INGREDIENTS:

Pizza sauceas needed
Pepperonias needed
Capsicumas needed
Onion (sliced)as needed
Tomato as needed
Mozrella cheese as needed
Chedder cheese as needed
Oreganoas needed
Ginger powder as needed

METHOD:

You can find pizza dough basic recipe here.

  • Roll pizza dough and cut heart shape with knife then spread sauce. Sprinkle cheese and then all vegetables.
  • Cut in slice, again sprinkle cheese and spread peproni and sprinkle oregano and ginger powder.
  • Bake at 180c till cheese melts, serve hot..

CHOCOLATE POTS

A very special chocolaty treat not only for kids but also can be you dinner dessert too. Its very easy and delicious. Try and comment 🙂

INGREDIENTS:

Chocolate chopped100g
Cream1 packet or 200g
Sugarto taste
Egg1
Vanilla extract/essence few drops

METHOD:

  • In a pan heat up cream and mix in sugar. On very low heat dissolve sugar and then add chopped chocolate ,stir continuously with whisk.
  • Now remove from flame and add egg and vanilla, keep on stirring till completely mixed.
  • Pour in pots and serve chilled.

MINI PIZZA PIE
A very nice and easy recipe, especially for kids. You can give this in lunch boxes and can be an evening snack as well.

INGREDIENTS FOR DOUGH:

Plain Flour 2 cups
Yeast 2 tsp
Sugar 1 tsp
Salt 1 tsp
Milk Powder 2 tbsp
Butter 2 tbsp
Egg 1

METHOD:

  • Mix all ingredients and knead with Luke warm water.
  • Set aside for 2 hours.

INGREDIENTS FOR FILLING

Chicken (boiled) 1 cup
Butter 1 tbsp
Onion 1 small
Capsicum 1 small
Tomato 1 small
Peas (boiled) ¼ cup
Cheese as needed
Flour 1 tbsp
Black Pepper ½ tsp
Salt to taste
Oregano 1 tsp
Milk ¼ cup
Coriander Leaves few
Green Chili (chopped) 1 small
Onion Seeds ¼ tsp
Sesame Seeds ¼ tsp
Egg for brushing

METHOD:

  • In a pan add butter and chopped onion, sauté it for few minutes.
  • Then add flour and stir for few seconds then add chicken and fry for few seconds.
  • Now add salt  and black pepper. After mixing them add milk and stir constantly to avoid lump formation.
  • In the end add coriander and chili and set aside.

ASSEMBLING OF PIES

  • Make small balls of dough and roll them.
  • Now place them in muffin tray cases.
  • Fill spoonful mixture in cups, sprinkle cheese and oregano.
  • With star shape cutter cut stars of the same dough and place on pies.
  • Brush egg wash and sprinkle onion seeds and sesame seeds. Bake them at 180c for 20 minutes.

My friend Fauzia asked me to make 100% whole wheat pizza ,I decided to combine three things in a pizza. My friend’s wish , pizza making on stove technique and last my sister in law Shabana shahid’s sheesh taouq recipe.. I hope you all will like this effort.

INGREDIENTS FOR PIZZA DOUGH:

Whole Wheat Flour 2 cups
Yeast 2 tsp
Salt 1 tsp
Vegetable Oil/olive oil 2 tbsp
Sugar/honey 1 tbsp
Luke Warm Water for kneading

METHOD:

  • In a bowl mix all ingredients and knead with water
  • Set aside for 2 hours

SHESH TAOUQ PIZZA TOPPING INGREDIENTS:

Chicken Boneless Cubes 1 cup
Garlic (minced) ½ tsp
Salt to taste
Paprika Powder ½ tsp
Nutmeg Powder pinch
Cinnamon Powder pinch
Black Pepper ½ tsp
White Pepper ¼ tsp
Cottage Cheese/Yogurt Cream 1 tbsp

METHOD:

  • In a bowl mix together all ingredients and leave it for 2 hours.
  • Then fry them in 1 tbsp oil.

ASSEMBLING OF PIZZA:

  • Roll pizza dough and place in pizza greased frying pan and spread pizza sauce.
  • Now sprinkle cheese followed by chicken and then sliced onion, capsicum ,mushrooms,olives and tomato.
  • Again sprinkle cheese and oregano.
  • Cover with lid and on very low flame cook till cheese melts.

This is my first pizza of pizza party. Hope you all will like it :). I made this with chicken tikka topping you can use any other of your choice. Surely kids will love this snowman idea…

PIZZAH DOUGH IN A FOOD PROCESSOR

If you do not have stand mixer then no problem use your food processor and make perfect dough. And if you do not have processor then again no problem, use your hands to knead a super perfect dough lolz

Plain flour 2 cups
Salt 1 tsp
Sugar 1 tsp
Milk Powder 2 tbsp
Olive Oil/Butter 2 tbsp
Yeast 2 tsp
Luke Warm Water as needed

METHOD:

  • In a food processor fit in dough making cutter, add all ingredients and turn on processor for few minutes.
  • Do this process by adding up little amount of water.
  • Keep on doing this till dough start to become elastic and soft.
  • Place in a bowl and set aside for 2 hours.

CHICKEN  TIKKA  PIZZA INGREDIENTS:

Chicken 1/2 kg
Tikka Masala Powder (optional) 1 tsp
Powder Red Chillies 1 -1/2  tsp
Garam Masala 1/2 tsp
Crushed Zeera 1/2 tsp
Lemon Juice 2 tbsp
Ginger Garlic Paste 1/2 tsp
Yogurt 2 tbsp
Yellow Food Color 1/4 tsp

METHOD:

  • Marinate chicken with all ingredients  for 1-2 hour.
  • Bake it at 180c. You can cook in a pan and give smoke, choice is yours.

ASSEMBLING OF PIZZA:

  • Roll the dough and make two circles, one small for head and large one for tummy.
  • Place on pizza pan and Spread pizza sauce on dough then sprinkle cheese on it and then chicken, onion (small pieces), capsicum and again sprinkle some cheese.
  • Bake it for 20 minutes.
  • You can use olives or anything else you like for buttons and eyes. Muffler  I made with dough. With a simple twist you can attract your kids and even your other family members…. :). Enjoy your snowman pizza and do not forget to comment.

I saw a recipe of chocolate cupcake somewhere and liked the idea. But when I started to make them , I added Oreo for a change.. and the end product was too good. Enjoy this super easy recipe..

INGREDIENTS:

Cooking Chocolate (chopped) 1 cup
Oreo Biscuits 7-8
Cupcake Cases 7-8

METHOD:

  • In a microwave safe bowl  put chocolate and melt it for 1 minutes.
  • Then take it out and mix with spoon.
  • Put the bowl back in microwave and check if it melts then stop this process.
  • Pour a spoonful of chocolate in muffin case, place Oreo  and then again pour chocolate.
  • Keep these prepared cases in muffin tray and let them set. You can keep tray in fridge as well if you are in a hurry..:).
  • Carefully remove cases and serve, you can store them in air tight jar for a week.

The Better the Butter the Better the Ghee, made from butter..:) My mother used to make clarified butter or ghee at home with heavy cream or malai. First she used to make butter from stored malai and churning it in blender and then make ghee out of it. I was very excited when I first came to know this very easy and handy method.

HOW TO MAKE GHEE

HOMEMADE GHEE WITH BUTTER
  • There is only one thing you need and that is Butter 🙂 use only unsalted butter made from 100% milk as much as you require.
  • Now cut them in small pieces and then place in a pan on very low flame and let it melt for few minutes.
  • When it start boiling you will see bubbling on the surface, after few minutes you will see foaming and separating the milk solids.
  • Reduce the flame to simmer for 5 minutes, remove the foam from spoon.
  • Sediments will become dark brown and start settling in the bottom. The liquid will be clear and of golden color.
  • Remove from flame and let it cool down for a second then sieve with cheese cloth and store in dry air tight jar.
  • You can use this homemade ghee in making halwas,saags or on spreading on rotis or even in making panjeris,try today and give your family a healthy choice.

POORI WITH ALOO BHAJI AND CHANA GRVEY
Pooris are considered  as a very delicious and famous breakfast in Pakistan. Those living in Karachi must be familiar with the name of Dilpasand and Nasir sweets, one of very popular poori makers in Karachi. I can’t forget the taste of those poories ever but here is the recipe of home made poories and gravy.

POORI INGREDIENTS:

Plain flour 1 cup
Wheat flour 1 cup
Salt 1 tsp
Water for kneading
Oil for frying

METHOD:

  • Mix flours and salt, knead with water but keep in your mind this should not be hard or soft like we are make for chappatis.
  • Now start making pooris. Make small balls of dough and roll them all to make small pooris. Size may vary (up to your choice) I usually make pooris of small size.
  • Dust them with flour and pile up in a plate.
  • Now heat up oil. The temperature is very important factor in poori making. Drop a small piece of poori in oil if sizzles and comes up to the surface immediately, it means temperature is perfect and if piece of poori becomes dark brown then you should reduce the heat a little.
  • Slide one poori in oil let it fry for few seconds then turn and with slicer press it from all sides, poori will puff up. Fry from both sides and place on paper towel. Now fry them all quickly.

ALOO BHAJI INGREDIENTS:

Potatos 3 medium size
Crushed Red Chili ½ tsp
Haldi Powder ½ tsp
Red Chili Powder ¼ tsp
Cumin Deeds ½ tsp
Coriander Seeds ½ tsp
Onion Seeds / Kalonji ¼ tsp
Salt to taste
Fresh Coriander few leaves
Green Chili 1 medium

METHOD:

  • Cut potatoes in slices and add all ingredients except onion seeds and coriander leaves.
  • Add little amount of water ( 1 cup).
  • Cook on low flame till potatoes are tender and soft.
  • Add onion seeds and stir well.
  • In the end add coriander leaves and green chili.
  • Bhaji should be thick without too much gravy.

CHANA GRAVY INGREDIENTS:

Chickpeas(boiled) 1 cup
Onion (thinly sliced) 1 small
Ginger Garlic Paste ½ tsp
Salt to taste
Red Chili Powder 1 tsp
Crushed Red Chili ¼ tsp
Coriander Powder ¼ tsp
Haldi Powder ¼ tsp
Garam Masala Powder ½ tsp
Green Chili as desired
Coriander Leaves few leaves
Oil ¼ cup

METHOD:

  • In a pan add oil and onions. Fry till golden brown.
  • At this point add ginger garlic paste, fry and add all spices.
  • Stir fry for few minutes then add chickpeas and little amount of water.
  • Cook on low flame till well cooked.
  • In the end add coriander leaves and chili.

(you can add raw chickpeas in fried masala and then add water, let them cook till chickpea are soft. You can make chana gravy at night if you are planning to serve in breakfast)

SUJI KA HALWA INGREDIENTS:

Suji 1 cup
Sugar ¾ cup
Desi Ghee / Normal ghee 3 tbsp heap
Illaichi 3
Water 1 ½ cup
Yellow food color – optional
(dissolve in 2 tbsp water)

METHOD:

  • In a deep pan pour ghee  (I have used desi ghee because of the aroma and flavor of desi ghee is very tempting to me).
  • Now add illaichi, let it crackle for a second then add suji.
  • On low flame fry it till light golden color appears.
  • Now add sugar in the pan and immediately add water and stir vigorously to avoid lumps formation. If you want to add food color then add at this stage and mix well.
  • As soon as ghee separates add nuts and serve hot.

Nothing is more nutritious then citrus fruits and juices and what about giving some boost to citrus juice by adding carrot juice in it. Honestly speaking I do not like carrot juice so I thought I should add any other juice in it. I choose orange juice and found it so yummy. Hope you will agree with me after trying my experiment.

INGREDIENTS:

Fresh Orange Juice 1 cup
Fresh Carrot Juice 1 cup
Black Salt ¼ tsp
Salt ¼ tsp

METHOD:

  • Combine all ingredients and stir to dissolve salts.
  • Serve immediately, because what I think after ½ hour juices starts to spoil taste and color.

If you are expecting guests at evening tea and you have no time to make things with lengthy procedures then these nutty boats can be your first choice. Just grab few nuts and toss them in honey. Interesting thing is that you do not required any measurement and only three ingredients are involved in this dish.

INGREDIENTS:

Bananas as needed
Honey as needed
Nuts as needed

METHOD:

  • Peel bananas and cut in two halves, scoop out inner pulp to give a shape of boat.
  • Mix all nuts with honey and  pour spoon full into banana boat.
  • Ready to serve and healthy to eat. Good for your kids.

GAJAR/CARROT KA HALWA

GAJAR KA HALWA
This is my mother’s recipe, I use this method almost every time but  I like Chef Zakir’s method too. On the contrary all my family members love this traditional tasty halwa recipe. In my upcoming posts I will include Chef Zakir’s recipe as well which is actually Karachi style halwa recipe. But right now enjoy my Mother’s recipe.

INGREDIENTS:

Carrots 2 kg
Sugar to taste
Mik ½ liter
Ghee/Butter ¾ cup
Illaichi/Cardamom 4-5
Khoya 1 pao/1 cup
Nuts
(raisins, almonds, pistachio, walnuts)
as needed

METHOD:

  • Remove inner yellow part of carrots and shred them.
  • Now in a deep pan pour ghee and illaici, let it crackle and then add carrots, milk and sugar. Mix all well.
  • Let it cook on medium flame till carrot are soft and tender.
  • Now on high fame dry excess water and milk. As soon as ghee separates add half khoya and nuts in it.
  • Mix all and then before serving garnish with khoya and nuts.

This cake is for my beloved niece Aizah Noor , It was her first birthday on 24th January  , May Allah gives her success , health and happiness in her life, Ameen. The recipe I am going to mention is a simple one and hope you all will like it.

INGREDIENTS:

Eggs 2
Flour 1 ½ cups
Sugar 1 cup
Butter 12 tbsp
Baking Powder ½ tsp
Baking Soda ½ tsp
Coco Powder 6 tbsp
Salt pinch
Hot Water 6 tbsp
Vanilla Essence few drops
Yogurt ¼ cup

METHOD:

  • Whisk cocoa and hot water and set aside.
  • In a separate bowl sieve flour, baking powder, soda and salt and set aside.
  • Melt butter with sugar in a pan, when both melt then remove from flame and pour in a bowl .Let it cool down for few mins then add eggs n beat with hand mixer.
  • Now add vanilla and cocoa mixtures in it and mix well.
  • Add flour mixture in the bowl and mix well.
  • Iin the end add yogurt (feel free to use yogurt, it will not give any tangy flavor to the cake but use sweet yogurt.)
  • Pour into a greased pan and bake it at 160c for 30 mins, or until a toothpick comes out clean.

PINK SNOW FROSTING:

INGREDIENTS:

Cream 2 cups
Icing Sugar as needed
Food Color few drops
Gelatin Powder 2 tsp
Pineapple Chunks as needed
Water 2 tbsp

METHOD :

  • Beat cream by adding sugar in it then add food color and beat again.
  • Meanwhile microwave water and gelatin for 10 sec and stir to dissolve.
  • Now add this in cream, continue beating till its fluffy .

ASSEMBLING OF CAKE:

  • Divide cake in two and spread cream in generous amount on one half then spread pineapple chunks evenly
  • Place other half on top and again spread cream on all sides.
  • Now with fork make peaks of cream.

How to make Mountain:

  • We need one ice cream cone. Melt white chocolate and dip in cone, make sure it is cover from all sides sprinkles silver balls all over and let it cool down.
  • Before serving the cake place on cake. Enjoy this yummy cake with your family.

12 RABI-UL-AWAL


“The month of Rabi’ul-Awwal is the most significant month in the Islamic history, because humanity has been blessed in this month by the birth of the Holy Prophet Muhammad (SAW). Before the birth of the Holy Prophet (SAW), not only the Arabian Peninsula, but also the so-called civilized nations of Rome and Persia were drowned in the darkness of ignorance, superstitions, oppression and unrest.

The Holy Prophet (SAW) came with the eternal truth of Tawhid (Oneness of Allah), the only faith which provides a firm basis for the real concepts of knowledge, equity and peace. It was this faith which delivered humanity from ignorance and superstitions and spread the light of true knowledge all over the world.”

When I was a child, I saw my mother making kheer for neighbors and giving money (kherat) to poor, obviously I learnt from her and after getting married I started doing this myself. I believe in my good intentions, as in a hadith Prophet(pbuh) mentioned: “Actions are judged by intentions.” And if we are doing anything with good intentions then we will get reward from Allah. So I do recite Quran, give money to poor and distribute any sweet dish to neighbors on this day. We should not restrict ourselves till 12 Rabi’ul-Awwal ,the whole month we should recite durood and Quran. We will not be rewarded for celebrating with pomp and show, but will be rewarded for how much we followed Prophet Muhammad (SAW)…

I made Gulab Phirni and Chana Pulao for distributing amongst few relatives and neighbors today. Recipes are here I hope you will like them all. Keep me and my family in your prayers.

CHANA PULAO

INGREDIENTS:

Rice (soaked in water) 1 glass
Chick Peas (boiled) 1/2 cup
Onion 2 medium
Tomatoes 2 small
Ginger/Garlic Paste 1 tbsp
Whole Garam Masala Mix 1 tbsp
Crushed Red Chili 1 tsp
Salt to taste
Oil 1/2 cup

METHOD:

  • In a deep pan add oil and sliced onions and fry on low flame till golden brown.
  • Take half out and spread on paper towel.
  • Now add ginger garlic paste and whole garam masala and stir it for few seconds then add tomatoes and crushed red chilies and fry till tomatoes become soft.
  • Now add chick peas and salt. Stir and add water, let it boil and then add rice.
  • When cooked, sprinkle remaining fried onion on top and let them simmer (dam) for few minutes.
  • You can add 1 chicken cube as well for chicken flavor which I normally do. Serve with raita.

INGREDIENTS:

Yogurt 1 cup
Cucumber (diced) 1 small
Onion (thinly sliced) 1 medium
Tomato (cube cut) 1 large
Podina/Mint few leaves
Coriander/Dhania few leaves
Green Chili 1 medium
Salt to taste
Crushed Black Pepper 1 tsp
Chat Masala Powder 1/4 tsp

METHOD:

  • Beat yogurt and add salt, pepper chat masala, mix all well and then add all vegetables. Mix well and serve with rice.

GULABI PHIRNI

INGREDIENTS:

Milk 1 liter
Rice 1/4 cup
Illaichi 4-5
Sugar to taste
Condensed Milk 1/2 cup
Rose Water 3 tbsp
Pink Color (optional) few drops

METHOD:

  • Soak rice in ½ cup water for an hour and then grind them to form a fine paste.
  • In a deep pan add milk, sugar, illaichi and rice paste. Keep flame very low and keep on stirring constantly to avoid lumps formation.
  • When milk reaches to thick consistency and rice completely cooked, add condensed milk, color (if using) and rose water and mix well.
  • Serve chilled.

Broccoli is also a source of many substances called phytochemicals, or plant chemicals, that may have anticancer properties.

INGREDIENTS:

Broccoli 1 head
Chicken/Vegetable Stock 3 cups
Cheese 1/4 cup
Salt to taste
Black Pepper (crushed) 1/2 tsp

METHOD:

  • In a pan add stock and washed broccoli head, salt and pepper and cook till broccoli is tender.
  • In a blender blend it and again transfer in pan and let it cook for few minutes.
  • In the end add cheese and serve hot.
