  • In a food processor fit in dough making cutter, add all ingredients and turn on processor for few minutes.
  • Do this process by adding up little amount of water.
  • Keep on doing this till dough start to become elastic and soft.
  • Place in a bowl and set aside for 2 hours.

CHICKEN  TIKKA  PIZZA INGREDIENTS:

Chicken 1/2 kg
Tikka Masala Powder (optional) 1 tsp
Powder Red Chillies 1 -1/2  tsp
Garam Masala 1/2 tsp
Crushed Zeera 1/2 tsp
Lemon Juice 2 tbsp
Ginger Garlic Paste 1/2 tsp
Yogurt 2 tbsp
Yellow Food Color 1/4 tsp

METHOD:

  • Marinate chicken with all ingredients  for 1-2 hour.
  • Bake it at 180c. You can cook in a pan and give smoke, choice is yours.

ASSEMBLING OF PIZZA:

  • Roll the dough and make two circles, one small for head and large one for tummy.
  • Place on pizza pan and Spread pizza sauce on dough then sprinkle cheese on it and then chicken, onion (small pieces), capsicum and again sprinkle some cheese.
  • Bake it for 20 minutes.
  • You can use olives or anything else you like for buttons and eyes. Muffler  I made with dough. With a simple twist you can attract your kids and even your other family members…. :). Enjoy your snowman pizza and do not forget to comment.

Hi friends a very sweet and chocolaty happy new year 🙂 I was thinking to wish you all in my style and as I mentioned before I love sweets and chocolate so instantly I decided to make “2013 doughnut”… It was an exciting activity for me and my kids. Hope you will like it as well. Top of all today its a beginning of a new journey of my website. I would like to thank my husband, without his support and efforts it couldn’t be possible. INGREDIENTS:

Plain Flour 2 cup
Icing Sugar 3/4 cup
Instant Yeast 2 tsp
Salt a pinch
Powder Milk 1 tbsp
Egg 1
Butter 3 tbsp

METHOD:

  • Mix all ingredients and then knead them with lukewarm milk. It should be soft now keep it at warm place (near stove) to rise.
  • Now roll the dough with rolling pin and cut it with doughnut cutter.
  • Deep fry them on medium flame.

ICING INGREDIENTS:

Cooking Chocolate 4 oz
Butter 1/2 cup
Icing Sugar 2 cups
Milk 1/4 cup

METHOD:

  • In a pan add icing sugar ,butter and milk and mix well.
  • Now add chocolate and melt it on low flame (I always keep it in microwave for 20 sec) and then add in sugar mixture.
  • After mixing, dip doughnuts one by one and leave them to set…..
  • Make any shape you want with the dough (in this case I’ve made numbers), then dip them in icing and garnished with sprinkles.

PIZZA ROLLS


I like to bake different styles of breads with different fillings. I prefer to bake these stuffed breads at home. Try this recipe and give me your feed back.

INGREDIENTS:

Pizza Dough as needed
Chicken (boiled) 1/2 cup
Pizza Paste 4 tbsp
Capsicum (shredded) 1
Onion (sliced) as needed
Mushrooms (chopped) 1/4 cup
Oregano 1 tsp
Red Chilli Flakes 1/2 tsp
Salt as needed
Cheese Slices as needed

METHOD:

  • In a pan add 1 tbsp olive oil and chicken and fry for few seconds.
  • Then add vegetables, chilli flakes, oregano and salt, stir and set aside.
  • Now make a small roti and cut the edges. Make square shape but it should be very thin.
  • Now spread paste and place filling on one side.
  • Cut stripes of cheese and place on filling.
  • Roll the roti and brush egg wash, sprinkle sesame seeds, place cheese stripes on top and bake them for 15 mins at 180c.
  • Serve with sauce or ketchup…
