CHICKEN OATS HALEEM

oat haleem mOat is a whole grain powerhouse which is fully nutritious and rich in fiber. If you are willing to lose weight than add this grain in your meal. Overnight oats is a feel good start to the day topped with nuts and honey. If you are looking for Gluten free diet than you should add this in your diet.
Today i am sharing a desi style recipe with oats. Yes, you can make haleem from oats and enjoy with your family 🙂

One recipe is with homemade spices and other one is with ready made Haleem Masala.

INGREDIENTS:

Chicken with bones or breast pieceless than 1/2 kg or 2 breasts
Ginger garlic paste1 tbsp
Oil3-4 tbsp
Oats1 cup
Coriander seeds2 tbsp
Dried chilies2-3
Cardamom1/2 tbsp
Cloves2
Cinnamon stick1 piece
Cumin seeds1 tsp
Coriander leaves and green chiliesas needed
Chat Masalaas needed
Onion1 medium, sliced
Saltto taste
Red chili powder1 tsp

METHOD:

  • Boil chicken In 5 cups water , cook till tender and remove it from stock.
  • Add oats in the same stock and cook till soft. Shred chicken and add in oats.  Set aside.
  • In a pot add oil and fry onion till light brown color appear, add ginger garlic paste in it and cook for few seconds.
  • Dry roast all cardamom, coriander seeds, red whole chilies, cinnamon sticks , cloves and cumin, grind them. Use this haleem spice according to your taste, and store remaining in air tight jar.
  • Add all spices in oil and stir for few minutes.
  • Now add chicken oats mixture and mix well. You can add water if required.
  • Cook till desired consistency obtain.
  • Garnish with coriander leaves and chilies.
  • Serve hot.

INGREDIENTS OF JHATPAT HALEEM:

Chicken 4-5 pieces with bones.
Chicken broth/ stock2 cups
Instant Oats1/2 cup
Haleem masala2-3 tbsp or to taste
Olive Oil / vegetable oil2 tbsp
Green coriander and chiliesas needed

METHOD:

  • Boil chicken in 3 cups water and shred it, save chicken stock.
  • In a pot add 2 tbsp oil, add haleem masala any brand , i have used Shan , and stir for few seconds.
  • Add shredded chicken and saute for few seconds. Now add oats and stir.
  • Add chicken stock in it and let it cook till required consistency obtained.
  • Garnish with coriander leaves, green chilies and chat masala.
  • Squeeze lemon and enjoy.

CHICKEN FRIED SANDWICH

fried sandwich mI assure you this recipe is very different from other fried sandwiches and also very delicious. You can add this in your kid’s lunch box menus 🙂

INGREDIENTS:

Chicken, boiled and shred1/2 kg
Onion, chopped and squeezed2 large
Soya sauce1 tbsp
Black pepper1 tsp
Saltto taste
Green chilies, crushed1 tbsp
Chicken powder1 tsp
Ginger arlic paste1 tbsp
Milk1 cup
Egg2
Bread slices8-10
Mayonaiseas required
Cucumber and tomatoes, choppedas required
Plain Flour1 and 1/2 tbsp

METHOD:

  • In a pan add oil and ginger garlic paste, saute for few minutes.
  • Rough chop onion and add in oil, fry till light brown, add green chilies and stir.
  • Add chicken and chicken powder. Mix well.
  • Add salt and flour, stir well for few minutes to remove flour smell.
  • Add milk and stir vigorously.  Cook till milk dries and than add black pepper and soya sauce. Mix well.
  • Let it cool.
  • Cut sides of bread and spread ketchup on slice. Spread chicken mixture on other slice and cover with ketchup spreaded slice.
  • Beat eggs and dip slices in egg  and than in crumbs.
  • Fry in medium hot oil.
  • After frying cut slices in triangle and spread mayonnaise on corner. Sprinkle cucumber and tomato chopped on edges.
  • This will give a very different taste to your sandwiches.

  • You can use this chicken filling in making chicken rolls, bread rolls and pizza also.

  • You can freeze them and when just thaw and dip in egg and fry when required.

MINCE STUFFED BREAD FLOWER

bread flower mmA long ago I have posted the recipe of Bread Roses, this recipe is a bit similar to that but believe me you will like the taste and presentation of this stuff bread. Inspired recipe from a Facebook page 🙂

INGREDIENTS FOR DOUGH:

Plain flour2 cups
Salt1 tsp level
Sugar1 tsp
Egg1
Instant yeast2 tsp
Oil1 tbsp

METHOD:

  • Add all dry ingredients and mix, now add egg and mix.
  • Add water and start kneading. Knead and place in a large bowl. Keep it on a warm place for 2 hours.
  • It will be double in size.
  • You can use puff pastry for this recipe too.

INGREDIENTS FOR FILLING:

Chicken or beef mince less than 1/2 kg
Ginger garlic paste1 tsp
Saltto taste
Turmeric powder1/2 tsp
Crushed red chilies1/2 tsp
All spice powder1/2 tsp
Cumin seeds1/4 tsp
Coriander leaves and chilies chopped3 tbsp
Oil2 tbsp

METHOD:

  • Add oil in a pan and add onion, saute till change color. Add ginger garlic paste and stir.
  • Add mince and all spices, stir till mix well.
  • Let it cook for few minutes. Remove from stove when water dries.
  • Let it cool completely.

ASSEMBLING:

  • Divide dough in 8-10 balls and Roll out a ball and cut with a round cutter, you can use doughnut cutter too.

  • Now make a center of flower. Take a round rolled dough and make cuts diagonally , leaving center intact.

  • Place a small amount of filling in center , take one section and place on filling, take opposite side of dough and brush water on corners and place on filling, do the same with remaining two sections.

  • Now either use samosa/ gujia maker for petals or just roll dough and cut with round cutter and place filling on one side brush water on the corners of  round now cover with opposite side and seal with fork.

  • Make petals with the same method.

  • Now take a cake pan and place a liner, so it will be easy to take out flower.
  • Arrange center flower in center and brush water on each petal and arrange on the side of central part.

  • Brush egg yolk and sprinkle sesame seeds on petals.
  • Bake in preheated oven at 180c for 20-25 minutes approx or till done.
  • For beautiful brown color of petals turn off lower grill and turn on upper grill.
  • It will take just 5-10 minutes and color will be changed.

CREAMY CHICKEN CASSEROLE

creamy casserole mA perfect comfort meal with simple recipe and ingredients, original recipe is of Ms. Rukhsana Lone, with potato base but you can give a layer of pasta also. I felt so much proud and glad when i tried this first time on a Family Hi tea and believe me it was well appreciated by all guests.

INGREDIENTS FOR MASHED POTATO LAYER:

Potatoes1/2 kg
Cream 1 tbsp
Butter1 tbsp
Black pepper1/4 tsp
Mixed herbs1/4 tsp
Salt1/2 tsp

METHOD:

  • Boil potatoes and peel skin.
  • Mash with masher and add cream, butter, salt, black pepper and mixed herbs. Mix well.
  • Set aside.

INGREDIENTS FOR CHICKEN:

Chicken boneless, cut in strips1/2 kg
Butter50 g
Fresh garlic cloves, chopped2
Saltto taste
Red chili flakes1 tsp
Green onion, white part , chopped3
Jalapeno pepper, chopped3-4
Mushrooms, chopped3-4
Olive oil1 tbsp

METHOD:

  • In a pan add oil and garlic, saute for few seconds and add chicken strips, stir till color change.
  • Add chili flakes, salt,onion, mushrooms and jalapeno pepper, stir fry them.
  •  Cook till chicken tender.

INGREDIENTS FOR CREAMY SAUCE:

Cream1 cup
Thai chili sauce/ Tabasco sauce 1/2 cup or to taste

METHOD:

  • In a pan heat cream, hot sauce/ Tabasco sauce and pinch of salt. Mix well and remove from heat.

INGREDIENTS FOR GARLIC BREAD:

Garlic powder1 tsp
Bread slices6-7 or as needed
Mixed herbs1/2 tsp
Butter5 tbsp
Mozzarella and cheddar cheese1 cup, for topping

METHOD:

  • Cut triangles of bread slices.
  • Mix garlic powder, mixed herbs and butter in a small bowl.
  • Butter each slice and set aside.

ASSEMBLING:

  • In a Pyrex dish of any shape first spread mashed potato mixture.
  • Now spread chicken on potatoes.
  • Spread creamy sauce on chicken.
  • Arrange bread slices on the side of the dish.
  • Sprinkle Mozzarella cheese, olives 6-7 , mixed herbs and chili flakes.
  • Bake at 180c in preheated oven till cheese melt.
  • Serve hot.
  • You can adjust spices according to your taste buds I have used less spices because of my kids.

KACHEY QEEME KE KEBAB

kache qeeme ke kebab mKache qeeme ke kebab or Peshawari kebab is one of the most famous traditional dish in Pakistan, basically originates from KPK. I my self tasted kebabs from Nowshera.

PESHAWARI CHAPLI KEBAB

INGREDIENTS:

Chicken or beef mince1/2 kg
Salt to taste
Red chili powder1 tsp
Red chili flakes1 tsp
Turmeric powder1/2 tsp
Coriander powder1 tsp
All spice powder1 tsp
Cumin seeds, roasted and crushed1/2 tsp
Ginger Garlic paste1 tbsp
Lemon juice2 tbsp
Gram flour6 tbsp
Tomatoes2 medium, chopped
Onion2 medium, chopped
Green chilies2-3, chopped
Coriander leaves1/4 cup
Mint leavesfew

METHOD:

  • Mix all ingredients in mince except gram flour.
  • Keep it for 1/2 hour.
  • Roast gram flour with out any oil. Mix in mince.
  • Mix mixture with hand and rub with your palm for few seconds.
  • Make a patti and shallow fry it.
  • Serve with Raita and salad.

KOYLA KARHAI

koyla karhai mKoyla karhai / Koila Karhai is very famous highway dish. Aroma of charcoal smoke will tantalize your taste buds. You will definitely enjoy this tasty karhai.

INGREDIENTS:

Chicken 1 kg
Tomatoes1/2 kg, chop them or make paste
Crushed ginger and garlic paste1 tbsp
Crushed red chili1 tsp
Karhai masala2 tbsp
Saltto taste
Oil1 cup
Green chilies , ginger and coriander leavesas needed
Coalfor smoke.

METHOD:

  • In a wok add oil and chicken, fry till color change.
  • Now add tomatoes , crushed red chilies, crushed ginger and garlic, salt and karahi masala (any brand). Fry for few seconds.
  • Add water 1 cup and cover with the lid. Cook for 15 minutes.
  • Remove lid and fry till oil separate. Now add ginger sticks, green chilies and coriander. Remove from stove.
  • Place a bread slice in center and place burning coal on top. Pour 1 tsp oil on coal. Cover with the lid for 10 minutes.
  • Koyla Karhai is ready to serve.

CHICKEN PANEER KARHAI

paneer-karhai-mKarhai is one of a very famous and important dishes in Pakistan, You will observe a lot of variations in Karhai but these days Paneer karhai is in demand. I am sharing my tried and tested recipe today.

INGREDIENTS:

Chicken boneless or with bones1/2 kg
Onion2 medium, chopped
Tomatoes2 large, chopped
Green chilies5-6, cut in sticks
Cottage cheese1/2 cup cubed
Ginger garlic paste1 tbsp
Saltto taste
All spice powder/ garam masala1 tsp
Turmeric powder1 tsp
Red chili powder1 tsp
Yogurt1 cup
Oil1/2 cup
Coriander leaves1/4 cup.
Cream2 tbsp

METHOD:

  • Heat oil in a clay pot or normal pot, Add chopped and fry till light golden in color.
  • Now add  ginger garlic paste and chicken. Fry till color change.
  • Now add tomatoes, green chilies, salt, all spice powder, turmeric powder and red chili powder. Mix well.
  • Add yogurt and mix, cover with the lid and cook till water dries.
  • Fry till oil separates.
  • Cut cottage cheese and fry in oil, Make crumbs of cheese and spread on chicken, spread cream top.
  • Sprinkle coriander leaves and cover with the lid, let it simmer for 10 minutes on very slow flame.
  • Remove from stove and serve with Naan.

NARGISI KEBAB

nargasi-kebab-mThis recipe is taught by a friend and Its an inspiration from Nargisi koftas. Difference is mince mixture which I have used in kebabs. Serve these kebabs with Green Chatney or yogurt mint sauce.

INGREDIENTS:

Beef / mutton boneless1/2 kg , cut in cubes
Gram lentil/ chana dal1 cup
All spice powder/ garam masala1 tbsp
Saltto taste
Whole red chilies6-7
Ginger garlic paste1 tbsp
Onion1 medium, sliced
Egg1, for adding in mince
Hard boiled eggs4-5
Coriander leaves1/4 cup
Mint leaves2-3 tbsp
Green chilies chopped2-3

METHOD:

  • In a pot add all ingredients and cook till meat and lentil tender.
  • Let the water dries and cool completely.
  • Now chop it and add eggs, coriander and mint leaves and green chopped chilies.
  • Mix well and set aside.
  • Boil eggs and remove skin.
  • Cover the egg with mince and Fry in shallow oil.

INGREDIENTS FOR CHICKEN STRIPS:

Chicken strips1/2 kg, cut in thin strips
Oil1/4 cup
Soya sauce3 tbsp
Mustard paste/ paste1 tsp
Black pepper1 tsp
Salt1 tsp or to tatse
Red chili flakes1/2 tsp
Garlic chopped1 tbsp
Lemon Juice1 tbsp
Coriander chopped2 tbsp
Egg2-3
Corn flour1/4 cup
Flour1/2 cup
Bread crumbs2 cups
Sesame seeds1/4 cup
Oilfor frying

METHOD:

  • Make strips from fillet.
  • In a bowl add oil, soy sauce, mustard powder or paste, black pepper, salt, red chili flakes, garlic, lemon juice and fresh coriander chopped. Mix all ingredients.
  • Add chicken strips in this mixture and coat well.
  • Marinate it for 40-45 minutes.
  • In this mixture add flour, corn flour and egg.
  • Mix well to avoid lumps formation.
  • In a bowl mix sesame seeds and bread crumbs (use PANKO brand or any good quality brand for beautiful look)
  • Heat oil take a strip roll in crumbs, press one side and coat crumbs , turn the side and coat again.
  • Deep fry strips. Let it cook for few minutes do not use spoon for turning them. When one side cooked, turn the side and cook till light golden color appear.
  • Serve with Ranch dip.

INGREDIENTS FOR RANCH DIP:

Mayonnaise 1 cup
Cream 1/2 cup
Vinegar1 tbsp
Oregano1/2 tsp
Saltto taste
Black pepper1/4 tsp
Milk2 tbsp

METHOD:

  • Mix all ingredients and serve with chicken.

chicken-shorba-mChicken Shoraba is a main course here in Pakistan. This method is told by a family friend who has learned it from a Cook. That cook made this Salan/ shorba on a special occasion.

INGREDIENTS:

Chicken1 kg
Onion3 large
Tomatoes3 large
Ginger garlic paste2 tbsp
Cumin seeds1 tsp
Black pepper1/2 tsp
Saltto taste
Red chili powder1 tsp
Coriander powder1 tsp
All spice/ garam masala powder2 tsp
Oil 1 cup
Ginger julienne cut1 tbsp

METHOD:

  • Fry onion in oil till soft,add ginger garlic paste and stir for few seconds.
  • Add all spices but add 1 tsp garam masala powder. Half we will add in the end.
  • Now add a little amount of water (1/4 ) cup and stir.
  • Add chopped tomatoes, fry till oil separates.
  • Remove pot from stove and let it cool.
  • Grind this gravy.
  • Again pour gravy in pot and add chicken as well.
  • Start cooking on high flame. Fry chicken till oil separates.
  • Add water (up to your choice) and cook till chicken tender.
  • Sprinkle garam masala powder and ginger sticks.
  • Let it simmer on low flame for 10 minutes.
  • Serve with Naans.

INGREDIENTS:

Puff pastry as needed
Boiled Chicken 1 cup, shreded
Butter/ oil1 tbsp
Onion1 small
Plain flour1 tbsp
Saltas needed
Red chili flakes1 tsp
Black pepper crushed1/2 tsp
Whole coriander seeds1/2 tsp
Cumin seeds1/2 tsp
Chopped green chilies2-3 or to taste
Green coriander2 tsp

METHOD:

  • In butter or oil saute chopped onion, stir for 5 minutes and add plan flour. Cook till raw smell removes.
  • Add chicken and mix well. Now add all spices, stir.
  • Add chicken broth and mix. Stir till become thick.

  • Roll puff pastry and cut any shape.

  • Keep in your mind lower piece should be a bit thick as compare to upper piece.

  • Now place spoon full of mixture on puff pastry and brush corners with egg wash.

  • Place second piece and press corners.
  • On this stage you can place in a tray cover with cling wrap and freeze it. Just thaw before use and bake it. You can do this with mince and chicken patties, I will not recommend for potato filling.
  • Dust your baking tray with flour and place puffs on tray.
  • Brush egg wash on each puff pastry and Bake at 180c.

  • Burn large pieces of coals on burner.

RECIPE OF CHICKEN MALAI TIKKA

INGREDIENTS:

  • Chicken boneless cubes                                                 1/2 kg
  • Ginger garlic paste                                                          1 tbsp
  • Green chilies, crushed                                                    1 tbsp
  • Salt                                                                                     To taste
  • White pepper                                                                   1/2 tsp
  • Red chili flakes                                                                1 tsp
  • Cumin seeds roasted n crushed                                   1 tsp
  • Coriander seeds roasted and crushed                        1 tsp
  • All spice powder                                                             1/2 tsp
  • Cream                                                                                2 tbsp
  • Oil                                                                                       For brushing

 

METHOD:

  • Marinate chicken with all spices. Leave it for 2-3 hours.
  • BBQ it or cook in pan and give smoke of coal.
  • Enjoy with Raita and Salad.

CHICKEN FRIES

  • In a chopper add chicken, salt, pepper, Knorr Mix and red chili flakes. Chop well.

  • Fry on medium flame till light brown.
  • Serve with ketchup.

chicken puff rolls mMy friends are asking me to post Eid related dishes, so i have picked one very easy and delicious recipe to impress your guests this Eid.

INGREDIENTS:

Chicken1 cup, boiled and finely shreded
Black Olives4-5, chopped
Mushrooms3, chopped
Coriander leaves1 tbsp, chopped
White sauce1 cup
Puff pastry1/2 kg packet or as needed
Egg 1 , beaten

METHOD:

  • Dust working place with flour and roll puff pastry.
  • Cut long strips with knife and grease outer surface of Cone molds.
  • Wrap stripe on cone and place on baking Tray. Brush egg on surface of puff pastry.
  • Bake these cones at 180c till nice golden color appear.
  • Let these cones cool and then remove these shells. Ready to use now.
  • Make White sauce and add chicken in it.Mix well and add olives, mushrooms and coriander leaves.

  • Carefully fill shells with filling and serve.

INGREDIENTS:

  • Chicken                             1/2 kg
  • Ginger garlic paste         2 tsp
  • Red chili powder             1 and 1/2 tsp
  • Salt                                     to taste
  • Turmeric powder            1 tsp
  • Cumin seeds                     1 tsp, roasted and crushed
  • Black pepper powder      1 tsp
  • Yellow food color             1/4 tsp
  • Lemon juice                      4 tsp
  • Oil                                        2 tbsp
  • Yogurt                                 1 cup
  • Onion                                  2 , chopped
  • Tomatoes                           2, chopped
  • Cream                                 1/2 cup
  • Oil                                        1/2 cup
  • Piece of coal                       to give smoke

METHOD:

  • In a bowl add chicken, ginger garlic paste, Red chili powder, salt, turmeric powder, black pepper, food color, lemon juice. Mix well and marinate it overnight. keep it in fridge.
  • Next day in a pot add oil and cumin seeds, saute for few seconds. Add onion, fry till light brown.
  • Add tomatoes and fry for few seconds and add red chili powder 1/4 tsp. Stir constantly till tomatoes become soft.
  • Add marinated chicken in it stir for few seconds and add beat yogurt in it. Mix well and cover with the lid.
  • Cook till chicken tender and oil separates.
